        열수 침지 처리가 치콘 절단면의 적변 억제에 미치는 영향

        치콘의 판매 중 상품성 저하의 원인이 되는 치콘 절단면 적변 현상을 억제하기 위해 열수 침지 실험을 실시하였다. 열수침지처리로는 대조구(20℃ 1분)과 38℃에서의 4분, 8분, 42℃에서의 2분, 4분, 그리고 45℃에서의 1분, 2분을 두었다. 색차계로 측정한 △a<SUP>*</SUP>과 △h값은 42℃ 2분 처리에서는 가장 낮게 유지되었으며, 42℃의 2분과 45℃의 1분 처리구에서는 대조구보다 유의 있는 낮은 값을 나타내었다. 10℃에 저장 6일째 관능 평가한 절단면의 적변지수는 42℃의 2분과 4분 처리 그리고 45℃의 1분 처리에서 낮았다. 적변의 원인 물질이 되는 총페놀함량을 저장 6일째 조사하였는데, 이 또한 절단면의 색변화가 적었던 42℃의 2분과 4분 처리 그리고 45℃의 1분 처리에서 낮았다. 페놀물질 합성에 관여하는 PAL 활성은 42℃ 2분 처리에서는 가장 낮은 값을 보였으며, 42℃의 2분와 45℃의 1분 처리구에서는 대조구보다 유의 있는 낮은 수치를 보였다. 그러나 가장 강한 열처리였던 45℃의 2분 처리에서는 절단면의 적변이 대조구와 유사한 수준으로 진행되었으며, 페놀함량과 PAL 활성도 대조구와 차이가 없었다. 공기에 노출된 절단조직에서 페놀물질을 산화시켜 적변을 일으키는 PPO의 활성은 42℃와 45℃의 모든 처리구에서 낮았는데, 특히 다른 조사항목에서는 모두 대조구와 유사한 수준을 보였던 45℃의 2분 처리구가 가장 낮은 수치를 보였다. 또한 각 조사항목간 상관관계에서, PPO를 제외한 모든 조사항목간에서는 대부분 고도의 상관관계를 보였으며, 특히 관능평가한 적변지수와 △h값은 r = 0.927<SUP>***</SUP>를, PAL 활성과 총 페놀물질 함량과는 r = 0.942<SUP>***</SUP>의 고도의 상관관계를 보였다. Hot water dipping test was conducted for chicon to restrict red discoloration of its basal part which impairs the product value during sales. Hot water dipping treatment was given to chicon for 4 min and for 8 min at 38℃ and for 2 min and 4 min at 42℃, and for 1 min and 2 min at 45℃, along with control (for one min at 20℃). The red discoloration indices of basal part of chicon during sensory evaluation on the sixth day of storage under the storage temperature at 10℃ was lower at 42℃ for 2 min, 42℃ for 4 min and 45℃ for 1 min treatments. The color change value of the basal part in chicon measured by colorimeter showed that the lowest △a<SUP>*</SUP> and △h were maintained in the basal part of chicon treated at 42℃ for 2 min. Whereas, color changes in 42℃ for 2 min and 45℃ for 1 min treatments were significantly low as compared with that of control. The contents of total phenolic compounds which are the substances that cause red discoloration of basal part in chicon were lowest at 42℃ for 2 min, 42℃ for 4 min and 45℃ for 1 min treatments. The activity of phenylalanine ammonia lyase (PAL) resposible for in the synthesis of phenolic substances was the least in 42℃ for 2 min treatment. Whereas, PAL activity of the chicons treated a t 42℃ for 2 min and at 4 5℃ for 1 min were significantly lower than t hat of c ontrol. However, r ed d iscoloration was progressed as similar level with that of control in the basal part of chicon at 45℃ for 2 min. The contents of total phenolic compounds and PAL activity in this treatment were not significantly different from those in control. The polyphenol oxidase (PPO) activity which causes red discoloration of cut tissues was low in all the treatments including 42℃ and 45℃ treatment at which no inhibition effects of the red discoloration of basal part of chicon were observed. When the correlation coefficient between each investigated index was tested, most of them showed high correlation except the PPO activity and particularly and the red discoloration index and sensory evaluation △h values, and PAL activity and total phenolic compounds content were r = 0.927<SUP>**</SUP>, and r = 0.942<SUP>**</SUP>, respectively.

