This study was performed to investigate the changes of nitrite content in meat products under various cooking conditions: baking, roasting, boiling, and microwave. For this study, first twelve kinds of meat products were measured the nitrite content. The nitrite content of Kimbap ham and Mini Vienna sausage were higher than those of others. Therefore, we were carried out to evaluate the nitrite content of Kimbap ham and Mini Vienna sausage in various cooking conditions. The nitrite content of Kimbap ham were 52.53 ± 1.81 ppm, 64.43 ± 2.33 ppm, 59.49 ± 4.69 ppm, 44.81 ± 8.46 ppm, and 29.23 ± 0.73 ppm in according to above cooking conditions. In case of Mini Vienna sausage, the nitrite content was 26.05 ± 0.67 ppm, 21.05 ± 4.64 ppm, 18.38 ± 2.61 ppm, 18.04 ± 3.64 ppm, and 16.87 ± 5.29 ppm respectively. This results indicate that boiling is best cooking condition to reduce nitrite content of meat products.

The main objective of this study is to investigate numerically thermal comfort and energy transport inside a passenger car considering spectral solar radiation. We used the discrete ordinates (DO) model considering spectral radiation effects to estimate the spatial temperature distribution for determining solar loads. The Fanger model is used for evaluation of thermal comfort in the passenger car. From numerical results, when considering spectral radiation effect, it is shown that higher cabin temperature is estimated and longer penetration of solar irradiation inside the cabin is predicted. These results show that the spectral radiation effect should be considered for thermal comfort analysis.
