본 연구는 신(新) 야간경제·관광 관점에서 야간형 축제와 지역축제의 야간 시간대에 선호되는 음식의 특성과 유형을 실증적으로 규명하고, 이를 바탕으로 야간형 축제 음식 콘텐츠 기획 방향을 제시하는 데 목적이 있다. 이를 위해 야간형 축제 및 지역축제 방문객을 대상으로 설문조사를 실시하였으며, 최종 403부(남 148명, 여 255명)의 응답을 분석에 활용하였다.
설문지는 인구통계 7문항과 함께, 야간 음식 선호를 측정하는 문항을 포함하여 구성하였고, 음식 선호 문항은 5점 리커트 척도로 측정하였다.
자료분석은 기술통계 및 탐색적 요인분석을 중심으로 수행하였다. 요인분석은 주성분법(Principal components)과 베리맥스(Varimax) 직각회전을 적용하고, 고유값 1 이상 기준으로 요인을 추출하였다. 표본적합도는 KMO=0.904, Bartlett 구형성 검정 유의확률 0.000, 누적분산율 54.923%으로 나타나 요인분석 적용의 타당성이 확인되었다.
탐색적 요인분석 결과, 야간 시간대 음식 선호는 첫째, 미각자극형 야간 음식, 둘째, 지역 브랜드형 야간 음식, 셋째, 건강지향형 야간 음식, 넷째, 간편·포장형 야간 음식, 다섯째, 주류·환경형 야간 음식의 5개 요인 구조로 체계화되었다.
요인별 기술통계에서는 5개 요인의 평균이 모두 3점을 상회하여 전반적으로 긍정적 선호가 확인되었으며, 특히 ‘주류·환경형 야간 음식’ 요인이 가장 높은 선호(평균 4.08)를 보였고, 해당 요인에서 ‘따뜻한 국물류 음식’이 핵심 선호 항목으로 나타났다.
또한 개별 문항 수준에서는 ‘이동하며 먹기 편한 포장형 음식’이 가장 높은 평균(4.20)으로 나타나, 야간형 축제에서 동선 기반의 이동·관람과 결합된 소비가 중요함을 시사한다.
행동적 특성 측면에서는 축제 방문목적 중 ‘음식 구매 및 시식’(51.0%)의 비중이 높았고, 음식 선택 시 ‘맛’(47.6%)이 가장 큰 고려 요인이었으며, 음식 정보는 SNS(46.2%)를 통해 얻는 경향이 확인되었다. 집단 간 차이 분석에서는 일부 문항에서 성별에 따른 유의한 차이가 관찰되었다(예: 체험형 음식, 소량·다양한 메뉴 구성 등).
종합하면, 야간형 축제 음식 기획은 단일 인기 메뉴 중심 접근을 넘어, 감각 자극·지역성·건강·편의·주류 및 환경 요소를 포트폴리오로 결합하고, 이동 동선에 맞춘 분산 배치 및 메뉴·서비스 설계를 통해 야간경제 활성화와 축제 경쟁력을 강화할 필요가 있다.

A Study on Night-Time Food Preferences at Night-Type Festivals and Local Festivals from the Perspective of the New Night-Time Economy and Tourism

This study aims to empirically identify the characteristics and types of foods preferred during Night-Time hours at Night-Type festivals and local festivals from the perspective of the New Night-Time Economy (NTE) and Night-Time tourism, and to propose practical directions for planning festival food content. A questionnaire survey was administered to visitors at Night-Type festivals and local festivals, and a total of 403 valid responses (148 males and 255 females) were used for analysis. The instrument consisted of seven demographic items and Night-Time Food preference items measured on a five-point Likert scale.
Data analysis primarily employed descriptive statistics and exploratory factor analysis (EFA). For EFA, principal component extraction with Varimax orthogonal rotation was applied, and factors with eigenvalues greater than 1 were retained. The adequacy of the sample and the suitability of the data for factor analysis were confirmed (KMO = 0.904; Bartlett’s test of sphericity, p < .001), and the cumulative variance explained was 54.92%.
The EFA results identified five factors representing Night-Time Food preferences: (1) sensory-stimulation Night-Time foods, (2) regional brand–based Night-Time foods, (3) health-oriented wellness Night-Time foods, (4) convenient and portable Night-Time foods, and (5) alcohol- and environment-related Night-Time foods. Descriptive statistics indicated that the mean scores of all five factors exceeded the midpoint (3.0), suggesting overall positive preferences. In particular, the alcohol- and environment-related factor recorded the highest mean (4.08), and within this factor, warm soup dishes emerged as a key preferred item. At the individual item level, portable foods that are easy to eat while moving showed the highest mean (4.20), implying that on-the-move consumption linked to visitor flows and program viewing is especially important in Night-Time festival contexts.
In terms of behavioral characteristics, food purchase and tasting accounted for a high proportion of visit purposes (51.0%). Taste was the most important criterion for food selection (47.6%), and social media served as a major source of food-related information (46.2%). Group comparison analyses also revealed statistically significant gender differences in selected items, such as experiential foods and small-portion, variety-oriented menu options.
Overall, the findings suggest that Night-Time festival food planning should move beyond a single “popular menu” approach and instead develop a portfolio that integrates sensory stimulation, local identity, health orientation, convenience, and alcohol/environmental considerations. Furthermore, dispersed food placement aligned with visitor flows, along with coordinated menu and service design, is recommended to promote the Night-Time economy and strengthen festival competitiveness.
