응고제로서 해수사용이 두부의 물리적 특성에 미치는 영향

응고제로서 해수의 사용이 제조된 두부의 물리적 특성에 미치는 영향을 비교하였다. 해수 사용시의 두부의 수분함량은 다른 응고제 사용시보다 높았고 이것이 제조된 두부의 부드러운 조직에 영향을 끼치는 것으로 추정되었다. 또한 해수를 사용한 두부는 부드러운 가운데서도 결착성이 좋았다. 압착도를 달리하여 두부를 제조하였을 때 압착도가 증가함에 따라 두부의 수분 함량 및 수율은 감소하였고 경도는 증가하였다. 관능검사 결과 전체적인 기호도는 ??,??,?? 의 순으로 최적압착도에서의 압착을 통한 적정 경도 유지가 중요함을 알 수 있었다. 제조된 두부의 경우 경도는 수분함량이 높을수록 또 섬유질의 함량이 낮을수록 감소하였다. In this study, sea water was compared with several conventional coagulants (calcium chloride, calcium sulfate, magnesium chloride and gluconodeltalalactone) in its effect on the physical properties of tofu coagulated with it. Chodang tofu (coagulated with sea water) was highest in the moisture content and this made the texture of tofu soft. Moreover, Chodang tofu was not only soft but also cohesive. As the molding pressure was increased, the moisture content and the yield of tofu were decreased but the hardness was increased. As far as molding pressure is concerned, sensory evaluatin indicated that the overall preference of tofu was in the order of ??, ?? and ??. The hardness of Chodang tofu was lower with its higher moisture content and with lower fiber content.

진부지역에서 생산된 당귀를 이용한 추출물 제조 및 이화학적 특성

추출조건 (온도, 추출시간, 용매의 농도)에 따라 당귀의 특유성분인 decursin의 함량을 측정하였으며, 산지별로 당귀를 수집하여 추출물을 제조한 후 이화학적 성질을 조사하였다. 물, ethanol, methanol, chloroform, benzene, ether등으로 추출한 결과, 당귀의 지표물질인 decursin은 물로는 잘 추출되지 않았고 고농도의 ethanol로 추출하는 것이 가장 효과적이었다. 당귀의 ethanol 추출물 제조시 ethanol의 농도는 95%, 추출온도는 60℃, 추출시간은 4시간이 가장 적합하였다. 진부지역에서 생산된 일당귀 및 일본산 당귀의 decursin 함량은 0.2-0.5%이었고, 중국산 당귀는 1.1%를 함유하였으며 진부산 토당귀는 6.2%를 함유하였다. 진부산 토당귀와 일당귀, 중국산, 일본산 당귀를 열수 추출물, ethanol 추출물을 제조한 결과, 열수 추출물은 ethanol 추출물보다 단백질과 회분을 많이 함유하였으며, ethanol 추출물은 지질을 많이 함유하였다. Chemical components and decursin contents of Angelica gigas Nakai (Korean), Angelica acutiloba Kitagawa (Korean and Japanese), and Angelica sinensis Diels (Chinese) were analyzed. Angelica gigas Nakai (Korean) contained the highest amount of decursin with 6.2%, while Angelica acutiloba Kitagawa (Korean and Japanese) contained only 0.2-0.5% decursin and Angelica sinensis Diels (Chinese) contained 1.1% decursin. Angelica gigas Nakai (Korean) was extracted under various conditions and evaluated for decursin content. The decursin content of extracts was the highest when extracted with 95% ethanol at 60℃ for 4 hours. Angelica gigas Nakai was extracted with water and 95% ethanol and physicochemical properties of extract were analyzed, The extraction yield. protein content, and ash content were high when using the water as an extraction solvent; while, crude lipid was high when using the 95% ethanol as the extraction solvent.

