Pure Chitin was converted into Chitosan by simple deacetylaion with an aqueous 47% NaOH. By selective stearoylation with an amphiphilic acid anhydride a chitosan having hydrophobic side chains was prepared and its supramolecular structure inverstigated by scanning electron microscopic means. It was found that this Chitin derivative assembles into a lamellar crystall structure.
