        거세한우 비육후기 보리곡실 발효사료 급여에 따른 성장과 도체특성에 미치는 효과

        본 연구는 사료용 보리의 이용성을 향상시키기 위해 등숙 전 보리를 수확과 동시에 발효 처리한 보리곡실 발효사료를 비육후기 거세한우 적정 급여수준 및 기간을 구명하기 위하여 실시하였다. 본 연구는 보리곡실 발효사료의 적정 급여량을 구명하기 위하여 22개월령 비육후기 한우 거세우 32두(603.4±42.7kg)를 4개 처리구 당 8두씩 공시하여 약 9개월간 사육하였고(시험1), 적정 급여 기간을 구명하기 위하여 22개월령 비육후기 48두(625.8±13.1kg)를 4개 처리구 당 12두씩 이용하여 30개월령까지 약 9개월 동안 사육하였다(시험2). (시험1)은 비육후기 배합사료 급여량 10kg를 급여하는 대조구(Control) 배합사료 급여량의 10%를 보리곡실 발효사료로 대체 급여하는 처리구(TRT 1), 20%를 급여하는 처리구(TRT 2), 30%를 급여하는 처리구(TRT 3)등 4개의 처리구를 두었고, 각 처리구의 배합사료와 보리곡실 발효사료 급여량은 각각 9, 2.1kg, 8, 4.2kg, 7 및 7, 6.3kg을 급여하였고 조사료로 볏짚을 1.5 kg 급여하였다. (시험2)는 (시험1)의 결과 10%대체구가 적절한 것으로 판단되어 적정급여기간을 구명하기 위해 비육후기 배합사료 9kg를 급여하는 대조구(Control), 보리곡실 발효사료를 배합사료의 10% 대체급여기간을 출하전 3개월(TRT 1), 6개월(TRT 2), 9개월(TRT32)등 4개의 처리구를 두었고, 각 처리구는 공통적으로 배합사료와 보리곡실 발효사료 각각 8, 2.1kg, 조사료로 볏짚을 1.5 kg를 급여하였다. 처리구별 일당 증체량은 TRT 1이 높았으며, TRT3은 대조구와 비슷한 수준을 보였다. 종료시 체중과 시험기간 중 일당증체량은 보리곡실 발효사료를 10% 급여한 TRT 1이 비교적 높았다. 근내지방은 TRT 2가 6.13으로 가장 높았고, TRT 3이 6.0으로 TRT 1의 5.63, Control의 5.5에 비해 높았다. 일당 증체량은 TRT 1이 0.76kg으로 가장 높았으며 종료시 체중은 보리곡실 발효사료 10%로 출하 전 3개월 간 급여한 TRT 1이 818.8kg로 비교적 높았다. 도체중은 TRT 1이 491.2kg으로 다른 처리구에 비해 다소 높은 경향이었고, 등심면적은 Control이 98.1㎠ 으로 가장 넓었다. 등지방두께는 TRT 3가 가장 얇았다. 육질등급에서 근내지방은 3개월간 급여한 TRT 1이 6.83으로 가장 높았다. 보리곡실 발효사료를 6개월 이상 급여한 TRT 2, 3의 전단력이 2.8내외로 Control과 TRT1 보다 낮아 대체로 연하게 분석 되었다. 이와 관련하여 관능검사의 연도도 좋은 경향이었다. TRT 1에서 Myristicacid (C14:0)가 유의(P<.0895)하게 높았으며, Linolenicacid(C18:3n3)가 TRT 3구가 역시 유의(P<.0029)하게 높았다. The purpose of this study was to investigate the proper feeding level and duration of fermented barley grain feed before harvesting to improve the availability of barley for feed. Trial 1 was to investigate the proper feeding amount of fermented barley grain fermented feed, and we prepared 32 heads (603.4 ± 42.7kg) of 22-month-old Hanwoo steer (603.4 ± 42.7kg) for 8 heads in 4 treatment groups. 48 heads (625.8 ± 13.1kg) for Trial 2 were used for 12heads per 4 treatments, and were reared for about 9 months until 30 months of age. Trial 1 is treated a Control group that feed 10㎏ of concentrate, replaces 10% fermented barley grain feed(FBGF) of the control by (TRT 1) and 20% (TRT 2) and 30%(TRT 3). Concentrate and FBGF fed 9, 2.1 kg, 8, 4.2 kg, 7 and 7, 6.3 kg on each treatments respectively and 1.5 kg of rice straw for forage. In Trial 2, 10% of alternative diets were judged to be appropriate, and the control of 9kg of diets and barley grain fermented feeds were used to determine the appropriate feeding period. The treatments were 3 months before shipment (TRT 1), 6 months (TRT 2) and 9 months (TRT32). Each treatment group had 8 and 2.1 kg of concentrate and barley grain fermentation, respectively. As a feed, rice straw was fed to 1.5 kg. The daily gains per treatment were higher in TRT 1 and TRT 3 was similar to the Control. Body weight and daily gain during the test period were higher in TRT 1 fed 10% barley grain fermented feed. TRT 2 was the highest at 6.13, and TRT 3 was 6.0, which was higher than 5.63 of TRT 1 and 5.5 of Control.

