    현대 식생활 변화와 HMR 시장 성장에 따라 수산 HMR 수요가 증가하고 있다. 삼치(Japanese Spanish mackerel; Scomberomorus niphonius)는 고단백 식품이자 n-3 지방산이 풍부한 어종이나, 가열 조리 시 발생하는 조직감 저하와 지질 산패에 의한 이취 발생이 HMR 제품화의 주요 제한 요인이다. 특히 기존의 가열 방식은 과도한 수분 손실과 영양소 파괴를 초래하므로, 원물의 품질을 보존하면서 조리 편의성을 극대화할 수 있는 차별화된 가공 기술 도입이 요구된다. 이에 본 연구는 차세대 가열 기술인 스팀오븐(Steam Oven, SO)과 과열증기(Superheated Steam, SHS) 공정을 적용하여 삼치스테이크의 품질을 극대화하는 최적 조건을 도출하고자 하였다.
    원료의 초기 품질 유지를 위한 해동별 Drip loss 결과, 고주파 해동(High Frequency Defrosting, HFD)이 유수 및 상온 해동 대비 Drip loss가 1.09%로 최적 해동법으로 선정되었다. 또한, 삼치 특유의 비린내를 제어하기 위한 마리네이드 공정에서는 9종의 허브 추출물 중 타임 홀 처리구가 가장 우수한 평가를 받았으며, 3%(w/v) 농도에서 20분간 침지하는 조건이 종합 기호도 8.34점을 나타내어 최적 조건으로 확립되었다. 가열 공정 최적화는 반응표면분석법(Response Surface Methodology, RSM)의 중심합성계획(Central Composite Design, CCD)을 이용하여 수행하였다. 독립변수 범위는 스팀오븐의 경우 가열 온도(X1) 55.86~84.14℃, 가열 시간(X2) 10.86~39.14분으로 설정하였으며, 과열증기는 가열 온도(X1) 311.72~368.28℃, 가열 시간(X2) 1.59~4.41분으로 설정하였다. 종속변수로 전반적 기호도(Y1)와 경도(Y2)를 분석하여 최적화를 수행한 결과, 스팀오븐은 70℃, 25분, 과열증기는 340℃, 3분 조건이 최적 공정으로 도출되었다.
    최적 조건으로 제조된 시제품의 품질 특성을 부위별(몸통, 꼬리)로 분석한 결과, 스팀오븐 처리구는 습열 환경으로 시료 표면의 수분 증발을 억제함으로써 몸통(75.02%)과 꼬리(74.76%) 모두 원물 대비 높은 수분 함량을 유지하였으며 이는 부드럽고 촉촉한 조직감 형성에 기여하였다. 반면, 과열증기 처리구는 고온 증기, 급속 가열에 의해 몸통(71.29%)과 꼬리(71.40%)의 수분 함량이 감소하였으나, 이 과정에서 조단백질, 조지방, 조회분 등 고형분 함량이 상대적으로 농축되어 스팀오븐 대비 높은 영양 성분 함량을 나타냈다. 특히 영양학적 측면에서 과열증기 처리구는 열에 불안정한 Eicosapentaenoic acid (EPA) 및 Docosahexaenoic acid (DHA) 등 다가불포화지방산(Polyunsaturated fatty acids, PUFA)의 손실이 최소화되었으며, 모든 부위에서 필수아미노산의 보존율 또한 가장 우수하게 나타났다. 신선도 지표인 휘발성염기질소(Volatile basic nitrogen, VBN) 함량은 과열증기 처리구의 몸통(2.81 mg/100 g)과 꼬리(3.04 mg/100 g)에서 가장 낮게 측정되었으며, 색도에서는 마이야르 반응으로 적색도(a*)와 황색도(b*)가 증가하였다.

