      • 분말젓갈제조에 있어서 carriers의 이용에 관한 연구

        분말새우젓갈 제조에 이어 carrier로서 casein, dextrin, soluble starch등을 첨가하고 분무건조시켰을 때, 입구온도 150°-210℃, 출구온도 80±5℃, atomizer의 압축공기 4-5㎏/㎠, pH 7.5-8 등의 조건에서 가장 건조상태가 양호하였다. Carrier로서 casein, dextrin, soluble starch등을 첨가하였을 때 분말젓갈의 free amino acid의 함량이 높았으며 이로 인하여 분말젓갈의 독특한 풍미를 나타내는 데에 도움이 적었다. Carrier의 첨가로 분말젓갈의 흡습성이 저하되었으며 dextrin구가 가장 흡습성이 적었다. 분말젓갈의 용해성은 dextrin의 첨가에 의해서는 현저히 증대되었으나 casein, soluble starch, dextrin + casein등에 의해서는 큰 효과가 없었다. dextrin은 15%범위내에서 첨가량에 비례하여 분말젓갈의 휘발성염기질소 및 엑스분질소의 보존함량을 증가시켰으며 여기에 식용유를 중첨시켰을 때 이들 효과는 더욱 증대되었다. 한편 dextrin을 carrier로 사용했을 때 저장기간중 분말젓갈의 흡습으로 인한 입자크기의 변화가 방지되고 균일한 품질을 유지하는 효과를 나타내었다. This study was carried out to investigate the ultilization ways of carrier in the manufacturing of salted and fermented shrimp powder. The optimum dry-conditions to prepare the salted and fermented shrimp powder were pH 7.5-8.0 of the mixture, inlet temperature 150℃-210℃,outlet temperature 80±5℃, air compresure 4-5㎏/㎠ of Niro atomizer spray dryer. By adding carriers such as casein, dextrin, soluble starch, the free amino acid contents and specific flavor of salted and fermented shrimp powder were increased but the hygroscopicities were decreased. Dextrin improved far more effectively than casein or soluble starch the quality of dried powder, especially its hygrosoopicity. When dextrin was added to the salted and fermented shrimp solution, the retention of flavor. Ex-N, and VBN of dried powder was increased in proportion to the amounts of carrier within 15%. The addition of about 2% soybean oil to the salted and fermented shrimp solution was more increased the quality improving effects of dextrin. The dextrin-addded dried powder showed no changes in its particle shape and a good quality during the three months storage at room temperature.

        Authors investigated the blood cadmium concentration (Cd-B) in, 1,102 Korean(male:858, female:244) who were not exposed to cadmium occupationally, using graphate furnace AAS. The average Cd-B was 1.28 ±1.03 ㎍/l (mean ±S.D.), and Cd-B of male (1.33±1.07 ㎍/l) was significantly higher than that of female (1.11±0.88㎍/l). And the levels of Cd-B in smokers (1.53±1.08㎍/l)were significantly higher than in non-smokers (1.09±0.87㎍/l). There was no difference between age groups both in male and female.

      • 김치숙성중 조직감과 당분의 변화

        김치의 숙성중 조직감과 당분의 변화를 검토하기 위하여, 원료배추의 절단력시험을 실시한 결과, 3개의 큰 peak와 수개의 작은 peak들이 나타났으나 절임 및 숙성과장을 통하여 3개의 큰 peak의 골자기는 더욱 깊어지고 작은 peak들은 감소되어 가는 경향을 나타내었다. Relative force는 속성중기부터 완만한 감소현상을 보였으나 stress는 숙성 7일째 최소값을 나타낸 후 증가현상을 보여 이를 strain과 관련시켜 보면 숙성 7일째부터 연부현상과 관련이 있었다. 원료배추중의 당류로서는 ribose, fructose, glucose등이 검출되었으며, 절임 및 숙성과정 중에 arabinose, sucrose, 기타 unknown sugar등이 생성되었다. 김치숙성중 당 함량의 변화가 가장 큰 것은 fructose였으며 특히 최적가식범위인 숙성 6-7일(pH4.6-4.2)에서 함량이 4.1%에서 2.1%로 감소되었다. In cutting force tests, the raw cabbage had 3 big main peaks and several small peaks. Through the salting and fermenting procedures, the 3 big peak became more clear and the small peak gradually decreased. From the midterm (7days) of Kimchi fermentation, the relative force were slightly decreased but the stress and strain were increased. The Kimchi became to be soften by changes of stress and strain on the midterm of fermentation. Major sugars in raw cabbage were ribose, fructose, and glucose. During the salting and fermenting period of Kimchi, the contents of major sugars decreased, showing the greatest decrease of fructose from 4.1% to 2.1% at the optimum edible period(6-7day), while the other minor sugars such as arabinose, sucrose, and some unknown sugars increased.