        반추기축영양 : 섬유질 배합사료 원료로서 맥주박, 비지박 및 볏짚이 한우 거세우의 사양성적, 혈액성상 및 도체특성에 미치는 영향

        본 연구는 맥주박, 비지박 및 볏짚을 각각 이용하여 배합한 TMR을 한우 거세우에게 급여하였을 때 사양성적, 혈액성상 및 도체특성을 구명하고자 수행되었다. 시험구는 6개월령 한우 거세우 24두(평균체중 168kg)를 배합사료 볏짚 분리급여구(T1), 맥주박 첨가 TMR 급여구(T2), 비지박 첨가 TMR 급여구(T3) 및 볏짚첨가 TMR 급여구(T4)에 각각 6두씩 완전임의 배치하여 총 22개월간 사양시험을 실시하여 28개월령에 도축하였다. 시험결과에서 체중은 육성기에서 비육전기까지 처리구들간 유의적인 차이는 없었다. 하지만, 종료시 체중에서 T4 처리구가 T2 처리구에 비해 유의적으로 높았다. 일당증체량은 육성기 및 비육중기에서 TMR 급여구가 T1에 비해 유의적으로 높았지만(p<0.05), 전체평균에서는 차이가 없었다. 건물섭취량은 TMR 급여구(T2, T3, T4)에서 높은 경향을 나타내었다. 사료요구율은 T2 처리구에 비해 T4 처리구가 유의적으로 낮았다(p<0.05). 육량특성에서 도체중은 T1, T2, T3 및 T4 처리구에서 각각 389.0, 368.4 387.5 및 384.3kg이었다. 등지방두께, 등심단면적 및 육량지수는 처리구들간 유의적 차이는 없었다. 육질특성에서 육색, 지방색, 조직감 및 성숙도에서는 처리구간 유의적인 차이가 있었으나, 근내지방도와 육질 1+ 등급 이상출현율에서는 T2와 T3 처리구가 다른 처리구에 비해 높았다. 따라서 본 연구의 결과 맥주박과 비지박을 이용한 TMR 사료는 한우 거세우의 발육 및 도체특성에 있어 적절한 것으로 나타났다. This study was conducted to investigate the dietary effect of total mixed rations(TMR) containing brewers grain, soybean curd and rice straw, respectively, on growth performance and carcass characteristics of Hanwoo steers. Twenty four Hanwoo steers (average body weight 168 kg) in 6 months age were randomly allocated to 4 experimental groups, which contained 6 animals per group during 22-months feeding trial. The treatment was composed of the group fed concentrate and rice straw separately(T1), the group fed TMR containing brewers grain(T2), the group fed TMR containing soybean curd(T3) and the group fed TMR containing rice straw(T4). Body weight(BW) was not different among treatment groups during the growing and middle fattening period. However, it was significantly greater in T4 group than in T2 group on the final BW(p<0.05). Average daily gain was significantly greater in TMR groups compared to T1 group on the growing and late fattening(p<0.05). However, it was not different in total average. Dry matter intake tended to be increased in TMR groups. The feed conversion ratio was significantly lower in T4 group compare to T2 group(p<0.05). According to the yield traits, carcass weight of T1, T2, T3 and T4 were 389.0, 368.4, 387.5 and 384.3 kg, respectively. The back fat thickness, rib-eye area, and yield index were not different among the groups. Meat color, fat color, texture and maturity were not significantly different among groups. However, marbling score and appearance rate of meat quality grade of over 1+ were greater in T2 and T3 groups compare to other groups. Therefore, these results indicated that TMR with brewers grain and soybean curd may be ameliorated the growth performance and carcass characteristics of Hanwoo steers.