        가압가열 및 Microwave 처리가 생면의 품질에 미치는 영향

        중력분을 이용하여 제면한 후 가압가열, microwave 및 가압가열과 microwave 병행 처리한 후, 생면 및 삶은 면의 품질에 미치는 영향에 대하여 알아보았다. 생면의 pH는 microwave 1 min 처리구에서 무처리구와 유의적인 차이를 보이지 않았으며, 수분 함량은 autoclave 50 min 처리구에서 무처리구와 유의적인 차이를 보이지 않았고, 그 외의 처리구에서는 모두 수분 함량이 감소함을 확인하였다. 면의 색도 측정 결과는 명도는 무처리구에 비해 모든 처리구에서 감소하였으며, 적색도는 microwave 1 min 처리구는 감소한 반면, 나머지 처리구는 증가하였다. 황색도는 autoclave 50 min 처리구와 autoclave 50 min/microwave 1 min 병행 처리구에서 증가한 반면, 나머지 물리적 처리구에서는 감소하였다. 삶은 면의 색도에서는 명도, 적색도, 황색도 모두에서 무처리구에 비하여 물리적 처리구에서 증가한 값을 나타내었다. 물성 측정 결과는 경도, 부착성, 응집성, 검성, 복원성에서 무처리구와 비교시 microwave 1 min 처리구는 유의적으로 감소하였으며, 그 외 처리구에서는 유의적으로 증가한 값을 나타내었다. 탄력성과 전단력은 모든 처리구에서 유의적으로 증가하였으며, 인장력은 가압가열 30 min 처리구와 무처리구가 유의적인 차이를 보이지 않았으나, 나머지 물리적 처리구에서는 유의적으로 증가하였다. 관능 평가 결과는 생면의 경우 색 항목에서 물리적 처리구들이 유의적으로 낮은 점수를 받았다. 맛, 질감, 향 항목에서는 무처리구와 물리적 처리구간 유의적 차이를 보이지 않았다. 전체적인 기호도에서는 microwave 1 min 처리구가 가장 높은 점수를 얻었으며, 가압가열(50 min)과 microwave(1 min) 병행 처리구는 무처리구와 비슷한 점수를 얻었다. 따라서 제면 후 가압가열 및 microwave 처리가 생면 및 삶은 면에 있어서 색과 질감 항목을 보완, 개선시킨다면 알러겐성이 저감화된 면을 제품화하는데 적합할 것으로 사료되어진다. This study was conducted to determine the effects of physical treatments for quality of wet noodles. Noodles were being tried with a microwave (for 1 min), an autoclave (for 30 or 50 min), and both autoclave and microwave (for 30/1 min or 50/1 min). The results showed that the pH levels were slightly decreased after treatments of autoclave and autoclave/microwave. The moisture contents were considerably decreased as compared to the control except autoclave (50 min). After all treatments, the lightness was decreased in all samples, but, redness was increased (except microwave) and the yellowness was increased after autoclave (50 min) and autoclave/microwave (50/1 min). Texture was increased as compared to the control except microwave. In the sensory evaluation, the noodles treated with microwave, autoclave (50 min), and autoclave/ microwave (50/1 min) showed a high score in overall preference. From these results, both the autoclave and microwave methods can be applied to the wet noodles without diminishing its quality to a great extent.

        Ultrasonic Degradation of Endocrine Disrupting Compounds in Seawater and Brackish Water

