This study examined the vitamin B content, such as vitamins B1, B2, B3, B7, and B12, in commercial side dishes in Korea. The levels of water-soluble vitamins were analyzed using high-performance liquid chromatography with an ultraviolet or fluorescence detector. Ganjang gejang showed the highest vitamin B1 and B2 contents. The highest vitamin B3 content was observed in ojingeo bokkeum (10.486±0.22 mg/100 g). The highest vitamin B7 content was found in dalgyal jjim. Vitamin B12 was not detected in namul/muchim and kimchi, but the highest level was found in the Gajami gui at 5.769±0.09 μg/100 g. All analyses were under the quality control chart of vitamins B1, B2, B3, B7, and B12. The z-scores for vitamins B1, B2, B3, and B12, were less than ±2 in the FAPAS proficiency tests, which assured the reliability of analytical performance. These results provide valuable nutritional information on commercial side dishes commonly consumed in Korea.
