Feasibility of using kimchi by-products as a source of functional ingredients

Baechu and radish are the major by-products generated from kimchi factories. Because vegetable and fruit by-products have abundant functional ingredients, the availability of them as a source of bioactive compounds is gaining attention. The objective of this study was to determine the feasibility of using kimchi by-products as sources of functional ingredients. For this purpose, 13 byproduct samples were collected from different kimchi factories and analyzed for their sugar contents, total dietary fiber (TDF), antioxidant capacity, water holding capacity (WHC), viscosity, and specific gravity. The dietary fiber contents in kimchi by-product cabbage powder and radish powder were 27.37–49.54 and 30.19–62.81 %, respectively. TDF, WHC, and antioxidant capacities of kimchi by-products were equally as high as those of other byproducts that are reused in industry. These results suggested that kimchi by-products have the potential as a new agro-industrial by-product that could be recycled as valuable sources of dietary fibers.

The relevant main constituents of rosemary are compound of a vast number of polyphenolics, including carnosic acid, carnosol, rosmarinic acid, and ursolic acid. Recently, phenolic compounds of plant origin have attracted considerable attention due to their beneficial functional and nutritional effects including antioxidant and antibacterial activity. This study was carried out to investigated effect of carnosic acid on pH, thiobarbituric acid reactive substance (TBARS), volatile basic nitrogen (VBN), 2,2-diphenyl-1-picryhydrazyl (DPPH) radical scavenging activity, and total bacteria counts in white sausage during the storage at room temperature. Addition of carnosic acid was decreased of pH, TBARS, VBN, and enhanced antioxidant and antibacterial activity in white sausage. These activities increased with increasing concentrations of carnosic acid. Furthermore, the potent antibacterial activities of carnosic acid against pathogenic bacteria (Escherichia coli KCCM 11234 and Salmonella enteritidis KCCM 12021) were measured. Carnosic acid showed noticeable inhibitory effects on E. coli and S. enteritidis. In conclusion, carnosic acid might be used as a natural preservative in white sausage. 로즈마리의 주요성분으로는 carnosic acid, carnosol, rosmarinic acid, ursolic acid 등의 폴리페놀(polyphenolic)로 구성되어 있다. 식물기원의 페놀혼합물은 항산화 작용과 항균작용을 포함한 유용한 기능과 영양적인 효과에 주목을 끌고 있다. 본 연구는 로즈마리 추출물의 하나인 카르노스산을 화이트소시지 원료에 첨가한 후 실온 저장기간 동안 pH, TBARS, VBN, 전자공여능 및 총균수의 변화를 조사하였다. 카르노스산의 첨가는 무첨가구인 대조구에 비해 낮은 pH, TBARS값, 그리고 VBN값을 보여 주었으며, 높은 항산화 작용과 항균작용을 나타내었다. 이들의 활성은 카르노스산의 농도가 높을수록 증가하였다. 또한 카르노스산의 병원성균에 대한 항균활성을 측정한 결과, 두 병원성균(E. coli KCCM 11234와 S. enteritidis KCCM 12021)에 대하여 강한 항균활성을 보여주었다. 따라서 화이트소시지에 있어서 카르노스산은 천연보존제로서 충분히 이용 가능한 결과를 나타내었다.

The aim of this study is to analyze and prospect the path of system change in socialist states and North Korea. For this purpose, I tried to make a general model of system change in socialist states. So called ‘system change path model’<picture 1> which I suggested was largely rooted from 2 theoretic tools; One is ‘initial condition’ approach in comparative model of system transformation and the other is ‘transaction costs’ approach in new institutionalism model. ‘System change path model’<picture 1> which I suggested characterized to make possible analysing prospect and explanation of system change in socialist states. It considers ‘restraint conditions’ in system change important, because transaction costs as restraint conditions in system change is basic variables in system change analysis. By above model, to analyze and prospect the path of system change in North Korea, I chose 3 aspects as variables. That was bureacratic transaction costs in economic aspect, political transaction costs of military in political aspect and ideological transaction costs. As result, ‘system change path model’ <picture 1> which I suggested can clearly explain and prospect the path of system change in socialist states and North Korea. 사회주의 국가들의 체제이행 연구는 초기 각 개별국가가 갖고 있는 이행의 초기조건(initial condition)과 정책 변수, 그리고 성과 변수 등을 중심으로 체제동태 모형(system dynamics model)을 구축하는 것에 집중되어 있었으나, 최근 들어서는 그 동태 모델 내 각 변수들 간의 상호 연관성을 연구하는 쪽으로 그 경향이 심화 발전되고 있다고 볼 수 있다. 이러한 연구 방법 중의 하나가 신제도주의 경제학의 시각을 체제동태모델 내로 포괄하려는 시도이다. 본 연구는 이러한 문제 제기 아래 사회주체제의 변화경로를 분석하기위해 기존 신고전파 주류경제학의 체제전환이론 틀에 신제도주의 거래비용이론 시각을 도입하여 새로운 체제변환 모형을 제시해 보고자 한다. 이것은 기존의 분석틀이 지닌 체제 전환의 특정한 측면 내지 미시적 분석의 한계를 극복하고, 동태적이고 입체적 분석을 가능케 할 것이기 때문이다. 아울러 이러한 모델에 입각하여 현재 북한체제를 이행가능성이란 맥락에서 분석해보고자 한다.
