압출성형처리에 의한 강황의 화학적 특성 및 색소 안정성 변화

본 연구에서는 압출성형 처리에 의한 강황의 화학적 특성과 쿠쿠미노이드 색소의 안정성을 분석하였다. 강황을 150℃에서 스크루 속도를 500, 1,000, 1,300, 1,600 rpm 으로 달리하여 압출성형하고 infusion시료와 에탄올 추출물을 제조하였다. 물로 infusion한 시료의 수율은 대조군의 21.3%에서 1,300 rpm 시료에서 27.5%까지 증가하였다. 압출성형 후 강황의 색도는 처리 전과 비교하여 명도가 감소하였고, 갈색도는 증가하였다. HPLC 분석 결과, 쿠쿠미노이드의 함량은 스크루 회전 속도에 따라 유의적으로 감소하여 1,600 rpm 압출성형 강황에서는 약 70%가량 감소하였으나, 3가지 쿠쿠미노이드의 감소 정도에는 큰 차이가 없었다. 압출성형 후 강황 추출물의 단백질, 폴리페놀, 플라보노이드 함량은 처리전과 비교하여 유의적인 감소를 보였고, DPPH와 ABTS라디칼 제거 활성 또한 현저히 약화되었다. 본 연구 결과는 압출성형 과정 중의 고온과 고압으로 인하여 강황의 색소성분을 포함한 생리활성 성분이 파괴되며, 보다 적절한 강황 압출성형 조건에 대한 연구가 필요함을 시사한다. Various health benefits of turmeric have been reported. Therefore, an innovative application of turmeric as a functional food was explored. In the current study, effects of an extrusion process on the chemical properties and antioxidant activities of turmeric were investigated. Extrusion of turmeric was performed at 150℃ using screw revolution speeds of 500, 1,000, 1,300, and 1,600 rpm. A significant reduction in turmeric pigments and the formation of browning compounds occurred due to the extrusion. The degradation of pigments was proportional to the increase in screw speed. Infusion yields were significantly increased after the extrusion. The content of proteins and polyphenols, as well as the content of flavonoids in infusions and EtOH extracts were significantly reduced by the extrusion. Scavenging activities of turmeric against DPPH and ABTS radicals were also significantly reduced following the extrusion. These results indicate that the extrusion process caused a significant loss of pigments and decreased the antioxidant activities of turmeric. Therefore, further study related to the development of a proper extrusion process is to be needed.

Raynaud syndrome is a medical condition that causes pain, numbness, and changes in skin color at the distal extremities. Raynaud syndrome can be subdivided into primary Raynaud's and secondary Raynaud's. The former is diagnosed when the cause is unknown and the latter is caused by an underlying condition, such as connective tissue diseases, injury, smoking, or certain medications. Both cancer chemotherapy and β-blockers are relatively common causes of Raynaud syndrome but there are no reports of its association with methimazole administration. The authors encountered a 43-year old woman with hyperthyroidism who developed digital ulcers associated with Raynaud syndrome after a methimazole treatment. Her digital ulcers and Raynaud syndrome were improved after methimazole was replaced with propylthiouracil and conventional therapy. This paper reports this case along with a review of the relevant literature. (J Rheum Dis 2018;25:203-206)

<P>Liriope platyphylla has been reported to possess various biological activities, including anti-asthma, anti-inflammation, anti-diabetes, and neuriotogenic properties. In this study, we evaluated the effects of prosapogenin III isolated from the roots of L. platyphylla (Liriopis Tuber) on inflammatory responses in lipopolysaccharide (LPS) stimulated RAW264.7 mouse macrophages. We investigated LPS-induced production/expression of inflammatory mediators such as nitric oxide (NO), inducible nitric oxide synthase (iNOS), cyclooxigenase-2 (COX-2), and proinflammatory cytokines, including interleukin-1β (IL-1β) and interleukin (IL)-6 in RAW264.7 cells. We also performed Western blot analysis for determination of the phosphorylation of mitogen-activated protein kinases (MAPKs), including extracellular signal-regulated kinase (ERK) 1/2, p38, and c-Jun N-terminal kinase (JNK), and nuclear translocation of nuclear factor-κB (NF-κB) in LPS-stimulated cells. Treatment with prosapogenin III resulted in significant inhibition of NO production in LPS-stimulated Raw264.7 cells through suppression of iNOS expression. Treatment with prosapogenin III resulted in a significant decrease in expressions of COX-2, IL-1β, and IL-6 through down-regulation of their mRNA or protein in LPS-stimulated cells. In addition, treatment with prosapogenin III resulted in potently inhibited phosphorylation of three MAPKs, including ERK1/2, p38, and JNK in LPS-stimulated cells. Treatment with prosapogenin III also resulted in suppression of the nuclear translocation of NF-κB in LPS-stimulated cells. These results indicate that prosapogenin III of Liriopis Tuber has anti-inflammatory effects in activated macrophages through inhibition of production of inflammatory mediators by blockade of the MAPK/NF-κB pathway.</P>
