Rearing characteristics of fattening Hanwoo steers managed in different stocking densities

Objective: This study was conducted to analyze the effects of stocking density on growth and carcass quality, and behavior of Hanwoo cattle to conform with global trends, targeting animal welfare production through the practice of environmentally friendly condition. Methods: Thirty six steers were randomly assigned to three treatment groups (C: 5 heads, T1: 4 heads, T2: 3 heads) and reared in separate pens with a constant stocking density of 50 m2 (C: 10 m2/head, T1: 12.5 m2/head, T2: 16.67 m2/head) per group from 12 to 30 month of age. Growth performance, behavior and carcass quality traits of each steer were recorded and compared between the treatment groups. Results: In general, the average daily gain during the fattening period was lower in group T2 than in T1 and the control groups. However, carcass weight and dressing percentage was lower in the control group than in T1 or T2 groups (p<0.05). Also, marbling score at 30 months of age was the lowest in the control group (p<0.05), while the three heads group (T2) had the greatest longissimus muscle area and marbling score (p<0.05). The behavior of walking time was the greatest in T2 group, while self-grooming and fighting occurred with the most frequency in the control group (p<0.05). Conclusion: Our results show that the steers in more spacious stocking density had better carcass quality and wellbeing related behaviors, indicating that a lower density has a positive effect on raising management and carcass quality. Thus it is a need to install appropriate pens fitted to welfare-oriented management practices from growing to fattening period in Hanwoo cattle.
사육방식의 차이가 거세한우의 등심내 콜티졸 수준 및 지방산조성에 미치는 영향

본 연구는 사육방식의 차이가 한우 등심내 콜티졸과 지방산함량에 미치는 영향을 구명하고자 실시하였다. 무항생제 및 관행축산으로 생산된 한우육 1등급 등심 부위를 3종류의 브랜드별로 각각 3회씩 총 18점을 구매하여 시료로 공시하였고, 분석한 결과는 다음과 같다. 한우육 등심내 콜티졸 함량은 무항생제 처리구에서 관행사육 처리구 대비 유의적 (p=0.0176)으로 낮게 나타났으며, 포화지방산 및 불포화지방산 함량에서는 유의적 (p >0.05)인 차이를 나타내지는 않았으나, 관행사육 처리구에서는 포화지방산이, 무항생제 처리구에서는 불포화지방산이 각각 높은 경향으로 분석되었다. 또한, 불포화지방산 중 n-3과 n-9 지방산을 제외한 n-6 지방산에서 유의적 (p <0.01)인 차이를 보였다. 또한, 한우 등심내 콜티졸 농도와 n-6 지방산 농도간의 상관관계를 분석한 결과 유의적 (p=0.0014)으로 부 (-)의 상관관계가 성립되었다. This study was carried out to elucidate the effect of different rearing system on cortisol level, stress hormone, and fatty acid composition in the edible muscle tissues. These steers were reared in two different systems including antibiotic-free (ARS) and conservative system (CRS). In the M-Longissimus tissue, cortisol level was significantly lower in ARS than CRS, (p=0.0176). But, the levels of total saturated and unsaturated-fatty acids does not differ in ARS as CRS (p >0.05). However, the total saturated fatty acid levels tended to be greater in CRS and the total unsaturated fatty acid levels tended to be greater in ARS. However, the level of n-6 unsaturated fatty acid was higher in ARS than CRS (p=0.004). Especially, levels of linoleic acid (LA) and ${\gamma}$-linolenic acid (GLA) were significantly higher in ARS (p <0.01). Cortisol level and the n-6 fatty acid content in muscle tissue were negatively correlated (at p=0.00140.) In conclusion, ARS may produce beef with higher quality which contains lower cortisol and greater n-6 fatty acids, such as ALA and GLA.
사육면적의 차이가 한우의 사양성적, 행동특성 및 혈액성상에 미치는 영향

The aim of this study was to investigate the effects of different rearing spaces on growth performances, behavioral traits, and blood parameters in Hanwoo (Korean Native Cattle) heifers and steers. The average daily gain and feed conversion ratio were measured to assess the growth performance. A total of 54 Hanwoo heifers and steers at 18 months old, were housed separately in groups of 2, 3 or 4 heads in a pen (32 m2) for nine months. In the case of the heifers, the growth performances were significantly (p<0.05) improved by increasing the 2 head group size with the exception of the 18 month old heifers. However, among the steers the growth performances were significantly enhanced (p<0.05) after 18 months of age, by increasing the 3 heads group size. In addition, the heifers in groups of 2 heads spent less time standing and more time lying down or walking, and also had a significantly (p<0.05) lower frequency of self-grooming, scratching, and fighting. These findings are similar to the results obtained for steers housed in 2 or 3 heads per group. The steers housed in 2, 3 heads groups spent more time feeding and consequently had a significantly (p<0.05) lower frequency of pair-wise grooming and Leaning. The heifers and steers housed in groups of 4 heads showed lowest red blood cell counts, but highest cortisol content with statistical significance at p<0.05. The heifers in groups of 2 heads had the highest hemoglobin concentrations (p<0.05). On the other hand, white blood cell count was found to be the lowest in groups of 2 steers with statistical significance at p<0.05. We conclude that a large rearing space improved growth performances, behavioral characteristics, and blood parameters in Hanwoo heifers and steers. In the future, this data could be used to improve the welfare of rearing Hanwoo cattle.
