Recently, South Korea is facing super-aged society and unbalanced nutritional supplement is becoming a major issue due to masticatory issue of elderly people. Thus, demand and interest of functional food products are constantly increasing. With the trend of health-oriented culture, there are numbers of changes in beverage market. Conventional beverage products, such as carbonated drinks; milk drinks; fermentation drinks; and alcohol drinks, are developing with many different fruits and vegetables. Therefore, the beverage market for functional beverages is growing dramatically. Not only just the beverages but also products that can be easily consumed by the elderly people like Jelly are also developing. However, most of the jelly products that are available to people are not the best for the elderly people. This research was focused on finding a best ratio for the beverage with great nutritional foods: apple, carrot, and beet. It was also focused on creating a functional jelly product with combination of the ratio and Boswellia Serrata, a supplement to enhance bones. In the beginning, 4 different jellies were made with different ratio of beets. Jelly with 20% mixing rate of beet, B0.5, contained 35.19g of total phenol, 51.39% of DPPH, and 85.71 of ABTS. Jelly with 13% mixing rate of beet, B0.3, contained 35.32g of total phenol, 45.56% of DPPH, and 75.50 of ABTS. Comparing these two Jellies, latter jelly was the best fit for the functional jelly product. Secondly, 5 different jellies were made with different ratio of mixed juice, using B0.3 formular from first experiment. Jelly with 64% mixing rate of mixed juice, AE150, had DPPH of 93.84%. Jelly with 43% mixing rate of mixed juice, AE 100, had DPPH of 92.29%, showing the highest DPPH radical elimination ability. AE200, 85% mixing rate of mixed juice, had the highest total phenol of 28.17 g TAE/L. AE150, 64% mixing rate of mixed juice, had the second highest total phenol of 27.59 g TAE/L. For ABYS elimination ability, AE200 had 66.99 and AE250 had 65.14. However, AE150 and AE200, which had mixing juice rate higher than 50%, scored lower points for preference evaluation. To sum up, AE100 was the best formular with great score from preference evaluation while still containing great amount of total phenol and having great ABTS elimination ability. Thirdly, 5 different formulars were made with different amount of Boswellia powder, using AE100 from the second experiment. BW10, jelly with 4% rate of Boswellia power was the best fit as it had 26.81 % of DPPH, 112.49 g TAE/L of total phenol, and 94.23 of ABTS elimination ability. BW10 also had no repulsion and had the best bone enhancement effect. Additionally, to create healthier jelly, different saccharifying agents: sugar, erythritol, stevia; and different gelling agents: konjac (Devil's-tongue), psyllium husk, Locust bean gum were added to reduce sugar content and to use natural gelling agent instead of conventional animal gelling agents. Physicochemical properties were observed using the different combination of these saccharifying and gelling agents. As a result, SP jelly, adding sugar and psyllium husk, had 110.05 g TAE/L of total phenol. STP jelly, adding stevia and psyllium husk, had the highest DPPH of 48.53 g TAE/L. EP jelly, adding erythritol and psyllium husk, had 94.37 of ABTS elimination ability. Likewise, antioxidant capacity was high with the combination of stevia and erythritol with psyllium husk. Due to less sweetness of stevia and less gelling ability of psyllium husk, jelly with sugar and konjac had higher score on sensory evaluation. In conclusion, B0.1 and B0.3 were the best fit for the mixed juice, containing great amount of different minerals such as zinc, iron, calcium, manganese, magnesium, potassium, sodium, sodium, and phosphorus. Secondly, AE 100 had the highest antioxidant capacity. Thirdly, BW10 had the highest score on sensory evaluation. Lastly, antioxidant capacity was high with the combination of stevia and erythritol with psyllium husk. However, high sensory evaluation of sugar and konjac cannot be ignored. Thus, proper amount of sugar must be used to create the most practical product. Additionally, the last experiment with different saccharifying agent and gelling agent also enhances the necessity of in-depth study to find complete alternative saccharifying agent for sugar and to find plant-base gelling agent that can be a complete alternative of animal gelling agent.