        In this study, a series of experiments was conducted on the relative degradation of commonly known endocrine-disrupting compounds such as bisphenol A (BPA) and 17α-ethinyl estradiol (Ee₂) in a single-component aqueous solution using 28 and 580 kHz ultrasonic reactors. The experiments were conducted with three different types of model water: deionized water (DI), synthetic brackish water (SBW), and synthetic seawater (SSW) at pH 4, 7.5, and 11 in the presence of inert glass beads and humic acids. Significantly higher sonochemical degradation (93-97% for BPA) occurred at 580 kHz than at 28 kHz (43-61% for BPA), regardless of water type. A slightly higher degradation was observed for Ee₂ compared to that of BPA. The degradation rate of BPA and Ee₂ in DI water, SBW, and SSW after 30 min of ultrasound irradiation at 580 kHz increased slightly with the increase in pH from 4 (0.073-0.091 min-1 for BPA and 0.081-0.094 min-1 for Ee₂) to 7.5 (0.087-0.114 min-1 for BPA and 0.092?0.124 min-1 for Ee₂). In contrast, significant degradation was observed at pH 11 (0.149-0.221 min-1 for BPA and 0.147-0.228 min-1 for Ee₂). For the given frequencies of 28 and 580 kHz, the degradation rate increased in the presence of glass beads (0.1 mm and 25 g) for both BPA and Ee₂: 0.018-0.107 min-1 without beads and 0.052-0.142 min-1 with beads for BPA; 0.021-0.111 min-1 without beads and 0.054-0.136 min-1 with beads for Ee₂. A slight increase in degradation of both BPA and Ee₂ was found as the concentration of dissolved organic carbon (DOC, humic acids) increased in both SBW and SSW: 0.107-0.115 min-1 in SBW and 0.087-0.101 min-1 in SSW for BPA; 0.111-0.111 min-1 in SWB and 0.092-0.105 min-1 in SSW for Ee₂. After 30 min of sonicating the humic acid solution, DOC removal varied depending on the water type: 27% (3 mg L-1) and 7% (10 mg L-1) in SBW and 7% (3 mg L-1) and 4% (10 mg L-1) in SSW.

        태연혈(太淵穴)의 유침 시간에 따른 체온 변화 -적외선체열촬영(赤外線體熱撮影)을 중심으로-

        Objectives: This study was performed to find the desirable remaining time of needle in the acupuncture treatment. Methods: The 21 volunteers were given acupuncture at LU9 vertically and needles were remained for 2 min, 10 min, 15 min, 30 min, respectively. The thermographic change induced by acupuncture was measured with Digital Infrared Thermographic Image at the following acupoints: LU11, LU10, LU9, LU8, LU5, LU1, and PC7. The statistical significance of thermographi change was evaluated using paired t-test and post hoc Wilcoxon test. Results: The most significant changes after acupuncture were produced when needles were remained for 10 min or 15 min. LU11, LU5, LU1, and PC7 were the point at which all of the remaining time produced significant change commonly. At LU11, the biggest change was produced when needle was remained for 15 min, while at LU5, LU1, and PC7, the biggest change was produced when needle was remained for 30 min, and the smallest change was produced when needle was remained for 10 min at all of acupoints of LU11, LU5, LU1, and PC7. The unbalance between left side and right was decreased the most largely in 15 min group. Conclusions: The results of this study suggest that the desirable remaining time of acupuncture needle might be 15 min.

        월남문학의 세 유형선우휘, 이호철, 최인훈의 소설을 중심으로

        이 논문은 해방 후 한국현대문학, 특히 1950~1960년대 문학에서 월남문학이라는 개념이 핵심적인 분석 개념이 될 수 있으리라는 가설 아래, 선우휘, 이호철, 최인훈 등 월남작가들의 단편소설 및 장편소설을 이 개념으로 분석할 수 있음을 보이고자 한 것이다. 선우휘의 소설 『십자가 없는 골고다』와 『망향』, 이호철 장편소설 『소시민』, 최인훈 장편소설, 『광장』, 『서유기』, 『화두』 등을 집중적으로 분석하고자 했다. 월남문학을 비평적 개념 이상의, 학문적 분석도구로 정착시키기 위하여, 이 논문은 그것이 ‘고향상실’과 일종의 ``디아스포라``에 그 본질이 있는 것으로 파악하고자 했고, 그런의미에서 현대문학의 정신적 지향점을 가장 잘 탐구할 수 있는 문학임을 제안했다. 이고향 상실로부터 월남문학의 세 유형이 도출될 수 있다. 첫째 고향 회귀의 문제를 다루는 문학, 둘째 현지 적응의 고민을 다루는 문학, 셋째 제3의 진정한 고향 찾기의 문학이 그것이다. The paper assumes that the concept of North Korean Refugees Literature can be the key for analyses of the Korean Modern Literature after liberation, in particular the literature in the 1950~1960s. So, it is believed that this concept can be adopted to analyze short and full-length novels of the North Korean refugee writers like Seon Woo-hui, Lee Ho-cheol and Choi In-hoon. The following novels were analyzed in detail - “Golgotha without the Holy Rood” and “Manghyang” by Seon Woo-hui, “Petite Bourgeois” (a full-length novel) by Lee Ho-cheol and “The Square”, “Journey to the West” and “Hwadu” by Choi In-hoon. For the North Korean Refugees Literature to be used as an academic tool for analyses that goes beyond the concept of criticism, the paper identifies that its essence lies in “loss of hometown” and a so-called ‘diaspora’. Owing to this, it is suggested as the most suitable literature to explore the psychological direction of the modern literature. 3 types of the North Korean Refugees Literature can be drawn from the loss of hometown. First is the literature that covers the return to hometown, second is the one that covers stories of adapting to local lives and third is the one that talks about finding a real hometown

