One out of ten female workers are employed at restaurants. As the main agents of livelihood, they cook, serve, wash dishes with their colleagues, and provide labor to their proprietors as a colleague and an employee. The ordinary role of such women in their families is to live as a mother and a wife. In most cases, they solely are responsible for housework and care for their husband and children. Nevertheless, they are not called ‘laborers’.
As they have lived in a society where their solitary housework was taken for granted, they frequently fail to enjoy the divine right of laborers at their workplace. The familial terms like ‘mom, aunt, or auntie’ that customers use to call the women sometimes indicate friendliness, but otherwise reflect the customers’ perspective that their labor is deemed natural. In terms of relationship with their proprietors, the women sometimes feel sisterhood, but otherwise are put in a boss- and-subordinate relationship void of a proper contract, in which they often get fired overnight. Their complex labor relationship and negative perspective of the society surrounding them ultimately distort and conceal the women’s existence. Because they are not called ‘laborers’, labor records do not exist; because they are deemed mothers without femininity, feminine records do not exist.
For female restaurant laborers to recognize their own existence and human dignity, they should be seen and spoken to the society. It is necessary for records to fulfill this responsibility.
This paper aims to reveal the distortion and intangibility of records on female restaurant laborers through the analysis of press records, public records, and research records, and afterwards discusses the proper means of representation of the women.
A complete representation will enable records to become a foundation of egalitarian politics against political authority, to empower individuals and communities to strengthen, and thus to function as instruments for practising social justice.
For such purpose, this paper illustrates the representation of female restaurant laborers by reflecting the depiction of female restaurant laborers in press, public, and research records collected via research and other means. Such methodology is based on the fact that this paper does not aim to incarnate a certain representation by properly representing the women, but aims to plainly reveal the records’ shortcomings in representing their subject.
This paper deliberates on the means of record that enables representation of the Subaltern despite of the shortcomings, in which the government, press and civil society will each take role. It is based on the belief that complex representation of the alive, dynamic subject will become feasible only with various record outcomes from each entity’s role. Such complex representation will eventually de-Subaltern the Subaltern and become a bridge leading towards self-documentation.
On theoretical level, the power of records and their responsibilities of realizing social justice have long been discussed, and have been developed into daily life records, community records, and counter-records. However, a majority of people still cannot speak out and do not possess an instrument of recording or a medium to be preserved, managed and shared.
A number of things today still vanish without leaving a name. They become forgotten, and they become known and recorded while being distorted. Records preserved and managed exist over the countless names that cannot be known if not recorded now. Once they are completely recorded and increase the possibility of representation, and once they can play a role as recorded heritages after being managed and preserved, the records’ explanatory responsibility will be extended from institutions into the era and the society, and it will serve as a momentum for individuals and communities to become political entities.
This study endeavors to record those that should be recorded, notwithstanding numerous shortcomings.
