      • 프랜차이즈 시스템의 평가 지표 개발을 위한 탐색적 연구: 공생지수(symbiosis index)를 중심으로

        c 프랜차이즈 시스템을 기반으로 하는 하나의 가상기업인 프랜차이즈 기업 (FranchiseEnterprise) 의 개념에서 이 프랜차이즈 기업이 프랜차이즈 사업을 지속적으로 성공하기 위해서는 sub-system 자제도 경쟁력을 갖고 가야하고, 이들 sub-system 간의 공생적 관계(symbiotic relationship)도 프랜차이즈 시스템의 목표인 공생 (symbiosis)을 향해서 잘 유지를 해야 한다. 이런 관점에서 프랜차이즈 시스템에 대한 평가는 기존의 프랜차이즈 평가와는 다른 관점에서 진행되어야 할 것으로 보인다. 즉, 기존의 평가 시스템은 가맹본부 중심의 평가에 집중을 하고 있다. 물론 프랜차이즈 시스템의 중심은 가맹본부(가맹본부 시스템)가 되지만 프랜차이즈 시스템을 기반으로 하는 프랜차이즈 기업의 관점에서 보면 가맹본부 시스템과 더불어 다른 하위시스템(가맹점, 벤더, 고객) 간의 공생적 관계가 유지될 때 성공적이고 지속가능한 사업성과를 기대할 수 있다. 따라서 본 연구에서는 기존 평가시스템을 고찰하고, 지금까지 가맹본부-가맹점 중심의평가시스템의 관점에서 더 확대하여 4 개의 하위 시스템 자체와 이들 간의 공생적 관계(symbiotic relationship)를 통한 공생 지 수(symbiosis index)를 도출하여 프랜차이 즈 시 스템 의새로운 평가 모텔을 제시하고자 한다.

      • 프랜차이즈 기업의 전사적 계약관리 (ECM) 모델 도입을 위한 IT 프로그램 개발에 관한 연구

        본 연구는 프랜차이즈 산업에 있어 가맹본부의 효율적인 가맹점 관리 시스템 도입을 위한 새로운 실무적 관점의 연구이다. 프랜차이즈는 가맹본부와 가맹점사업자 간의 계약에 의해 관계가 형성되고 이후 지속적으로 계약에 의해 규정받게 된다. 따라서 가맹본부는 다수의 가맹점사업자를 효과적으로 통제하고 관리하기 위해서 계약의 체계적인 관리가 필요하고, 외부적으로는 정부의 규제정책에 합법적이고 능동적으로 대처할 필요가 있다.이를 위하여 프랜차이즈 기엽의 “전사적 계약관리(ECM : Enterprise Contract Management)"라는 개념을 정립하여 가맹점 관리의 시스템화를 촉진시거고자 하였다. 이를 실무적 차원에서 효과적으로 도입하기 위하여 프랜차이즈 전문 IT프로그램인 ECM 기반의 “프랜차이즈 계약관리 · 슈퍼바이정 시스멈 (Franchise Contract Management . Supervising System) - TruFCM"을 개발하였다. 이 프로그램을 통해 프랜차이즈 기업의 지속가능경영의 실현과 프랜차이즈 산업의 질적인 발전에 기여하고자 하는 데 본 연구의 의의가 있다 하겠다. This practical study is to propose a model for efficiently implementing franchise management by Franchise Enterprise in franchise industry. Franchise system is established and mutual relationship is also fulfilled based on bilateral contract between franchisor and franchisee. After contract and opening the franchisee store, franchisees are continually supervised and administered according to mutually agreed process and procedures.In this regard, franchisor should have well-managed system for supervising and assisting franchisee efficiently and effectively.The purpose of this study is to set-up the concept of enterprise contract management(ECM) in Franchise Enterprise and to promote the systemization of franchise management, and also to present and propose the development tool for franchise-specific IT program which is called “Franchise Contract Management-Supervising System".