        평창지역 거세출하우 자료를 이용한 유전모수 추정

        The objective of this study was to establish genetic evaluation systems with carcass data collected by 68 individual farms from 2007 to 2011 in Pyeongchang area of Kangwon province. All the possible of environment effects were corrected by analysis of variance (ANOVA) to estimate more accurate genetic parameters. Heritabilities and genetic correlations were estimated from carcass data collected from Hanwoo steers(n=10,441) born in Pyeongchang region from 2005 to 2008. Traits evaluated included carcass weight (CWT), eye muscle area (EMA), back fat thickness (BF) and marbling score (MS). As for the mean value and standard deviation for carcass traits, CWT, EMA, BF and MS were 424.5, 92, 13.7 and 5.7. Parameters were estimated using a multiple trait animal model and derivative-free restricted maximum likelihood procedures. Estimated heritabilities for CWT, EMA, BF and MS were 0.30, 0.21, 0.42 and 0.42, respectively. Genetic correlation of CWT with EMA, BF and MS were estimated to 0.24, 0.36 and 0.07, respectively. Genetic correlation of EMA with BF and MS was -0.27 and 0.61, respectively.

        반추기축영양 : 한우 암소 비육시 배합사료 급여형태가 발육, 혈액성상 및 도체특성에 미치는 영향

        본 연구는 한우 암소 비육시 배합사료 급여형태가 발육, 혈액성상 및 도체특성에 미치는 영향을 구명하고자 수행하였다. 처리구는 배합사료 제한급여 8개월(T1), 제한급여 6개월 후 자유채식 2개월(T2) 및 제한 4개월 후 자유 4개월급여(T3)로 3처리 9반복으로 완전임의배치 하였다. 배합사료 급여형태별 발육은 처리구간 유의적인 차이가 없었다. 그러나, 일당증체량은 T2 처리구(0.75kg/d)가 다른 처리구(T1: 0.62kg/d, T3: 0.72kg/d)에 비해 높은 경향을 나타내었다. 건물섭취량은 처리구간 유의적인 차이는 없었지만 T1 처리구의 볏짚 섭취량이 다른 처리구 보다 유의적으로 높았다(p<0.05). 사료요구량은 T1: 17.8, T2: 12.8 및 T3: 14.1 kg으로 처리구간 유의적인 차이가 인정되었다(p<0.05). 혈청 내 albumin, triglyceride, glucose 및 GPT의 농도는 비육개시 6개월에서 8개월에 T3 처리구가 다른 처리구에 비해 유의적으로 높게 나타났다(p<0.05). 육량특성에서 도체중, 등지방두께 및 등심단면적은 처리구간 유사한 결과를 보였는데 육량지수는 T2 처리구가 T1 처리구에 비해 유의적으로 높게 나타났다(p<0.05). 육량 A등급 출현율은 T2 처리구가 78%로 모든 처리구에서 가장 높았다. 육질특성 중 근내지방도, 육색, 지방색, 조직감 및 성숙도는 처리구간에 유의적인 차이가 나타나지 않았다. 하지만, 근내지방도와 육질 1등급 이상출현율은 T3 처리구(4.0, 56%)가 다른 처리구(T1: 3.4, 56%; T2: 3.6, 33%)에 비해 높은 경향을 나타내었다. 따라서 본 연구는 한우 암소 비육시 배합사료의 급여는 비육초기 4개월은 제한급여(체중의 1.6%) 하고 비육후기 4개월에 자유채식하는 것이 적절한 것으로 판단되었다. This study was conducted to investigate the effects of feeding patterns of concentrates on growth performance, blood parameters and carcass characteristics in Hanwoo cows. Randomly-allocated groups, restricted concentrate feeding(T1), restricted concentrate feeding for 6 months and ad libitum 2 months(T2), restricted concentrate feeding for 4 months and ad libitum 4 months(T3), were contained with 9 animals. According to feeding patterns of concentrate, growth performance was not significantly different among the treatment groups. However, ADG tended to be higher in T2 group(0.75kg/d) compared to the other groups (T1: 0.62 kg/d, T3: 0.72kg/d). DMI was not significantly different among the treatment groups, interestingly, rice straw intake was significantly higher in T1 group compared with others(p<0.05). There were significant difference among feed conversion ratio, which are 17.8, 12.8, and 14.1 kg for T1, T2, and T3(p<0.05), respectively. The serum level of albumin, triglyceride, glucose and GPT were greater in T3 group compared to other groups at fattening 6 to 8 months(p<0.05). The results of yield traits, carcass weight, back fat thickness and rib eye area were not differ among treatment groups, but yield index was significantly greater in T2 group compared to T1 group(p<0.05). The ``A`` appearance rate(%) of meat yield grade was highest in T2 group for 78%. The marbling score, meat color, fat color, texture and maturity in quality traits were not differ among the treatment groups. However, marbling score and appearance rate(%) of over 1st meat quality grade were tend to be increased at T3 rather (4.0, 56%) group compared with other groups(T1: 3.4, 56%; T2: 3.6, 33%). Thus, the present study suggested that restricted concentrate feeding(1.6% of BW) for 4 months during early fattening periods and ad libitum feeding for 4 months during late fattening periods are recommendable.

