This study described the recent investigators into effects of protein intake and amino acids supplements on metabolic and performance of athletes and into their protein requirement. Protein metabolism changed during exercise. Protein needs of athletes is higher than of sedentary persons. Most athletes and trainers thought a higher intake of protein and amino acids being helpful for exercise performance. A diet containing 12 to 15% of its energy from protein is supposed to be adequate for both types of athletes assuming total energy intake to be sufficient to cover the high expenditure caused by daily training. Further study needs to determine the protein requirement according to exercise type.
구비설화에 나타난 외래자(外來者)에 대한 환대와 적대의 타자윤리

본고에서는 구비설화를 통해 외래자를 향한 환대와 적대라는 상반되는 대응이 공동체 또는 개인에게 어떤 영향을 미쳤는지를 살펴봄으로써 우리 사회가 오래도록 견지해온 타자윤리를 성찰해보았다. 설화에서 외래자를 환대한 인물이나 공동체는 위기의 상황에서 목숨을 구하고, 부를 획득하고, 배우자를 얻는 등 삶에 긍정적인 변화가 일어나는 서사가 많았다. 이를 통해 서로 다른 가치관과 이해관계를 가진 사람들이 서로를 인정하고 이질성을 수용했을 때 개인과 공동체에 긍정적인 효과를 가져오며 다양한 문화가 서로 상호작용하는 과정에서 새로운 문화적 요소를 창조하고 발전시킬 수 있다는 가능성을 발견할 수 있었다. 반면에 외래자의 요청을 거절하고, 구제하지 않고, 폭력을 행사하고, 수모를 준 개인이나 공동체는 몰락하거나 폐가, 또는 폐촌되는 서사가 많음을 확인할 수 있었다. 이는 외래자로 현시되는 새로운 흐름과의 소통을 거부할 때 문화적 다양성 또는 창조성이 발현될 기회가 상실됨으로써 그 집단은 정체되거나 파멸의 위기를 피할 수 없음에 대한 설화 향유자의 인식이 반영된 것이라고 보았다. 설화 속 외래자에 대한 타자윤리를 통해 그동안 우리 사회가 장애인, 이주민, 경제적 취약계층 등 소수자와 사회적 약자에 대해 폭력과 혐오를 묵인해 왔음을 알 수 있었다. 또한 환대의 법이 일종의 서열과 흥정을 만들어낼 때 누군가에게는 오히려 억압과 폭력의 기재가 될 수 있음도 확인할 수 있었다현대를 살아가는 우리는 구비설화에 등장하는 탁발승이나 굶주린 노인, 곤경에 처한 나그네와 같은 모습은 아니지만 삶 속에서 늘 낯선 이들을 만나고 있다. 그들은 일자리를 찾아 고향을 떠나온 직장인 또는 이주노동자일 수 있고, 결혼을 계기로 모국을 떠나온 이주민 여성일 수 있으며, 수학(修學)을 위해 유학을 온 학생일 수도 있고, 잠시 머무르는 여행자일 수도 있다. 그들은 누구나 환대받을 권리가 있고 우리에게는 그들에게 서열을 적용하지 않고 환대할 타자윤리가 필요하다. This study examined the impact of contrasting responses to foreigners, between hospitality and hostility, on communities and individuals through oral tales, thereby reflecting on the ethics of the other, long-held in our society. We found that individuals who welcomed foreigners experienced positive changes in their lives, such as saving lives in times of crisis, gaining wealth, and finding spouses. In other words, when people with different values and interests acknowledge each other and embrace their differences, positive effects can be felt for individuals and communities. Furthermore, we discovered the potential for diverse cultures to create and develop new cultural elements through the interaction between them. On the other hand, individuals and communities that rejected foreigners’ requests for help, failed to provide relief, resorted to violence, and humiliated them ultimately faced decline, fail, or even ruin. In other words, when groups refuse to interact with new trends like foreigners, they lose opportunities for cultural diversity and creativity, leading to stagnation or even the risk of destruction. This article pointed out that when the law of hospitality creates hierarchies and bargaining, it can actually become a tool of oppression and violence for some. Furthermore, it reflected on the history of violence and hatred toward minorities and the socially vulnerable, such as the disabled, immigrants, and the economically vulnerable, in our society. Living in the modern world, we may not be like the mendicant monks, starving elderly people, or beggars depicted in folktales, but we constantly encounter strangers in our lives. They may be office workers or migrant workers who have left their hometowns in search of work, immigrant women who have left their home countries for marriage, students who have come to study abroad, or travelers who are just staying for a short time. They all have the right to be welcomed, and we need an ethics of the other not ranking but welcoming them.
비타민 C와 E의 보충이 흰쥐의 혈당 및 혈액 지방 수준에 미치는 영향

This study investigated effects of dietary vitamin C and E supplementation on blood glucose and lipids in rats. Sprague-dawley rats, weighing 147g in average, were fed with 5 different diets 6 weeks long. The diets were control diet, vitamin E-free diet, diet with low vitamin C (50mg/day) supplementation, diet with high vitamin C supplementation (250mg/day), diet with vitamin E supplementation (400IU/day). Supplementation with vitamin E caused a non-significant increase of glucose in serum. A low supplementation of diet with vitamin C tends to decrease the serum glucose concentration as compared to control group and to other experimental group. Blood triglyceride content increased significantly in vitamin E supplemented diet group. Serum cholesterol did not showed and tendency according to diet compositions. In conclusion, any positive influences of vitamin E supplementation on blood glucose and lipids could not be found. It suggested that a supranutritional supplemenation of diet with vitamin E may cause the increase of risk for diabetes mellitus and cardiovascular disease. In contrast, the positive effect of low vitamin C supplementation in diet on blood in rats suggest that higher intake of vitamin C than requirement may protect from increase of blood glucose for persons and may be useful in controlling blood glucose level in diabetes patient. This suggestion needs to be examined with very different amount of vitamin E supplementation in diet.

Selenuum is an essential trace mineral acting as a strong antioxidant. Selenium is a component of selenoprotein GSHpx, which scavenges free radicals and reduces lipid peroxides. In Korea, the prevalence of cardiovascular disease(CVD) tends to increase rapid lately. Thrombosis and dyslipidemia, the most important risk factors for CVD, is assumed to be resulted from the peroxidation of protein and lipid. An adequate intake of selenium inhibits blood coagulation, platelet aggregation and damage of blood vascular endothelialcells. Also, selenium intake affect blood lipid profiles, reducing cholesterol level and increasing HDL-cholesterol. Therefore, it is assumed that the risks of the high coronary heart disease induced by selenium deficiency could be reduced by the selenium supplementation. In this article, the safe intake range and importance of selenium nutrition in preventing cardiovascular disease were discussed.

This study compared two methods, energy adjustment and nutrient density in orther to evaluate habitual dietary intake for dietary fiber, vitamins, and minerals in middle aged women from baseline populations for the East German part of the EPIC-cohort research. The criterion used for comparison was the ratio of energy intake to estimated basal metabolic rate. Energy adjustment of micronutrients and dietary fiber intakes using residue methods by Willet seemed to exclude the effect of energy intake, so improve the measurement errors of dietary variables, but not nutrient density
