This study intends to identify any potential availability of outsourcing based on Delphi techniques in cuisine preparation at domestic hotels, especially five star hotels in Seoul. In this study, the results of interview with professional chefs to identify any potential availability of outsourcing in hotel cuisine practices can be outlined as follows: First, the interview with professional chefs showed any positive availability of outsourcing in cuisine works at domestic hotel. Through this interview, it was found that outsourcing would be helpful to reinforce a competitive edge of domestic hotel enterprise, such as saving cost and enhancing professionalism and service. Secondly, it was found that cuisine works at supporting division which initially comprise pre-treatment and 1st cuisine process could be studied at the further level as an applicable outsourcing target than now. Thirdly, it was required that a table of standard recipe for each item shoule be completed by the selection of detailed items, where outsourcing would be available in cuisine practices at domestic hotel. Moreover, phased application of basic items, consistent quality maintenance from suppliers and smooth procurement should be realized in this context.
