The standards for heavy metal levels in crustaceans are 0.5 mg/kg and 1.0 mg/kg or lower for lead and cadmium, respectively. Further, the contamination levels of arsenic, mercury, methyl mercury, and tin are being continuously investigated, considering their current exposure levels. Shrimps are potentially exposed to heavy metals because they inhabit areas with abundant organic matter, such as sandy or muddy shores, places with a lot of seaweed, and estuaries. This study measured the monetary value of reducing consumer anxiety and increasing consumer confidence if the government prohibits the sale of shrimp species that exceed the threshold for specific heavy metals and of the top shrimp species for which no threshold for heavy metals is specified. We derived consumer willingness-to-pay (WTP). Combining the estimated WTP with the number of households in the country, the total value of benefits was estimated to be 363.9 billion won. The results of this study will provide an important empirical finding, showing to what extent specific policies regarding heavy metals in seafood can alleviate consumer anxiety and provide psychological reassurance.

This paper analyzes factors that affect purchasing intention for Gluten-free food by female undergraduate and graduate students. We included independent variables such as awareness of the food, involvement for healthy dietary life, attitude toward the food, experience of chronic indigestion, experience of weight control, and demographic variables. This study is the first, as far as we know, to study consumer behavior, attitude, and intention regarding gluten-free food. Our results indicate that respondents who answered ``not aware`` were larger than those who answered ``aware`` for the food. It also appeared that the half of respondents who answered ``yes`` for intake experience of the food appraised the experience positively. The reason with highest frequency respectively of intake and not intake was ``to enhance health`` and ``don``t see the necessity.`` The result of binomial logistic regression model suggests that awareness of gluten-free food, involvement for healthy dietary life, attitude toward the food, experience of chronic indigestion, experience of weight control affect purchasing intention toward gluten-free food, while household income level is not statistically significant.

The purpose of this study is to analyze increased self-sufficiency of wheat in recent years in Japan, although the country`s overall food self-sufficiency is low. Infrastructure, varieties, production, distribution, and related government policy regarding wheat industry are investigated, which will provide implications and benchmarking practices to corresponding domestic production and distribution lines. In summary, it can be concluded that the recent rise of Japan`s wheat self-sufficiency is resulted from economic assistance and technical support by the government in addition to efforts in production and processing sectors. In other words, when all the sectors including production, processing, distribution, and consumption work together, the efforts would be achieved.

This study analyses consumer preference and purchasing behavior for rice-noodle and, using the conjoint analysis, examines the main attributes consumers consider when purchasing the commodity. In order to set up the attributes and levels in the conjoint analysis, what producers want to know regarding consumer purchasing behavior was investigated through a survey toward rice companies. It was revealed that the most important attribute producers are interested in is ``price``. To check whether or not the results of the conjoint analysis vary depending on the setting of price range, two different conjoint commodity profiles with dissimilar range of price levels were presented toward survey respondents. Empirical results show that through the two different conjoint investigations, price is the most important attribute consumers concern, followed by ``country of origin`` and ``brand``. The order of the importance among the three attributes was maintained regardless of changes in the price interval. The results also revealed that across the two different conjoint surveys, domestic rice as a raw material was preferred to imported rice, while the results were mixed for the brand. It indicates that if the price variation is not large among conjoint commodity profiles, small and medium enterprises may have competitiveness in the market, while if not, large corporation is preferred by consumers. The results of this study may provide useful information regarding consumer preference and purchasing behavior in the rice-noodle market, the main attributes consumer concern when they purchase the product, and promotion of rice-noodle consumption.

The purpose of this study lies in analyzing main factors that affect consumers` visiting behaviors as to the traditional markets as of year 2011, by using a survey toward homemakers. Results from this study will provide information on homemakers` visiting behaviors toward retail stores including the traditional markets and information on the strength and weakness of the traditional markets. A survey was completed with 30∼50 aged 671 homemakers who are the main decision makers on the purchase of foods and other necessities. An analysis of the decision tree model was performed to see factors that affect the homemakers` visiting decision between the traditional markets and other types of retail stores. The most significant variable affecting the visiting decision, among demographic variables, is ``region`` followed by ``age``. Meanwhile, the most important factor regarding consumer purchasing behaviors is ``reason for preferring a type of retail stores``, followed by ``average expenditure per each visit``.
인구구조모형과 시계열모형 결합을 통한 식품 지출액 예측

This study attempts to forecast food expenditure, including expenditure for eating out, a decade later which might vary, according to changing structure of demographics. Focus was given to a comparison for the changes of food expenditure in single households versus the changes in general households. For estimation, data of Household Income and Expenditure Survey and Household Projection by Statistics Korea were used. The data were plugged into a modified model of 孟 哲男․井田憲計(2013) to investigate how the structure of food expenditure evolves in accordance with changes in total population, age structure, and family type. The 孟․井田 model was modified by incorporating an autoregressive (AR) specification to remedy a shortcoming of the model. Results show that while trends due to other factors than changes in population structure act to increase the overall food expenditure, the changes in population and household structure affect the expenditure to decrease. This suggests a slowdown in the total food consumption according to the stagnant and aging population in following decades. The increase in single households will affect the food expenditure to increase, but decreasing total number and average family member of general households and aging population will affect in the opposite direction.

This study tries to evaluate consumer willingness-to-pay(WTP) for sea mustard with enhanced heavy metal safety. The evaluation of WTP was conducted using a contingent valuation method. After setting virtual market for sea mustard with enhanced heavy metal safety, respondents were asked their WTP through 3 types of question : direct question, payment card, and dichotomous choice. The average WTP was calculated using analytical median, nonnegative mean, and truncated mean. The results show that the average WTPs for sea mustard with enhanced safety of lead, cadmium, and arsenic are 1,914, 1,659, and 1,701 Korean won, and the entire consumer utility by measuring household base is, respectively, 35.8, 31.0, and 31.8 billion Korean won. These estimates are equivalent to the consumer utility for enhanced heavy metal safety which will be a valuable information for estimating benefit from policies of heavy metal safety for other seaweeds or marine products. We also confirmed that estimated WTP differs by different question type and calculation method, and direct question method yields the largest value of WTP. This suggests that one can reduce bias for estimating WTP by using the average from different question types and calculation methods.
일반시민들의 푸드뱅크 기부의도에 영향을 미치는 요인에 관한 연구

Although the average household income has increased through economic growth, food shortage and malnutrition among domestic vulnerable groups still exist. The government conducts Food Bank project for the vulnerable under the supervision of the Ministry of Health and Welfare. Food Bank has a dual positive effect: it reduces waste of food resources and improves dietary life of vulnerable groups, which provides a ground that the project should be continued and expanded. However, it is mainly donated by food manufacturers, marketing companies, and restaurants and citizen’s donation is centered on national holidays. Therefore, general citizen’s donation to the project should be boosted. However, previous studies on Food Bank have not visited the issue. Accordingly, this study measured citizen’s empathy for necessity of Food Bank and their willingness to donate(WTD) to the project, and analyzed factors affecting the WTD. We surveyed 450 Korean citizens. The findings showed that 67.6 percent of the respondents acknowledged Food Bank, meaning that 32.4 percent of them had never heard of it. 68.9 percent of the respondents sympathized necessity of the project and their WTD was 3.36 out of a 5-point scale. Among psychological explanatory variables, altruistic motivation to donate and empathic concern increased WTD. Among other variables, the degree of pursuing healthy diet and religion status were significant. The results present current status of public perception of Food Bank and citizen’s donation and implication about which factors significantly affect the WTD. The information can be used to prepare promotional strategies for Food Bank, and it will serve as a basic foundation for future researches.