      • Influence of Aeration Rate and Reactor Shape on Composting Poultry Manure and Sawdust

        We investigated various physicochemical properties, i.e., temperature, ammonia and carbon dioxide concentration, pH, electrical conductivity (EC), C/N ratio, organic matter content, moisture content, bacterial population, and seed germination index (GI), during the composting of poultry manure and sawdust for different aeration rates and reactor shapes. Three cylindrical-shaped and three rectangular-shaped laboratory-scale 60-L composting reactors were used in this study, with aeration rates of 0.3, 0.6, and 0.9 L min<sup>-1</sup>kg<sup>-1</sup> (drymatter)DM. Results showed that the low aeration rate (0.3 L min<sup>-1</sup>kg<sup>-1</sup>DM) corresponded to a higher and longer thermophilic phase than did the high aeration rate (0.9 L min<sup>-1</sup>kg<sup>-1</sup>DM). Ammonia and carbon dioxide volatilization were directly related to the temperature profile of the substrate, with significant differences between the low and high aeration rates during weeks 2 and 3 of composting but no significant difference observed during week 1. At the end of our study, the final values of pH, EC, moisture content, C/N ratio, and organic matter in all compost reactors were lower than those at the start. The growth of mesophilic and thermophilic bacteria was directly related to the thermophilic and mesophilic condition of the compost. The final GI of the cylindrical reactor with an airflow rate of 0.3 L min<sup>-1</sup>kg<sup>-1</sup>DM was 82.3%, whereas the GIs of the other compost reactors were below 80%. In this study, compost of a cylindrical reactor with a low aeration rate (0.3 L min<sup>-1</sup>kg<sup>-1</sup>DM) was more stable and mature than the other reactors.

        사과 추출물과 phloretin에 의한 항염증 활성

        본 연구에서는 풋사과의 열수추출물(GAHW)과 에탄올추출물(GAE), 그리고 애사과 열수추출물(UAHW)을 제조하고 LPS로 활성화된 RAW264.7세포주를 이용하여 이들의 항염증 활성을 연구하였다. 모든 추출물이 세포생존율에는 영향을 미치지 않고 nitric oxide (NO) 생산을 저해하였으며, iNOS의 발현도 감소시켰다. 반면, UAHW만이 COX-2의 발현을 저해하였다. 또한 모든 추출물이 모든 MAPKs의 인산화를 감소시켰다. 모든 추출물이 ROS의 생산을 농도의존적으로 감소시켰으며, GAHW와 GAE에 의해 HO-1의 발현이 증가됨을 확인하였다. 또한, 사과 flavonoid인 phloretin과 phloridzin의 항염증 활성을 연구하였다. Phloretin은 농도의존적으로 NO의 생산을 저해하였으나, phloridzin은 NO 생산에 아무 영향이 없었다. 또한, phloretin은 iNOS와 COX-2 단백질의 발현을 감소시킨 반면, phloridzin은 두 단백질 발현에 영향을 주지 못하였다. 따라서, 이러한 연구결과는 사과 추출물은 MAPK 경로와 HO-1 경로를 조절함으로써 항염증 활성을 가지며, phloretin이 사과의 항염증 활성을 담당하는 파이토케미칼의 하나가 될 수 있음을 제시한다. In the present study, we prepared hot water extracts of green apple (GAHW) and unripe apple (UAHW), and ethanol extract of green apple (GAE), and investigated their anti-inflammatory activities in LPS-activated RAW264.7 cells. All extracts dramatically suppressed nitric oxide (NO) production in a dose-dependent manner in LPS-stimulated RAW264.7 cells without affecting cell viability. In addition, all extracts decreased the expression of iNOS, whereas UAHW only reduced the expression of COX-2. All extracts suppressed the phosphorylation of MAPKs (p38, ERK, and JNK) indicating all extracts show their anti-inflammatory activities via regulating MAPK pathway. Furthermore, all extracts reduced the production of reactive oxygen species in a dose-dependent manner and they increased the expression of heme oxygenase-I (HO-I) whereas UAHW could not. We also investigated whether apple flavonoids phloretin and phloridzin can have their anti-inflammatory activities in same in vitro model. Phloretin dramatically decreased NO production in a dose dependent manner without affecting cell viability, whereas phloridzin have no effects. Phloretin also reduced the expression of iNOS as well as COX-2, whereas phloridzin could not. Overall, these results suggest that apple extracts have their anti-inflammatory activities via regulating MAPKs and HO-1 pathways, and apple flavonoid phloretin can be one of phytochemicals responsible for anti-inflammatory effect of apple.

