In the management of food service in hotel, it is very important to make a good plan for scientific management in arranging kitchen members, reutilizing goods under storage, controlling sanitary facilities, which is needed for improving efficiency for quantitative food services in hotel. the main object of this study is to get right direction in management of hotel food services in future by evaluating present state constantly, which will help managers in planning effective administration, sharing effective lots of works, improving human relationships.
This study was carried out to know the food habit of aged 60 years over for males and females of rular life, the result are summarized as follows ; 1.Intakes of food For males, the average consumption of food per day are a little differences comparing to the recommended amounts but for females, it approaches to the nearly same amounts to that. 2.The key factor of the difference of amount in the takes of foods are ; The taste of food, the frequency of taking food preferences, the physiological changes and the changes of taste of food according to the ages. 3.Intakes of nutrients They take, in general, carbohydrate (grain, cereals) highly but proteins were lack, regular habit of taking food and the amounts of food for every meal affected to the intakes of calorie. 4.It is important to care about cooking to increase appetite and take food regularly for the good health of old ages.
5 Kinds of spring water saling at market prepared for testing of hardness and some other city water and cleaned water also and the rescult of the test for hardness were as follows 1. The Total hardness of all spring water was within about 50+20 ppm. 2. The order of total hardness was like the following ①water from mountain spring → ②Cleaned one of city water→ ③Spring water Ⅳ→ ④Spring waterⅡ → ⑤City water → ⑥Spring water Ⅴ→ ⑦Spring water Ⅲ→ ⑧Spring water 1 3. According to the reference (6) (p79) The content of the orgarnic minerals is not good for health of human body because it is the cause of several kinds of diseases and therefore the pare water is better for us to drink which doesn't contain the minerals but the total hardness of all the samples which I tested now was normal to drink.