    With changes in modern dietary habits and the rapid growth of the Home Meal Replacement (HMR) market, demand for high-quality seafood HMR products has increased substantially. Japanese Spanish mackerel (Scomberomorus niphonius) a nutritionally valuable fish species rich in high-quality protein and n-3 fatty acids; however, its commercialization as an HMR product is limited by texture deterioration and the development of off-flavors caused by lipid oxidation during thermal processing. In particular, conventional heating methods often induce excessive moisture loss and nutrient degradation, highlighting the need for differentiated processing technologies that preserve raw material quality while enhancing cooking convenience. Therefore, this study aimed to establish optimal manufacturing conditions for mackerel steak HMR products by applying two advanced thermal processing technologies—Steam oven (SO) and Superheated steam (SHS)—to maximize sensory quality and ensure storage stability.
    To preserve the initial quality of raw materials, thawing methods were first evaluated based on drip loss. High frequency defrosting (HFD) was selected as the optimal thawing method, exhibiting the lowest drip loss (1.09%) compared with running water and room-temperature thawing. To control the characteristic fishy odor of mackerel, a marination process was optimized using nine herb extracts. Among them, whole thyme treatment showed the highest sensory acceptance, and immersion at a concentration of 3% (w/v) for 20 min was established as the optimal condition, achieving an overall preference score of 8.34.
    Optimization of the heating processes was conducted using a Central composite design (CCD) within the framework of Response surface methodology (RSM). For the SO process, the independent variables were set as heating temperature (55.86~84.14℃) and heating time (10.86~39.14 min), while for the SHS process, temperature (311.72~368.28℃) and time (1.59~4.41 min) were selected based on preliminary trials. Overall sensory preference (Y1) and hardness (Y2) were used as response variables to simultaneously satisfy sensory and textural quality requirements. As a result, the optimal heating conditions were determined as 70℃ for 25 min for SO and 340℃ for 3 min for SHS.
    Quality characteristics of mackerel steak prototypes manufactured under these optimal conditions were evaluated by part (body and tail). The SO-treated samples maintained significantly higher moisture contents in both the body (75.02%) and tail (74.76%) compared to the raw material, owing to the moist-heat environment that inhibited surface moisture evaporation, thereby contributing to the formation of a soft and moist texture. In contrast, the SHS-treated samples exhibited reduced moisture contents in the body (71.29%) and tail (71.40%) due to rapid heating by high-temperature steam; however, this process resulted in the relative concentration of solid components such as crude protein, crude fat, and crude ash, leading to higher nutrient contents than those of SO-treated samples.
    From a nutritional perspective, the SHS process effectively minimized oxidative losses of heat-labile polyunsaturated fatty acids (PUFAs), including eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), and demonstrated superior retention of essential amino acids in all parts. The volatile basic nitrogen (VBN) content, an indicator of freshness, was lowest in the SHS-treated body (2.81 mg/100 g) and tail (3.04 mg/100 g), confirming effective enzyme inactivation by thermal processing. In addition, color analysis revealed increased redness (a*) and yellowness (b*) in SHS-treated samples, attributable to Maillard reactions induced by high-temperature heating.
    In hygienic safety evaluation, the SHS process exhibited superior microbial inactivation efficacy compared with SO, reducing initial total viable counts, coliforms, and E. coli to non-detectable levels, while six major foodborne pathogens were not detected in any treatment groups. Based on storage at 10°C, the recommended shelf life was estimated as 11 days for both body and tail parts in SO-treated samples, whereas SHS-treated samples showed extended shelf lives of 16 days for the body and 14 days for the tail.
    In conclusion, the SO process demonstrated advantages in achieving a soft texture through effective moisture retention, whereas the SHS process showed strengths in nutrient concentration via short-time high-temperature heating and enhanced storage stability due to its strong microbial inactivation effects. This study is significant in systematically comparing and analyzing the quality characteristics of mackerel steak HMR products processed using two different heating technologies, thereby providing a foundation for process standardization and industrial application. These findings are expected to serve as key baseline data for selecting appropriate heating processes tailored to target quality attributes in the development of high value-added mackerel steak HMR products.