      • 프랜차이즈 산업 발전과정에서 인력현황 및 활용에 대한 연구

        프랜차이즈는 지속적으로 성장하고,국내뿐만 세계적으로 급성장할 것으로 예측하고 있 다. 국내 프랜차이즈 시장은 외형적으로 무서운 속도로 증가하고 있으며,2010년의 예상매 출액은 114조원에 달할 것으로 보고 있다. 매년 새로운 프랜차이즈 시스템이 생겨나고 있 지만 성공하는 경우보다 실패하는 기업이 훨씬 많다고 할 수 있다. 국내 유통시장의 전면 개방으로 외국 프랜차이즈 업체의 국내 진출이 가속화되고 있는 현재 상황에서 국내 프랜 차이즈 업체는 신규 가맹점의 확보 · 기존 가맹점 유지와 내부 인력을 강화하는 것이 중요 하지만,그럼에도 불구하고 지금까지는 프랜차이즈 본부의 내부 인력을 활성화하는 방안이 제시되고 있지 않다. 따라서 본 연구에서는 프랜차이즈 본부의 발전과정에서 나타나는 내 부 인력현황과 인력의 활용에 대해 연구하고자 한다. 연구 결과,기업의 규모와 매출이 성장함에 따라 기업에게 요구되어지는 내부 인력은 기 업성장주기에 따라 달라지는 것을 볼 수 있다. 현재 프랜차이즈 산업에서 필요로 하는 내부 인력 현황을 살펴보면,유통과 재무/회계에 많은 인력을 요구하고 있는 것으로 나타났으며, 이러한 현상을 조직 수명주기로 살펴보면 공식화단계로 성장단계라고 볼 수 있다. 이러한 수명주기로 볼 때,향후 조직이 필요로 하는 인력 수급을 고려하여야 할 것이다.

      • 프랜차이즈 해외진출 성공요인-베트남 패스트푸드시장 진입사례

        프랜차이징은 창업 촉진, 고용 창출 및 경제발전 측면에서 매우 효과적인 전략으로 세계각국은 관련 법규 마련 및 발전 계획 수립을 통해 프랜차이즈 산업을 육성, 지원하고 있다. 베트남은 2005년 6월 프랜차이즈 관련 법규를 마련하고, 2009년 WTO 가입으로 프랜차이즈 분야 100% 외국인 단독투자를 허용하여 프랜차이즈 산업 활성화 기반을 확대하였다. 아울러 베트남은 경제발전에 따른 소득증가, 서구식 생활패턴의 확산 등으로 프랜차이즈산업이 급속히 발전되고 있고, 많은 글로벌 프랜차이즈 기업들이 앞 다투어 진출하고 있는유망시장이나, 지금까지 베트남 프랜차이즈 시장 진출과 관련된 국내의 연구는 전무한 실정이다. 따라서 본 연구에서는 베트남에 성공적으로 진출한 국내외 기업들의 사례 분석을통해 베트남에 진출하려는 우리의 후발 기업들에게 효과적 진출 전략과 성공 요인을 제시하고자 한다. 연구결과, 베트남 시장에 성공적으로 정착한 기업들은 각자의 기업 특성과 강점에 맞는마케팅 전략을 전개하였으며, 공통적인 핵심 성공 요인들은 1) 선발주자이점의 최대한 활용, 2) 과학적 시장조사를 통한 현지화, 3) 철저한 위생 안전 관리, 4) 선직영, 후가맹 전략, 5) 타국에서의 성공, 실패 경험 벤치마킹 등으로 나타났다.