        Effects of Reed (Phragmites communis) on Growth Performance, Carcass Characteristics, and Meat Quality in Hanwoo Steers

        본 연구는 한우 거세우의 비육시 급여 조사료의 종류가 발육 및 도체특성에 미치는 영향을 구명하고자 수행하였다. 한우 거세우 21두를 3처리(건초, 갈대 및 갈대+볏짚), 처리당 7두씩 완전 임의 배치하였다. 시험결과 개시체 중 및 종료체중은 처리구별(대조, T1 및 T2)로 각각 125.5, 128.3 및 128.3 kg과 697.4, 614.6 및 706.7 kg으로 나타났다. 일당증체량은 대조구(0.70 kg/d)와 T2 처리구(0.71 kg/d)가 T1 처리구(0.60 kg/d)보다 향상된 경향을 나타났지만 유의적인 차이는 없었다. 건물섭취량은 유의적인 차이는 없었지만 T1 처리구가 다른 처리구에 비해 비교적 낮았다. 육량특성에서 도체중은 대조구와 T2처리구간에는 차이가 없었지만, T2처리구는T1 처리구에 비해 높았다(p<0.05). 등지방두께와 등심단면적은 대조구와 T2처리구가 T1처리구 보다 높았고, 육량등급(A:B:C, %)은 T1 처리구(43:57:0)가 다른 처리구(대조구 0:71:29, T2 29:42:29)에 비해 높았다. 육질특성에서는 지방색과 조직감은 처리구 간 유의적인 차이가 없었다. 그러나 육색과 성숙도는 T2 처리구에 비해 T1 처리구가 유의적으로 높았다 (p<0.05). 근내지방도 및 육질1등급이상 출현율은 T1처리구에 비해 대조구와 T2처리구가 높았다. 본 연구의 결과를 종합해 볼 때 거세한우 비육시 조사료로서 갈대와 볏짚을 혼합급여할 때 발육, 사료 이용성 및 도체 성적이 향상되어 갈대가 한우의 조사료원으로서 활용가치가 있는 것으로 판단되었다. This study investigated the effects of diet of different forages on growth performance and carcass characteristics of Hanwoo steers. Twenty-one Hanwoo steers were randomly allocated to three groups (fed hay, reed, and reed with rice straw) of seven steers each. Initial and final body weights of control, T1, and T2 groups were 125.5, 128.3, 128.3 kg and 697.4, 614.6, 706.7 kg, respectively. Average daily gain tended to increase in controls (0.70 kg/d) and the T2 group (0.71 kg/d) but not as much in the T1 group (0.60 kg/d); however, there was no significant difference. DMI was not significantly different among the treatment groups, but T1 was relatively lower than the other groups. For the yield traits, carcass weight was not significantly different between controls and the T2 group but was greater in the T2 group compared to the T1 group (p<0.05). Back fat thickness and rib eye area were higher in controls and T2 compared to T1; yield grade (A:B:C, %) was greater in T1 (43:57:0) compared to the other groups (control 0:71:29; T2 29:42:29). For the quality traits, fat color and texture were not significantly different among groups. However, meat color and maturity were significantly greater in T1 compared to T2 (p<0.05). Marbling score and appearance rate of over 1st meat quality grade were greater in the control and T2 groups compared to the T1 group. Based on the results, growth performance, feed utilization, and carcass traits appeared to improve when roughage containing rice straw plus reed was offered. Therefore, reed is worth considering as a roughage source for fattening Hanwoo steers.