        Soymilk를 이용한 요구르트 제조 및 저장기간 동안의 품질변화에 관한 연구

        This study was performed for analyzing the general composition and the change in the quality of soymilk-derived yogurts manufactured by adding skim milk and whey powder to soymilk heat-treated at 95℃/5 min and 120℃/10 min, respectively. 1. During the storage of soymilk yogurt, the concentrations of total solids, protein, fat, and lactose slightly decreased, whereas viscosity, content of ash and NPN, and the number of lactic acid bacteria remained unchanged. 2. The pH and titratable acidity changed rapidly in all soymilk yogurts after 3 h of incubation. 3. We found 7.8×108 lactic acid bacteria in the control sample, 4.7×108 and 5.02×108 in soymilk yogurt with skim milk, respectively, and 5.9×108 and 5.5×108, respectively in soymilk yogurt with whey powder according to degree of heat treatment with 95℃/5 min and 120℃/10 min. 4. The viscosity of yogurt samples became lower as the heat treatment increased in temperature and in the length of time. 5. The value of sensory evaluation was relatively high in soymilk yogurt with the added skim milk, which was heat-treated 95℃/5 min; however, the value was significantly lower than that of the control sample. 6. Lactose, glucose, and galactose were detected in all samples because lactose is degraded into glucose and galactose within 3 h of inoculation.

        COPA(cuffed oropharyngeal airway)를 이용한 마취 유도 시 근이완제 사용 유무에 따른 반응

        Background : COPA (cuffed oropharyngeal airway) is a convenient device for airway management in patients undergoing general anesthesia for elective surgery in supine position. It causes less pharyngeal trauma than LMA(Laryngeal mask airway). The purpose of this study was to compare the effect of COPA with and without muscle relaxant. Methods : Forty patients with ASA physical status I and II for elective surgery were randomly assigned to two groups. Anaesthesia was induced with propofol (2 mg/kg) and vecuronium (1.5 mg/kg) and was administered intravenously in Group I but not in Group II. Mask ventilation was done for 5 min with 0: 5 L/min. COPA was placed and heart rate, and systolic, mean, diastolic blood pressure and peak inspiratory pressure were measured at 1 min interval for 5 min. Anaesthesia was maintained with pro- pofol 150 ㎍/kg/min, fentanyl 1 ㎍/kg/hr, O_2 2 L/min and N_2O 2 L/min. Results : There were no significant differences between Group I and Group II in heart rate, systolic, mean and dstolic blood pressure. PIP (Peak inspiratory pressure) was increased and hiccups occurred significantly (p $lt; 0.05) in Group II. Complete airway obstruction occurred in one patient of Group I and severe coughing, body movements and gagging occurred during induction and insertion in Group II. conclusions : With the use of appropriate muscle relaxant, we can use COPA without increased inspiratory pressure or significant complication.