집파리의 變態에 따른 血蛋白質 電氣永動的 패턴의 變化

집파리(Musca domestica L.)의 變態에 따른 혈림프 내 蛋白質의 濃度와 그 패턴 및 lipoprotein의 패턴을 調査코자 Lowry法과 polyacrylamide gel 電氣泳動法을 사용하여 얻은 結果는 다음과 같다. 혈림프 蛋白質의 濃度는 용1일에 가장 높은 濃度를 보였고 그 이후 용4일까지 점진적으로 減少하였으며, 용5일부터 다시 增加하였다. 혈림프의 蛋白質 패턴은 全 發生段階를 통해 總 18개의 밴드가 分離되었으며 定性的인 差異보다 定量的인 差異를 나타내었다. 전반적으로 變動하는 밴드 중 高分子量의 밴드는 용 初期에 增加하는 반면 용 後期와 成蟲期에서 減少하였다. 그러나 低分子量의 밴드는 용 初期에는 나타나지 않았으나 용 後期와 成蟲期에서 增加하였다. 組織化學的 染色法에 의해 3개의 lipoprotein 밴드가 分離되었다. Disc electrophoresis on polyacrylamide gels was used to study protein pattern and pattern of lipoprotein in haemolymph during the metamorphosis of the housefly, Musca domestica L., in addition protein concentration in haemolymph was measured over the entire stages. Healthy specimens were chosen as samples of each developmental stages: Pupa 1,2,3,4,5,6 days and adult 1 day. Sex was not segregated in all stages. Haemolymph protein concentration reached the peak at the 1 day pupae, thereafter showed the gradual decrease until the 4 days pupal stage and increased from the 5 day pupa to the 6 day pupae again. A total of 18 haemolymph protein bands were separated throughout the all stages and the quantitative changes rather than the qualitative change was noticeably observed. In general, the high molecular weight bands were increased at the prepupal stage whereas decreased at the post pupal and the adult stage, but the low molecular weight bands were increased at the post pupal and the adult stage. By use of histochemical staining method, 3 lipoproteins were separated over the entire stages. The experimental results herein can be suggested that the changes in the haemolymph protein were related to the histolysis of larval organ and the histogenesis of the adult organ during the metamorphosis.

Discharged capacitor of 7.5μF low-inductance is used and Ar-flashlamp made by our laboratory is used as the pumping light source instead of Xe-flashlamp. The output energy is obtained up to 20mJ at Ar-pressure 40torr, iodine pressure 40torr, discharge voltage 17KV for transmittance partial mirror 30%.

Background: Phototrichogram analysis of normal scalp hair characteristics in Asian populations is not well characterized. Objectives: To investigate the normal hair characteristics of South Koreans using a phototrichogram. Methods: We enrolled 674 males and 683 females between the ages of 10 and 69. Hair density, thickness and the white hair percentage were measured via phototrichogram. Six scalp sites, including front, top, the peak between top and back, back, and the right and left sides were targeted. Results: The mean hair density, hair thickness, and the white hair percentage were not significantly different between genders at any scalp site. The mean hair density and thickness were significantly different according to scalp sites. Hair density declined with age, especially at the peak between top and back. Males and females showed different patterns of aging in hair density. Hair thickness changed little with age. But, mean hair thickness generally tended to increase until the 20s, reach a plateau between the 20s and 50s, and decrease after the 50s. The mean white hair percentages were 1.84 ± 4.24% in males and 1.66 ± 4.21% in females. The mean white hair percentages were significantly increased in subjects greater than 40 years of age. Conclusion: We described the normal characteristics and aging patterns of scalp hair in a Korean population.

According to the investigation made by analyzing cause of the detail about sports injury. We make this things an object of all the male representative players 254 out of 286 (88.81%) that took part in the whole event from April 15, 1988 to September 16, 1988 in Seoul Olympic Games. The results are as follows. 1. The representative players in Korea started in the athlete life at age 13.1 on the average. Gymnast early started at age 8.4 and yachtist was later at age 18 in the athlete life. 2. There are about 5.7 cases on the outbreak of the sports trauma per person of player a year. This came into existence near the ankle at the high rate of damage formed 11.90%. 3. A sort of sports injury in analysis muscular bruise broke out at the highest rate of occurrence formed 15.70%. 4. The greater part of representative players themselves the injury of trauma by massage (12.53%). Some of them undergo medical treatment to the specialist hospital once a year on the average. Most of hockey players have had experience in this kind of injury treatment three times one year to per person of players. A few of them showed 0.15 times per person a year. 5. Most of representative players have been periodically to the orthopedist formed 27.59 (732) out of all 2653 cases at the high rate of fact. Especially a sort of injury in analysis, the injury of ankle region showed the percentage 11.86 (704) out of all 5,937 cases at the highest rate. 6. The period of medical treatment of the representative players in Korea came out about 14.7 days. Besides period of the other player's treatment came out mostly from one to five days formed 44.82%(935 cases) 7. Manyof them have been roughly treated with muscular bruise in analysis of sports injury. They were taking pains with muscular bruise formed 15.65% (1003) out of all 6408 case. 8. In major cause of sports injury came into existence during the training with waste of physical stamina formed 35.89% and were beyond their power with practicing the game formed 48.09%. Also, a sort of those were brought about the cause of sports injury with desire of outcome too much during in the game formed 44.20%

The aim of this study is to improve the present methodology estimating the storage-yield-return period relationship for a reservoir design on a reservoir operation. Non-sequential mass curve method is reviewed and examined to calculate the reservoir storage-yield-return period-effective stage curve. The historical data are utilized to examine the reservoir storage capacity, those are monthly runoff data during 1917∼1940 at the Hong chun damsite.

Four flavonoids were isolated from the whole plant of Kyllinga brevifolia var leiolepsis. Their structures were identified as quercetin, (-)-epiafzelechin, vitexin and orientin on the basis of spectral data. This is the first report of the identification of quercetin, (-)-epiafzelechin and orientin from Kyllinga genus.
