This study was carried out to investigate the effects of nutrition education through the food and nutrition section of home economics curriculum of middle school. This survey was conducted from September to October 1995, in order to make the materials for nutrition education. The subjects of this study were 445 middle school students(boy 200, girl 245) living in Seoul.
The results obtained are summarized as follows: The nutrition knowledge score was significantly different by sex. Girl students showed higher nutrition knowledge score, interest in taking a lesson, and satisfaction with the food and nutrition section than boy students (p<.05). Most of students felt that teaming about food and nutrition is beneficial but units allocated for food practice were not sufficient. The overall results indicated that the home economics lesson for girl students were more efficiently accomplished than those for boy students. Thus, it may be suggested that proper teaching methods are necessary and should be developed, especially for boy students. Transformation of teaching method may play a significant role in improving the nutrition knowledge for middle school students. These methods include practical lecture, cooking practice, presentation, discussion, and audio-visual teaching. In conclusion, school education of food and nutrition serves a useful function in enhancing the levels of perception and accuracy of nutrition knowledge.
