액체 이산화탄소 추출법에 의한 생강(Zingiber officinale Roscoe) 의 향기성분

The essential oil of Korean ginger(Zingiber officinale Roscoe) was isolated by liquid carbon dioxide extraction method and fractionated into one hydrocarbon fraction and two oxygenated hydrocarbon fractions by using silica gel column chromatography. The compositions of the resulting oils were investigated by GC and GC-MS spectrometry. Out of 102 identified compounds, 44 were identified by comparing GC retention time and mass spectral data with authentic samples and 58 were tentatively identified according to mass spectral data only. The major compounds of hydrocarhon fraction were zingiberene, β-sesquiphellandrene, γ-bisabolene, γ-cardinene, ar-curcumene, and those of oxygenated hydrocarbon fractions wee geranal, sesquisabinene hydrate, borneol and zingiberenol. The major compounds of ginger oil were zingiberene, citronellol+β-sesquiphellandrene, geranial, γ-bisabolene and ar-curcumene+geranyl acetate, and ginger oil contained higher amounts of sesquiterpene hydrocarbons. The yield of extract was 6.96%.
여름 느타리 버섯 (Pleurotus sajor - caju) 저장중의 향기성분 변화

Volatile aroma concentrates of Pleurotus sajor-caju which stored at 20℃ incubator and cold room were obtained by simultaneous distillation-extraction method. The volatile components were identified by combined capillary gas chromatography-mass spectrometry and comparison of retention data on GC of those authentic compounds. Storage at room temperature resulted in significant decreased in their total aroma contents, whereas little changes at cold storage foured, even though appreciable changes were observed in GC pattern between the control and stored samples. Of 3A components identified, δ-decalactone increased while rest of the volatiles decreased rapidly during storage at room temperature, but at cold storage 2-methyl butanal, 1-octen-3-ol, cis,cis-1,5-octadien-3-ol and pentadecanoic acid decreased while 3-octanone, 1-octen-3-one, 3-octanol and undecanol increased with the storage time. The weight losses and organoleptic properties changed extremely by the storage under room temperature, on the other hand, slight changes were found in cold storage.
한국산 느타리 버섯류 (Pleurotus sp.) 의 휘발성 향기성분

Volatile aroma concentrates of four oyster mushrooms cultivated in Korea were obtained by the simultaneous distillation-extraction method. The volatile components were identified by the combined capillary gas chromatography-mass spectrometry and compared with the of retention data on GC of those authentic compounds. About 54 volatile compounds were identified in each of the four edible oyster mushrooms. The main compounds in Pleurotus ostreatus ASI 201 were 1-octen-3-ol, 3-octanone, 3-octanol, in Pleurotus sajor-caju, 1-octen-3-ol, 3-octanone, 1,5-octadien-3one, 3-octanol, in Pleurotus florida-ostreatus-ostreatus, 1-octen-3-ol, n-hexanol, 3-octanone, 3-octanol, phenol, and in Pleurotus ostreatus (Ae-Neutari), 1-octen-3-ol, n-pentanal, n-hexanol, n-pentanol, 3-octanone, 3-octanol, 1,5-octadien-3-one, respectively. The mushrooms worked were rich in an alcohols and carbonyl compounds containing C_8 compounds. The peak area ratio of C_8 compounds in aroma concentrate were 56.60% in Pleurorus ostreatus ASI 201, 72.46% in Pleurotus sajor-caju, 54.84% in Pleurotus florida-ostreatus-ostreatus and 35.85% in Pleurotus ostreatus (Ae-Neutari), respectively.

Pleurotus spp.중 섬유소(纖維素) 분해효소(分解酵素) 생산력(生産力)이 가장 강한 Pleurotus sajor-caju JAFM 1017을 합성배지(合成培地) 상에서 vitamin류(類), 무기염류(無機鹽類)와 배양조건(培養條件)의 영향을 검토(檢討)한 결과(結果)는 다음과 같다. 섬유소(纖維素) 분해효소(分解酵素) 생산(生産)은 folic acid와 thiamine-HCI에 의해 촉진되었고 $KH_2PO_4$와 $MgSO_4$의 최적농도(最適濃度)는 각각 0.2%, 0.04%(w/v)이었으며 그 밖의 무기염류(無機鹽類)는 효과(效果)가 없었다. 효소생산(酵素生産)에 최적(最適)인 배양온도(培養溫度)와 배지(培地) pH는 avicelase가 $25^{\circ}C$, 5.5이었고, CMCase는 $30^{\circ}C$, 5.0이 였으며, ${\beta}-glucosidase$는 $30^{\circ}C$, 6.5이었다. The production of cellulolytic enzymes by Pleurotus sajor-caju JAFM 1017 was stimulated by folic acid and thiamine-HCl. Among the inorganic salts, optimum concentrations of $KH_2PO_4$ and $MgSO_4{\cdot}7H_2O$ were 0.2% (w/v) and 0.04% (w/v), respectively, but other inorganic salts were not effective for the production of the enzymes. The optimum culture temperature and pH for the production were $25^{\circ}C$ and 5.5 for avicelase, and $30^{\circ}C$ and 5.0 for CMCase, and $30^{\circ}C$ and 6.5 for ${\beta}-glucosidase$, respectively.