        글로벌 커피 프랜차이즈 전문점의 서비스스케이프가 고객만족과 충성도에 미치는 영향 : 몽골의 ‘C’ 기업의 사례 연구

        Purpose – Due to the increase in coffee consumption and competition, domestic coffee franchise companies are currently entering the overseas market. Therefore, coffee franchise companies are pursuing a variety of marketing strategies to meet customer needs and gain competitive advantage in overseas markets. From this perspective, overseas franchise companies need to ensure that their servicescapes meet the needs of their overseas customers. For these purposes, the study is to identify the impact servicescapes on customer satisfaction and customer loyalty focused on Global Coffee Franchise Company “C”, which extended its business worldwide in Mongolia. Research design, data, and methodology - The data were collected from customers who had visited the stores of ‘C’ company in Ulaanbaatar, Mongolia. 435 valid questionnaires collected through online survey coded and analyzed using frequency, confirmatory factor analysis, correlations analysis, and structural equation modeling with SPSS 24 and SmartPLS 3.0. Result – Firstly, seating comfort, facility aesthetics, and cleanliness, ambient conditions among servicescapes influenced customer satisfaction. Secondly, servicescapes didn’t affect the loyalty directly. Third, customer satisfaction had positive effect on loyalty. Fourthly, cleanliness which was ranked lower in Korea had a great effect on customer satisfaction in Mongolia. Fifthly, IPMA(Importance-performance map analysis) shows that the importance of servicescapes is higher for women than for men, and facility aesthetics for female and cleanliness is the most important for male. Conclusions - The results of this study show that there is a positive (+) effect on customer satisfaction in order of cleanliness, ambient conditions, aesthetics, and seating comfort. Therefore, franchise companies considering or advancing into Mongolia should consider importance in order of cleanliness, ambient conditions and aesthetics when entering Mongolia market. For example, franchise managers should select Monday as a "clean day," and all merchants should spend all of their open hours and keep their stores clean in accordance with the head office manual. In addition, franchise managers need to hire a VMD (visual merchandising) experts to build up a physical environment that will effectively highlight the space-specific display of the store so that Mongolian local customers can have a satisfactory climate and aesthetics. And, the IMPA analysis between servicescapes and customer satisfaction shows that women are more susceptible to servicescapes than men. Especially, in the case of women, the importance of esthetics is high, but the performance is low. Thus, if the aesthetics are actively improved, customer satisfaction can be effectively increased.

      • 프랜차이즈 가맹본부 리더십과 가맹점 마케팅 노력이 가맹점 불만족과 전환의도에 미치는 영향

        Purpose - This study aims to examine different impacts of franchisor’s leadership and franchisee’s marketing efforts on franchisee dissatisfaction and switching intentions, and to investigate how franchisee dissatisfaction plays a mediating role in the relationship between these constructs. This study attempted to fill the gap in the literature by treating the franchisee dissatisfaction as a mediator in the relationship between these constructs, identify how franchisor’s leadership and franchisee’s marketing efforts have effects on franchisee dissatisfaction, in turn, reduce switching intentions, and provide the managerial implications for building a long-term relationship to achieve mutual goals between franchisors and franchisees Research design, data, and methodology – In order to test the hypotheses, the data were collected from franchisees in Seoul and Gyeonggi Province. The franchisee owners were informed about the purpose of this study by the trained interviewers. The respondents received a letter introducing the purpose of this study and another letter that the owners wrote to encourage their active participation. Among the 300 questionnaires distributed, 260 (86.7%) questionnaires were returned. Of those collected questionnaires, 6 uncompleted responses were excluded, and 254 questionnaires with an effective response rate of 84.7% were coded and analyzed using frequency, confirmatory factor analysis, and correlations analysis, and structural equation modeling with SPSS 21.0 and SmartPLS 3.0. Results – The findings of the study are as follows. First, franchisor leadership had a negative effect on franchisee dissatisfaction, but franchisee marketing efforts did not have a significant effect on franchisee dissatisfaction. Second, franchisee dissatisfaction had a positive effect on switching intentions. Third, franchisor leadership had a negative effect on switching intentions, but franchisee marketing efforts did not have a significant effect on switching intentions. Conclusions – This study researched the franchisor’s leadership as a single factor of transformational leadership. Thus, it may have limits in measuring leadership. Future studies shall include emotional, loyal, and transactional leadership. In addition, the future studies shall also research the effect of franchisor’s leadership and franchisees’ marketing efforts on dissatisfaction and switching intentions. For example, the franchisor’s relationship-oriented efforts can be a crucial parameter that reduces dissatisfaction and switching intentions.

