외식업창업의 성공요인에 관한 탐색적 연구 : 대도시와 중소도시 지역(서울,원주)간 차이 비교를 중심으로

국문 초록 (Abstract)

외식업 창업의 성공요인에 관한 탐색적 연구
- 대도시와 중소도시 지역(서울,원주)간 차이 비교를 중심으로

본 연구에서는 국내 선행연구와 외식사업 창업 성공사례 및 문헌조사를 통하여 외식업 창업성공 요인들을 도출하였고 이들 중에서도 창업초기의 투자비용이 큰 요인들에 대하여 집중하여 분석해 보았다. 각 요인들이 경영성과에 미치는 영향에 대하여 강원도 중소도시인 원주지역과 대도시 서울지역의 일반음식점 한식업종을 중심으로 지역 간 차이 비교를 중심으로 연구를 수행하였다.

외식업창업 성공요인은 창업자의 특성과 매장 특성, 고객 특성이 경영성과에 긍정적 영향을 미치는 지 확인하였다. 또한, 경영성과에 미치는 성공요인 창업자 특성, 매장 특성, 고객 특성이 대도시와 중소도시의 지역 간 조절효과가 있는지 검증하였다.

본 연구를 통하여 외식업 창업을 준비하는 예비창업자들에게 대도시와 중소도시의 지역 특성에 따라 다른 외식업 창업 성공요인과 지침을 제공하여 창업 전에 반드시 준비해야할 요소를 점검하여 창업 후 경영 실패를 줄이는 데 기여하고자 한다.

ABSTRACT



This study conducted exploratory research, drawing key success factors in new restaurant businesses through the domestic precedent studies and the success stories of food service business start-up and the effect of each factor on business performance, selecting major business districts, focused on ordinary restaurants in Wonju, a small city in Gangwon Province and in downtown Seoul, a metropolis.
This study checked if the entrepreneur’s characteristic factors and the restaurant’s location and characteristics had positive impacts on business performance concerning success factors in new restaurant businesses and if the impacts were statistically significant. In addition, this study checked if there was a difference in the impacts of the detailed success factors on business performance according to situations like customer characteristics.
This study would provide guidelines for success for preliminary founders who were preparing a new restaurant business and contribute to reducing failure through checking the elements that must be prepared before the establishment.