        대규모 한우 번식 목장에서의 10년간 송아지 폐사 원인

        Calf losses have an economic impact on larger Korean native cattle (KNC) breeding farms due to replacement, productivity, and marketing. However, little research on KNC calf mortality or causes of calf death on large-scale breeding farms has been conducted. Based on medical records and autopsy findings from the Hanwoo experimental station of the National Institute of Animal Science, calf death records from 2002 to 2011 were used to identify the causes of mortality. Mortality rate of KNC calves was 5.7%. Large differences (1.8~12.6%) in yearspecific mortalities were observed. Calf deaths were due to digestive diseases (68.7%), respiratory diseases (20.9%), accidents (6.0%), and other known diseases (2.2%). The main cause of calf death was enteritis followed by pneumonia, rumen indigestion, and intestinal obstruction. The greatest number of calf deaths occurred during the fall followed by summer. These results indicated that enteritis and pneumonia were the main reasons for calf death. However, autopsy findings demonstrated that other factors also caused calf death. This study suggested that seasonal breeding and routine vaccinations are the most important factors for preventing calf death, and improving calf health in high land areas with low temperature.

        고에너지 사양이 비육후기 거세한우의 성장, 도체, 및 혈액성상에 미치는 영향

        The aim of this study was to examine the effects of high energy diet on growth 26mon, 28mon, and 30mon in Hanwoo at different ages. High energy diet required not only an amount of concentrate on days of fattening periods but also induced cost for the management. We hypothesized that high energy diet was able to reduce a fattening period to reach a certain quality grade. A 2 x 3 factorial arrangement (High energy, control vs 26, 28, 30month endpoints) in a completely random design was used to feed 48 Hanwoo steers. Four steers were fed in same pen and 12 pens were used for treatment. Blood was drawn from each steers on every other months during early, middle, and final fattening periods. Over all ADG and feed efficiency were not different between high energy and control diet (P > 0.05). Dry matter intake was induced 30 mo-old early and final fattening periods at high energy diet. Serum glucose concentration were increased (P < 0.05) at 30 and 26month old steers. Marbling scores were greater at 30 month old than 26 and 28 month old Hanwoo steers. Carcass weight of Hanwoo steers were greater at 30 mon-old groups than other groups. These result indicated that high energy diet (+3% TDN) and slaughter endpoint collectively contribute to the observed quality grade compositional differences among three final fattening periods of Hanwoo steers.

        조사료원과 출하시기가 거세한우의 발육과 도체특성에 미치는 영향

        본 시험을 수행하기 위해서 6개월령 거세한우 64두를 공시하여 주구는 조사료원으로 목건초와 볏짚 처리구를 배치하였으며, 세구는 출하시기로 24개월, 26개월, 28개월 및 30개월 배치하였다. 본 시험은 조사료원 및 출하시기별 발육 및 육질에 미치는 영향을 구명하기 위하여 수행하였다. 발육 및 사료이용성은 목건초급여구가 볏짚 급여구에 비하여 동일 출하월령에서 10 12% 정도 더 발육이 향상되었으며 (p<0.05), 배합사료 요구량에서도 목건초 급여구가 볏짚 급여구에 비하여 kg 증체당이 향상되는 결과를 얻었다. 또한 도체등급에서도 등 지방두께 및 배최장근단면적은 출하월령이 증가할수록 증가하였으며, 근내지방도 역시 출하월령이 증가할수록 증가하는 경향을 보였다. 따라서 한우 고급육을 생산하기 위해서는 볏짚보다는 목건초 급여로 출하시기를 28개월령 이상 사육하는 것이 바람직한 것으로 사료된다. This study examined the influence of forage source (grass hay and rice straw) and shipping time (24, 26, 28 and 30 months) on feed conversion ratio, growth performance and carcass characteristics of Hanwoo steers. Sixty four Hanwoo steers at 6 months age were fed either grass hay (n=32) or rice straw (n=32) for 24, 26, 28 and 30 months of age. Steers fed on mixed grass hay gained significantly higher body weight at 24, 26, 28 and 30 months compared with those fed on rice straw. Feed efficiency was slightly better in steers fed mixed grass hay compared to those fed rice straw. Back fat thickness and marbling score were increased with the age of steers (p<0.05). Carcass quality traits (meat color, fat color, texture and maturity) were not affected by forage source and shipping time. Shear force, cooking loss and water holding capacity of beef were reduced with advancing age of steers (p<0.05). Moisture content was lower and fat content was higher in beef produced from steers fed mixed grass hay than those fed rice straw (p<0.05). Beef juiciness was reduced with the advancing shipping time of steers. In conclusion, it would be beneficial to feed hay compared with rice straw during whole period of Hanwoo steer to produce high quality beef.
