The relative comparison of the effectivities of antioxidants(3, 5-Di-tert-butyl-4-hydroxybenzoic acid, its derivatives, BHT and 2, 6-Di-tert-butylphenol) gives the knowiedge of the substituent effect of phenolic antioxidants on lipidperoxidation.
We used polarograpic method initiated by hemoglobin to measure te effectiveness of antioxidants.
Protective Indices(P.I.) was used for the relative comparison of activities of antioxidants.
P.I=Oxidation of emulsion with antioxidant(min)/Oxidation of control emulsion(min)
The result result of experiment showed that BHT has the highest activity and stearyl ester has the lowest activity. From these results, we came to the conclusion that the activities of anti-oxidants depend on the substituent effect of phenolic antioxidant;inductive effect and steric effect.