      • 조직 기업가 정신이 구성원의 조직몰입과 성과에 미치는 영향: 한국 외식 프랜차이즈 산업

        Purpose – Competitive industry structure and recent economic depression challenge a survival of Korean small- and medium-sized food franchising companies (SMFCs), albeit the explosive growth of the Korean food service industry for last few decades. Against this backdrop, it examines how these SMFCs overcome liabilities of smallness and resource scarcity to strengthen competitive advantage in the market. To tackle this, in this article we focus on corporate entrepreneurship and human resources as a knowledge-based asset for these SMFCs. Furthermore, the ratio of employee turnover is high in SMFCs. We view that such brain-drain may result in poor performance of the Korean SMFCs. As such, we pay attention to the role of organizational commitment to an organization as a solution for enhancing individual-level employees' loyalty toward their organization. Research design, data, and methodology – Our research question is to what extent corporate entrepreneurship (i.e., innovative organizational culture, organizational autonomy, and administrative innovation) affects an individual-level attitude toward the organization and, in turn, employee creativity and satisfaction in the Korean SMFCs context. We collected data from employees in SMFCs for three months. A total of 126 valid questionnaires were collected, and analyzed the data using partial least squares path modeling. Results – The reliable and valid measurement model feed into testing the structural model. Our findings suggest that innovative organizational culture and organizational autonomy positively affect employee commitment. Particularly, organizational autonomy has a greater effect than innovative culture on employee commitment. However, the relationship between administrative innovation and employee commitment is not significant. We also find that employee commitment positively affects both employee creativity and satisfaction. Conclusions – Our contribution to the existing franchising business and management literature is twofold. First, the conceptual model includes three antecedents in the organizational entrepreneurship dimension to organizational commitment. Second, we conceptualize organizational commitment as employee commitment, and validate its impact on employee creativity and job satisfaction at an individual performance level. Overall, this article suggests that it is critically important for the Korean SMFCs to develop corporate entrepreneurship in order to facilitate employees' positive attitudes toward their organizations.

        외식프랜차이즈 가맹점의 지각된 공정성이 응집성, 관계만족, 그리고 가맹점의 장기지향성에 미치는 영향

        Purpose – This study examines the role of foodservice franchisee’s perceived justice(distributive, procedural, and interactional) in developing long-term orientation to franchisor and investigate the mediating role of cohesiveness and relationship satisfaction in the relationship between franchisee’s perceived justice and long-term orientation to franchisor. Research design, data, and methodology - We collected data from managers and owners in foodservice franchisees located in Seoul, Korea. Among a total of 500 questionnaires, 500 questionnaires were returned. After excluding 36 invalid respondent questionnaires, 496 valid questionnaires(response rate of 99.2%) were analyzed using frequency, confirmatory factor analysis, correlations analysis, and structural equation modeling with SPSS 21 and SmartPLS 3.0. Result – The findings of this study are as follows: First, distributive justice and interactional justice had positive effects on cohesiveness, but procedural justice did not. Second, distributive justice and interactional justice had positive effects on relationship satisfaction, but procedural justice did not. Third, cohesiveness and relationship satisfaction had positive effects on franchisee‘s long-term orientation to franchisor. Conclusions – The implications of this study are as follows. First, this study found that procedural justice can create a high cohesiveness and identification of franchisee and also maintain a cooperative relationship with the franchisor. Second, this findings suggest that the perceived distributional and interactional justice can improve the satisfaction with the franchisor and thus positively influence the intention to maintain the relationship and the intention to recontract. Third, the results of this study indicate that the cohesiveness of franchisees can play a pivotal role to improve their satisfaction with the franchisor and pursue mutual development by continuously maintaining stable business relationship with franchisor. The findings of this study are subject to at least three limitations. First, the research subject is limited to the food service franchise shops in Seoul area, so the sample was not nationally representative of the franchise stores. Second, the perceived fairness is measured only from the point of view of the franchisee, and this study has a limitation to examine the difference between the perceived franchisee’s and franchisor’s justice. Third, Future research needs to identify more closely the relationships between perceived fairness and long-term orientation by gathering specific quantitative data such as the renewal rate and the business performance.