        An improved retinal tack can be used to fix the retina in complicated retinal detachment and proliferative vitreoretinopathy. We used the retinal tack made by biodegradable polyglycolic acid, polylactic acid and copolymers. The tacks with polyglycolic acid were placed in the retina the right eyes of 10 rabbits as group 1, with polylactic-polyglycolic acid copolymers as group 2 in each left eyes. We examined the absorption rates and degree of intraocular inflammation at 1 day, 1, 2, 4, and 8 weeks and compared both eyes. The tacks were absorbed with time in both eyes, but more rapid in copolymers. And there was no inflammation in both eyes. Now, this study will be a base on the drug delivery system in intraocular pharmacological and surgical management.

        소아 뇌사자 신장을 이용한 성인 수여자로의 신장이식

        The imbalance between supply and demand of transplantable organ has created pressure within the transplant community to scrutinize all potential donor organs for optimal use. In the 1970s, heavy skepticism surrounded the use of pediatric kidneys for transplantation. Today, although skepticism has evolved into acceptance, the optimal use of the of very young donor kidneys remains unclear. But the use of cadaver kidney from newborns through adolescence will certainly increase the pool of available cadaver kidneys: therefore, at present time it would seem reasonable not to preemptively exclude any potential pediatric cadaver donor regardless of age with the understanding that graft from pediatric cadaveric donors may yield suboptimal results. The purpose of this paper reviews the basic physiologic changes in pediatric cadaver kidney transplants and provides for selective, and surgical strategies to minimize morbidity associated with these organs and maximize graft survival.

      • 모 연취급 사업장에서의 산업보건사업이 근로자 건강 증진에 미치는 효과

        For the purpose of investigation the effect of occupational health service in terms of environmental control and health provision of workers on the improvement of worker's health, authors analysed the data of environmental measurement and health check-up of one lead using industry who started his investment to environmental improvement from 1980. Six hundred million won was invested for environmental improvement form 1980 to 1986. This in vestment brought about apparent improvement of workin g conditions of all of the workplaces from mean concentration of lead in air over 0.15mg/m₃in 1981 to mean concentration of lead in air less than 0.15mg/m₃. Environmental control reduced mean blood lead level from 51.2±11.5ug/di in 1983 to 39.2±16.0ug/dl in 1986, and delta-aminolevulinic acid concentration 3.15±2.1mg/l in 1982 to 1.96±1.7mg/l in 1986, respectively. Blood ZPP levels were decreased from 76.1±58.9ug/dl in 1983 to 42.23±30.3ug/dl in 1986. If 150ug/dl of blood ZPP is considered as unacceptable limit of lead intoxication, more than 10percent of workers belinged to this category in 1983, but only 0.5 of workers showed their blood ZPP level over the 150ug/dl in 1986. It was observed that no workers whose work duration were less than one year showed their blood ZPP level over 100ug/dl, but there were high percentages of lead workers with high blood ZPP(over 150ug/dl) who were working in uncontrolled had working condition and whose work duration were less than one year.

