한국·중국·일본산 고구마 말랭이의 품질 특성 비교

        황영,손영란,김하윤,이정현,이형운,김경미,장현욱,조용식 한국산업식품공학회 2020 산업 식품공학 Vol.24 No.4

A total of 87 kinds of dried sweet potato products from Korea, China, and Japan were collected to compare dried sweet potatoes' quality characteristics for preparing CODEX. The characteristics of Aw, moisture, and reliable soluble content, color, and hardness were analyzed using Principal Component Analysis. The moisture content varied from country to country in order of Korea (21%), China (20%), and Japan (25%). In terms of color, Chinese products were dark and red compare to Korean and Japanese. Chinese products had a wide distribution of quality characteristics in common, so the product quality was not uniform. As a result of the PCA analysis, 67.2% of the total variance was explained. The first component evaluated the degree of the drying progress and the second component evaluated the appearance of the product, how it was bright and yellow. Based on the first component, Japanese, Korean and Chinese products were placed from the left, so the drying degree varied from country to country. Japanese products were the softest, Chinese products were hard, and Korean products were moderately hard. In conclusion, the moisture and reliable soluble content, color, and hardness of the dried sweet potato are essential quality factors, and they are expected to help identify the primary quality elements of sweet potato in neighboring countries.

Articulatory characteristics and variation of Korean laterals

        황영,Sherman Charles,Steven M. Lulich 한국음성학회 2019 말소리와 음성과학 Vol.11 No.1

Lateral approximants are well known as having complex articulatory characteristics, which vary cross-linguistically, across speakers, and across utterances. However, less attention has been paid to the articulation of Korean laterals, which do not contrast with a rhotic and may thus exhibit greater-than-normal variability. The focus of this study is to investigate the general articulatory characteristics of the Korean lateral [l] as well as the articulatory variation using novel 3D ultrasound imaging methods. The results of this study revealed significant between-speaker variation and some vowel-dependent variation with regard to the articulation of the Korean lateral [l], which has not been reported previously. Even though all participants in this study showed an anterior occlusion, the place of articulation and the size of the occlusion varied greatly across speakers. The data also revealed that left-right asymmetry is present in the articulation of the Korean lateral. The individual variation of the Korean lateral [l] suggests that it has a large articulatory-acoustic space for variation, since it has no contrasting sound that causes perceptual confusion.

Current change in the loanword tonology of North Kyungsang Korean

        황영 한국음운론학회 2020 음성·음운·형태론 연구 Vol.26 No.1

Previous studies on the loanword tonology of North Kyungsang (NK) Korean have asserted that vowel length has a close relationship with tone assignment; English loanwords that contain a long vowel in the initial syllable must be assigned double high accent. Recently, however, Kim (2018) has shown that vowel length is no longer phonetically distinctive for younger NK speakers. Since vowel length is a crucial cue for double high accent, the present study conducted a production task with two distinct age groups (younger and older) to examine if the loss of long vowels in the production of younger NK speakers has any influence on their loanword tone assignment pattern. The results show that an intergenerational tone change is in progress and younger speakers produce double high accent less frequently than older speakers. The results also exhibit that polysyllabic loanwords are more affected by the tone change, and the newly assigned tone patterns follow the tone assignment patterns of loanwords with a light initial syllable.

Effects of the loss of long vowels on the moraic features of English loanwords in North Kyungsang Korean

        황영 한국음운론학회 2022 음성·음운·형태론 연구 Vol.28 No.2

In North Kyungsang (NK) English loanwords, word-initial heavy syllables (CVV or CVC) have a special salience (a stronger bimoraicity), attracting high tone over other heavy syllables. This special salience is derived from the phonological characteristics of long vowels (Hwang 2020a). However, recent studies such as Kim (2018) report that long vowels have been lost in the production of younger NK speakers. Since the special salience of word-initial heavy syllables is closely related to long vowels (Hwang 2020a), the loss of long vowels may weaken the strong bimoraicity not only from word-initial syllables that traditionally had a long vowel but also from word-initial closed syllables. Thus, this study investigates the question of whether the loss of long vowels affects the moraic character of NK English loanwords, focusing on English loanwords with a closed initial syllable. A production task was conducted with two age groups (younger and older), and the results show that the loss of long vowels weakens the special salience of word-initial heavy syllables. That is, English loanwords with a closed initial syllable are losing their unique tone patterns (double high accent) in the production of younger speakers and yielding high tone to another syllable.

김치 유산균 Starter를 이용한 저염김치의 발효 특성

        황영,이유나,이보라,김미영,Huang, Ying,Lee, Yoona,Lee, Bora,Kim, Mi Young 한국식품영양학회 2016 韓國食品營養學會誌 Vol.29 No.5

In Western countries, kimchi, the Korean traditional fermented cabbage, is considered to be a healthy. However, it is one of the main sources of the high sodium content of the Korean diet. In order to decrease the sodium content, we manufactured a low-sodium kimchi (LK, salinity 1.0%) and 4 additional low-sodium kimchi starters in which each of 4 lactic acid bacteria (Lb. sakei 1, Lb. sakei 2, Lb. palntarum and W. koreensis) were added. The LKL1 to LKL4 samples were prepared by adding 4 single LAB starters, each with an inoculum size of $10^6CFU/g$, when the cabbage was mixed with kimchi sauce. The kimchi starters were fermented at $10^{\circ}C$ until reaching 0.5% acidity, and then stored at $-1.5^{\circ}C$ until reaching 0.75% acidity. The pH and acidity of the starter kimchi changed more rapidly in the early phase of fermentation (up to 0.75% acidity) than control low-sodium kimchi. After the acidity of the kimchi starters reached 0.75% it remained constant. As the fermentation progressed, the total aerobic and lactic acid bacteria concentrations in the kimchi starter with added Lb. sakei 1 were the same as in the control low-sodium kimchi. The low-sodium kimchi fermentation of the kimchi starter with added Lb. palntarum progressed differently due to a difference in acid resistance. The kimchi starter with added Lb. sakei 2 had an overall liking score that was slightly higher than that of the control low-sodium kimchi due to a lower off-flavor.

Pitch-Pattern Diffusion of Generational Tone Change in North Kyungsang Korean English Loanwords

        황영,Stuart Davis 서울대학교 언어교육원 2019 語學硏究 Vol.55 No.1

North Kyungsang (NK) Korean is a pitch accent language that uses both high and low tones. NK Korean permits only one accented syllable in a single prosodic word; therefore, if an accented stem is combined with an accented suffix, one of the underlying accents must be deleted. According to traditional observations, NK English loanwords always maintain their stem accent, unlike NK native words. However, our recent observations reveal that this unique loanword pattern seems to be changing, especially among the younger generations. To determine the existence of this suffixal tonal change, a production task was conducted with younger and older speakers of NK Korean. The results reveal that a pitch-pattern diffusion is in progress across the board in final accented NK English loanwords when combined with an accented suffix. Such loanwords seem to be losing their unique tone patterns and nativizing their suffixal accent. Although the diffusion is occurring in both younger and older speakers, the degree of diffusion differs and is quite patterned, based on the speakers’ age as well as the number of syllables and syllable structure of the words.