      • 효과적인 팀워크를 위한 프랜차이즈 호텔 조리장의 피그말리온 리더십

        Purpose – In the past, the chain hotel chefs only serve food to their customers. However recently, the hotel chefs play a pivotal role in hotel including considering various customer preferences, safety and nutrition of food, and increasing profits through effective human resource management and inventory control. With the change of the chain hotel chef’s’ roles, pygmalion leadership, one of new leadership styles, focuses on the effect that leader’s positive expectation let subordinates have motivation and more engage in work. This study investigates the effect of chain hotel chef’s pygmalion leadership on leader trust and organizational trust. Research design, data, and methodology - This study was to investigate the structural relationships among chain hotel restaurant chefs pygmalion leadership, hotel restaurant cooks leader trust, organizational trust, and teamwork, and how leader trust and organizational trust play mediating roles in the relationship between pygmalion leadership and teamwork. In this model, pygmalion leadership includes 4 dimensions: Climate, Feedback, Input, and Output. Data were collected using self-administered questionnaire survey on cooks of Deluxe hotel restaurants located in Seoul and Gyonggi-Do. The samples for data analyses were 243 excepting unusable responses. Result – The findings can be summarized as follows: First, climate and feedback had a positive effect on leader trust, respectively. Second, feedback and output had a statistically positive effect on organizational trust, respectively. Third, leader trust had positive effects on organizational trust and teamwork. Fourth, organizational trust had a significant effect on teamwork. Conclusions – As a chain hotel chef treats his/her staffs sincerely, they will be more engaged in work by establishing trust in their leader. Ultimately, it leads to higher sales profit and customer satisfaction. In addition, a hotel can encourage chefs and other staffs to treat each other as if the student-instructor relations, not just commanding staffs. Then, cooks build up their trust to their leader and organization for its sustained growth and development, and the internal bond in organization including teamwork is strengthened. Therefore, to strengthen teamwork and organizational trust, there should be active communication, knowledge sharing, goal sharing, and cooperation between chefs and cooks.

        외식업 직원의 비언어적 커뮤니케이션이 고객감정, 고객만족, 고객신뢰 그리고 재방문의도에 미치는 영향

        Purpose – Non-verbal Communication with customers in restaurant business can play an important role because it affects customer behavior and attitudes as a means to develop and maintain long-term relationships with customers. The purpose of this study is to analyze the effect of non-verbal communication with customers and the effect of the influence on customer satisfaction, trust, and revisit intention. Research design, data, methodology - In order to verify the research models and hypotheses of this study, questions were prepared for each variable and data were collected through questionnaires. The questionnaire survey was conducted from March 27, 2018 to April 17, 2018, for those who agreed with the citizens of the Jeju area who visited the restaurant recently. 50 out of 100 were conducted by internet survey and 50 were surveyed. Thus, a total of 100 responses were used using structural equation modeling with Smartpls 3.0. Results - The results of the study are as follows. First, non-verbal communication has a significant impact on customer emotion. Second customer emotion have a significant impact on customer trust and satisfaction. Third, Customer satisfaction had positive a significant effect on revisit intention. Fourth, Customer trust had positive a significant effect on revisit intention. Conclusions - The implications of this study are following as: The food service company should continuously provide non-verbal communication training to employees so that they can respond to customers with the right attitude and bright smile. In particular, in the case of restaurant franchises, customer response manuals should be created and distributed to the franchisees, and a regular training program for the franchisees should be implemented to provide the same service to the customer. Second, CEOs should have to worry about what kind of experience he or she has left since leaving the store. It is also necessary to constantly look at what customers experience in their stores or in their brands, and what emotions they form through their experiences. Third, the more satisfied or trusted customers are formed through the service of the employee, the more loyal the restaurant business will be, and the more likely it is to make continuous revisit and positive word-of-mouth activities.