      • 효소수식 및 Acyl화에 따른 정어리 Myofibrillar Protein의 특성변화

        정어리 myofibrillar protein을 몇몇 단백질분해효소로 수식한 후 succinic anhydride로 acyl화 시켰을 때 단백질의 특성에 미치는 영향을 효소별로 비교 검토하였다. 가수분해율은 효소의 종류에 따라 가수분해 1시간에는 43-58%, 24시간에는 47-86%의 큰 차이를 나타내었고, 특히 papin의 경우는 더욱 현저하여 가수분해율이 2배 가까이 증대되는 현상을 나타내었다. 그러나 acyl화도의 경우는 가수분해 1시간에는 71-78%, 24시간에는 78-96%로 효소간에 큰 차이를 나타내지 않았다. 또한 가수분해율의 증대경향과 acyl화도의 증대경향은 효소간에 반드시 일치하지도 않았다. 정어리 myofibrillar protein의 Sephadex G-75 gel여과 pattern은 앞의 작은 peak 1개와 뒤의 큰 peak 1개를 나타내고 있으나, pepsin수식에 의하여 큰 peak뒤에 다시 작은 peak 1개가 다소 작아진 pattern을 나타내었으며 trypsin과 ficin에 의하여서는 앞의 작은 peak가 아주 소멸되었다. 또한 acyl화에 의하여서는 앞의 작은 peak위치에 아주 큰 peak를 나타내었는데 이는 어떤 분자량이 큰 어떤 새로운 단백질의 출현에 의한 것이라기 보다는 일종의 백탁현상이 일어나 이것이 흡광도에 영향을 준 것으로 확인되었다. 이 큰 peak는 pepsin, trypsin, α-chymotrypsin등의 동물급원효소들에 의하여서는 그대로 유지되었으나, papain, ficin등의 식물급원효소들에 의하여서는 현저히 소실되었다. 단백질의 기능적 특성변화에서는 pepsin에 의한 단백질흡착량의 증대, ficin에 의한 유화형성능의 증대 등이 나타났으며 acyl화의 중첨효과는 pepsin의 단백질흡착량 증대에서 나타났을 뿐 대부분의 경우 효소수식에 의한 기능성의 감소치를 다소 회복시키는 수준에 불과하였다. 단백질의 용해도에 미치는 효소수식 및 acyl화의 영향은 그리 현저하지 못하였다. In order to study the effects of enzyme-modification and acylation, the sardine myofibrillar proteins were hydrolyzed with pepsin, trypsin, α-chymotrypsin, papain, and ficin for 24 hr. Since the initial rates of enzyme reaction were established within 1 hr, the 1 hr-hydrolyzed proteins were used as enzyme-modified ones, and also the enzyme-modified proteins were acylated with succinic anhydride. The physicochemical and functional properties of enzyme-modified proteins and of further acylated proteins are compared with those of native protein. Hydrolysis curves of sardine myofibrillar protein with enzymes showed the initial rate of reaction in 1 hr. And then the hydrolysis degrees showed small increases by treatment of 24 hr with pepsin, α-chymotrypsin, and ficin, but rather great increases of about 1.7 and 2.0 folds by treatment of 24 hr with trypsin and papain, respectively. Acylation degrees showed not so great in-creases as compared with those of hydrolysis degrees. In gel-filtration patterns, the native myofibrillar protein and 1 hr-hydroyzed proteins with pepsin, trypsin, and α-chymotrypsin showed big peaks occured with the formation of turbid products by acylation, but not so the hydrolyzed ones with papain and ficin. The effects of enzyme modification and acylation on the functionalities of myofibrillar protein varied widely depending on the kinds of enzyme. The pH-dependence of solubility of enzyme-modified myofibrillar proteins showed simillar patterns as that of native one and the effects of acylation was not so significant.

      • 생체분해성 고분자를 이용한 사시수술용 제형개발 및 효용성에 대한 연구

        A new device, muscle clamping system was developed to facilitate exact quatifying technique A strabismus surgery, and reduce the risk of complications. The device is composed of a lower fixing body with three jaws and an upper supporting body. They are used to clip an extraocular muscle and fix it to the sclera with a single bite. Superior rectus recession on 16 rabbit eyes were performed with this new device. Conjunctival injection, muscle adhesion strength, and light microscopic findings were examined at 1, 2, 4 and 8 weeks postoperatively. The Conjunctival injection were minimal, adhesion power ranged from 420 to 600 gram gravity, which is sufficient in withstand the normal pull of human extraocular muscle. In microscopic exam, some Inflammatory cells and fibrosis were found. The new device was technically easy, fast, and accurate, so it may be useful in stabismus surgery.
