In this study, it is assume that when business cooperation between suppliers to supply food materials to hotel and a hotel is accomplished well through active communication, these purchasing conditions give effects on satisfaction against the suppliers and prime cost control satisfaction, so will be led to co-development of the purchaser and the supplier and Supply Chain Management (SCM) can contribute as a measure for that. In order to introduce this SCM system to purchasing management works of a hotel, at first, recognition of staffs of purchasing and cooking department was investigated, and effects of these recognitions on partnership performance with suppliers, and effects on food material management, satisfaction against suppliers and cost price control according to this were analyzed.
In theoretical area, we established factors to be used in this study through traditional literature search, developed them considering contents related to purchasing management business, establishes hypotheses, and verified them through actual proofs. Although the research on SCM has been progressed variously, it is still poor in Hotel area. From this realistic reason, it is assessed to be significant, to identify the recognition about SCM of staffs related to purchasing works and understand the present partnership performance during progression, and then to study effects of the above recognition on food material control performance and satisfaction on suppliers and prime cost control.
As target hotels to be proved, 10 luxury hotels in Seoul were selected and methods implemented by them currently for partnership with suppliers were investigated through pretest against the purchasing departments of them. While a relationship formation at the level of visiting the suppliers and conferences with suppliers by corresponding personnel was being accomplished in most Hotel, education, information sharing, cooperative market research, and meetings for active partnership were being implemented by some hotels. From this result of pretest, it was found that hotels, purchasers regarded their suppliers as inferior dependencies rather than partners.
Based on these research results, we prepared a questionnaire, distributed 480 copies to, collected 461 copies from the selected study target hotels, and used 458 copies in this study, excluding 3 copes answered insincerely
As models for research to analyze mutual effects of recognition on SCM and partnership performance, effects of partnership performance on food material control performance, satisfaction against suppliers, and prime cost control satisfaction, and effects of food material control performance on satisfaction against suppliers and prime cost control satisfaction, 6 hypotheses were established. The results from these are as follows.
At first, a factor analysis was conducted for research concept and validity for variables and resulted that 3 factors including future oriented relationship, communication, mutual sharing were extracted as factors for recognition on SCM. For the partnership performance, 3 factors including partner activities, cooperation and trust, and mutual business understanding were extracted and the effects of these performances on food material control performance, satisfaction against suppliers and prime cost control satisfaction were analyzed.
In analysis of validity and trust on SCM, it was found that cronbach's alpha value to estimate internal consistence among each factors resulted in 0.872 in future oriented relationships, 0.753 in communication, and showed the internal consistence among the questionnaire items. And in future oriented relationships, it was suggested that they recognized highly common benefit pursuit of hotels and supplier and pursuit of future oriented relationship.
For communication factors, it was found that benefits of hotel from competition between suppliers and purchasing forecast data provision were highly recognized. For mutual sharing, it was found that relationship maintenance with supplier was the high, but mutual dependence and sharing of prime cost information were the lowest. Based on these results, it was suggested that the partnership performance for future oriented relationship which was performed currently was low and could not reach to recognitions of staffs.
The Parts related to the partnership performance was classified into partner activities, cooperation and trust, and understanding of mutual business factor and analyzed. From the analysis, it was found that events for partnership increase and visit suppliers were highly recognized and sharing stock information and providing new menu information were lowly recognized.
In factor analysis on cooperation and trust, it was found that trouble solution and trust on promise were highly recognized. After that, the recognition significance founded in order of smoothness of food material supply, trust in market information, menu composition, human relations, smoothness of purchasing work system, and understand on supplier’s position and from these, it was suggested that trust in suppliers was relatively deficient.
In mutual work understanding factor, the significance hierarchy was founded in order of understanding for works, mutual trust, and mutual information exchange, and understanding of mutual organizational culture was relatively low. The cronbach's values alpha for the above were 0.931, 0.902, and 0.845, so showed internal consistence.
In food material control factor, the significance order of items may be affected from well formed partnership was founded in order of improvement of food material quality, rapid security of food material, and demand management and it was suggested that the hypothesis that the partnership performance would affect food material control performance was significant.
In effects of partnership performance on satisfaction against suppliers, cooperation and trust were found to be the most significant, and partner activities and mutual work understanding were followed. In effects of partnership performance on prime cost control satisfaction, cooperation and trust were found to be the most significant and it was found that partner activities and mutual work understanding have low effects.
As result of food material control performance’s effect on satisfaction against suppliers, food material quality control activities received the highest significance. In this factor, as the satisfaction against suppliers was relatively high compared with other items, it was suggested that satisfaction on the suppliers currently trading with the hotels was positive. Accordingly, it was suggested that the hypothesis the partnership performance between hotels, the purchaser and suppliers would affect satisfaction against suppliers was significant. In addition, as it was found significantly that these factors gave positive effects on food prime cost control activities of hotel and prime cost ratio, it was suggested that food material control performance was significant on prime cost control satisfaction.
The hypotheses of this study were verified using canonical correlation analysis and multiple regression analysis.
In analysis result of <Hypothesis 1>, the values such as Pillais, Hotelings, and Wilks λ show that there is a significant correlation between SCM recognition and partnership performance at 0.05 of significance level. In this canonical correlation which has statistically significant correlation, it was found that there are 3 canonical functions with 0.522~0.063 of canonical correlation. When the above 3 canonical functions were compared each other, the values were 37.5%, 7.1%, and 0.4%, so it was suggested that the first canonical function was the highest and the third canonical function was too low to use in further analysis.
In analysis of <Hypothesis 2>, multiple regression analysis was used and it was found that the regression formula indicated about 34.3% and the regression model was significant at p<0.05. In analysis of <Hypothesis 3>, it was found that the regression formula indicated about 46%, the regression model was significant at p<0.001, t value of trust and cooperation was 6.638, the highest. In analysis of <Hypothesis 4>, it was found that the regression formula was 27%, the regression model was significant at p<0.001, t value of trust and cooperation was 6.638, the highest. In analysis of <Hypothesis 5>, it was found that the regression formula was 57%, the t value was 24.711 and was significant at p<0.001. In analysis of <Hypothesis 6>, it was found that the regression formula was 56%, the t value was 24.154 and was significant at p<0.001.
As shown in these results, the conclusion that cooperation and trust is very important between hotels and its suppliers and they should give every effort to form a future oriented relationship together can be obtained.
