This study was conducted to set the shelf life of hamburger in cold storage. Total viable cell count and results of sensory evaluation were effective quality index to estimate the shelf life. Permittable maximum shelf life was estimated six days in respect of total viable cell count and ten days in respect of sensory evaluation data, each other, So the recommendable shelf life of hamburger at 5℃ storage was six days.
