As information technology advanced, customers’ service consumption process heavily shifted to the online environment, particularly social media and mobile. A new topic, customer engagement, has emerged along with the fast advancement of social media. Customer engagement refers to a type of customer behavior that is beyond purchase such as spreading word-of-mouth, providing recommendations to family and friends, interacting with fellow customers, and writing online reviews (Bijmolt et al., 2010; Verhoef, Reinartz, & Krafft, 2010). This study introduces the Flow theory, which is especially important to understand consumers’ online experiences, with the intention to shed light on how to better engage consumers in the hospitality industry (Bilgihan, Okumus, Nusair, & Bujisic, 2014; Hoffman & Novak, 2009). The purpose of this study is to examine the antecedents of flow and further investigate its influence on positive attitude and continuance intention among restaurant social media users. This study specifically examines restaurant customers who use social media through their smart phones in searching information and sharing experiences with others. A self-administered questionnaire was developed and a Structure equational modeling (SEM) was employed to test the proposed hypotheses. Study results support the hypotheses, indicating the importance of creating flow to increase customer engagement. Academically, this study contributes to the limited body of literature on flow experience and customer engagement in the hospitality context. Additionally, it provides practical insights for hospitality marketers on how to gain competitive advantages by strategically managing customer engagement on social media marketing through flow.
Effects of formulation and processing techniques on physicochemical properties of surimi gel

Surimi is a seafood-based product that is widely consumed around the world, in the form of crab sticks, fish balls, and kamaboko. It is made using white meat from lean saltwater fish, such as Alaska pollock and Pacific whiting, through repeated washing of the fish mince until a mixture primarily made of myofibrillar proteins and cryoprotectants is achieved. Surimi has always been marketed as a source of protein, as a meat or fish replacement and as imitated seafood. The goal of this review is to summarize and compare the recent attempts to produce surimi using other types of fish and fish mince waste, combined with additives and/or emerging processing technologies, and how these have contributed to changes in physicochemical properties.

<P>With the advent of atomically thin and flat layers of conducting materials such as graphene, new designs for thin film energy storage devices with good performance have become possible. Here, we report an “in-plane” fabrication approach for ultrathin supercapacitors based on electrodes comprised of pristine graphene and multilayer reduced graphene oxide. The in-plane design is straightforward to implement and exploits efficiently the surface of each graphene layer for energy storage. The open architecture and the effect of graphene edges enable even the thinnest of devices, made from as grown 1−2 graphene layers, to reach specific capacities up to 80 μFcm<SUP>−2</SUP>, while much higher (394 μFcm<SUP>−2</SUP>) specific capacities are observed multilayer reduced graphene oxide electrodes. The performances of devices with pristine as well as thicker graphene-based structures are examined using a combination of experiments and model calculations. 지방자치단체의 재난관리체계 개선을 위한 재난관련 조례 분석연구 -부산광역시 및 부산 16개 구·군을 중심으로

본 연구에서는, 재난대응의 문제가 사회문제로 대두되어 가고 있는 상황에서 재난대응과 관련된 부산광역시의 재난관리 조례와 16개 구 군 재난관리 조례를 분석하였다. 분석모형으로는 지방자치단체의 재난관리 조직시스템 평가모형(Yun, 2011)인 유기성, 전문성, 통합성, 현장대응성의 4가지 차원을 활용하였다. 그 결과, 현장대응성과 관련된 조례조항이 가장 많이 확인되었고 그 다음으로 유기성, 전문성, 통합성 순이었다. 개선방안으로는 유기성과 통합성을 보완하기 위한 민관의 적극적인 정보공유의 활성화와 업무체계의 일원화의 필요성 등이 제시되었다. Since the problems associated with disaster management have been at the core social issues in Korea, this study analyzes the relevant ordinances of the metropolitan city of Busan and its 16 autonomous subregions, called gu in Korean language, based on the evaluation model of disaster management organizational system, which consists of interrelatedness, professionalism, integrity and responsiveness. As a result, the ordinances related to responsiveness are the most frequently identified in the ordinances, followed by interrelatedness, professionalism and integrity. A range of suggestions are discussed, including: establishing cooperative network between officials and the community; and restructuring of the work system for unity.

The aim of this study was to investigate the digestibility of different Korean Hanwoo beef cuts using an in vitro digestion model, in vitro physicochemical upper gastrointestinal system (IPUGS). The four most commonly consumed cuts — tenderloin, sirloin, brisket and flank, and bottom round — were chosen for this study. Beef samples (75 g) were cooked and ingested into IPUGS, which was composed of mouth, esophagus, and stomach, thereby simulating the digestion conditions of humans. Digested samples were collected every 15 min for 4 h of simulation and their pH monitored. Samples were visualized under a scanning electron microscope (SEM) to examine changes in the smoothness of the surface after digestion. Analysis of the amino acid composition and molecular weight (MW) of peptides was performed using reverse-phase high performance liquid chromatography and sodium dodecyl sulfate polyacrylamide gel electrophoresis, respectively. Following proteolysis by the gastric pepsin, beef proteins were digested into peptides. The amount of peptides with higher MW decreased over the course of digestion. SEM results revealed that the surface of the digested samples became visibly smoother. Total indispensable and dispensable amino acids were the highest for the bottom round cut prior to digestion simulation. However, the total amount of indispensable amino acids were maximum for the tenderloin cut after digestion. These results may provide guidelines for the elderly population to choose easily digestible meat cuts and products to improve their nutritional and health status.
Hydrolysis by Alcalase Improves Hypoallergenic Properties of Goat Milk Protein

Goat milk is highly nutritious and is consumed in many countries, but the development of functional foods from goat milk has been slow compared to that for other types of milk. The aim of this study was to develop a goat milk protein hydrolysate (GMPH) with enhanced digestibility and better hypoallergenic properties in comparison with other protein sources such as ovalbumin and soy protein. Goat milk protein was digested with four commercial food-grade proteases (separately) under various conditions to achieve the best hydrolysis of αs-casein and β-lactoglobulin. It was shown that treatment with alcalase (0.4%, 60°C for 30 min) effectively degraded these two proteins, as determined by SDS-PAGE, measurement of nonprotein nitrogen content, and reverse-phase high-performance liquid chromatography. Hydrolysis with alcalase resulted in a significant decrease in β-lactoglobulin concentration (almost to nil) and a ~40% reduction in the level of αs-casein. Quantification of histamine and TNF-α released from HMC-1 cells (human mast cell line) showed that the GMPH did not induce an allergic response when compared to the control. Hence, the GMPH may be useful for development of novel foods for infants, the elderly, and convalescent patients, to replace cow milk.

Mycobacterium massiliense (M. massiliense) is a novel nontuberculous mycobacteria (NTM) and an opportunistic pathogen that lives in the water, soil, food, and air. It is a subspecies of the rapidly growing mycobacteria Mycobacterium abscessus. This atypical pathogen has been reported mainly in patients with lung disease or those undergoing cosmetic or surgical procedures. A 62-year-old woman presented with productive otorrhea for 10 months, no history of surgery, and chronic otitis media. M. massiliense was identified from a tissue specimen using real-time polymerase chain reaction for NTM (Biosewoom, Seoul, Korea), and NTM was identified by acid-fast bacilli culture. Successful treatment consisted of clarithromycin for 4 months. No other case of chronic otitis media related to M. massiliense has been reported. This is the first confirmed case of chronic otitis media caused by M. massiliense in a healthy adult in South Korea. (Korean J Med 2020;95:276-280)
