    저칼로리 소스는 높은 지방・당・염분을 포함하는 기존 소스를 대체하여 건강 측면에서 이점을 제공할 수 있다. 기존 소스류를 대체할 핵심 소재로는 천연 감미료(스테비아, 알룰로스), 합성 감미료(수크랄로스, 아스파탐, 아세설팜칼륨) 등이 대두되고 있다. 이들은 단맛 부여뿐만 아니라 칼로리 저감, 질감・점도 조절, 제품 안정성 확보 등 다기능적 역할을 수행한다. 다만, 일부 대체 감미료는 쓴맛・금속성 맛 및 잔미와 같은 부정적 관능 특성을 유발할 수 있으므로, 향미 마스킹 기술이 필수적일 것으로 보인다. 종합적으로, 저칼로리 소스 개발은 단일 대체 소재의 적용만으로는 한계가 있으며, 감미료・점증제・향미 조절 기술을 통합적으로 설계하는 접근이 필수적이다. 이를 통해 기존 소스의 관능적 품질을 유지하면서도 소비자 기호를 충족시키고, 동시에 건강 지향적 제품 가치를 강화할 수 있을 것으로 사료된다.

    Alternative sweeteners such as stevia (Stevia rebaudiana), sucralose, aspartame, and acesulfame potassium, are vital ingredients in the development of low-calorie sauces and help address the health risks associated with conventional high-sugar condiments. Excess intakes of sugar, fat, and sodium in conventional condiments have been linked to obesity, metabolic disorders, cardiovascular disease, and other health risks, highlighting the need for nutritionally improved formulations. This study evaluated major alternative sweeteners by comparing the sweetness intensity, thermal and pH stability, metabolic effects, and acceptable daily intake. Alternative sweeteners are 120−600 times sweeter than sugar, provide fewer calories, and show good heat stability. On the other hand, their sweetness profiles differ from sugar, which can lead to off-flavors, such as bitter or metallic flavors, or residual aftertastes. Several strategies have been used to mask off-flavors using other sensory stimuli or reduce them by mixing sweeteners. In addition, the profiles of volatile compounds in stevia leaves under different drying conditions show that the pretreatment process of the sweetener significantly affects the flavor characteristics. 2-hexanal, hexanal, and α-pinene were identified as common, abundant compounds. This supports the position of stevia leaves as an alternative sweetener rich in terpene-based volatile compounds. These findings highlight the importance of an integrated formulation approach that combines sweetener characteristics and flavor masking to achieve desirable sensory qualities while realizing health and sustainability goals.
