        현대 베트남 대중 레스토랑에 나타난 전통적 표현특성에 관한 연구

        The Purpose of this study was to investigate that to see how their traditional characteristics were reflected and expressed in Hanoi vietnamese contemporary public restaurants. For this, We visited Hanoi twice to have on site research in August 2012 and 2013. According to the results of surveying Vietnamese public restaurants, all of the 12 cases had humane characteristics reflecting Vietnam traditional culture, showing Vietnamese unique traditional characteristics including intangible elements such as natural environment, life culture elements such as food culture, and formative aesthetic elements using indigenous ornaments. Different from luxury restaurants that had trade names on the theme of historical stories related to people or places and expressed various concepts formatively using photographs of Vietnamese politics and history or places and expressed various concepts formatively using photographs of Vietnamese politics and history and ornamental elements such as tableware, however, the public restaurants were simple in theme or concept. It is probably because most of the surveyed cases were situated in the old quarter to the north of the Hoan Kiem Lake and in the area to the west of the lake and their target customers were local people, so they reflected the Vietnamese traditional residence style and common people’s life rather than designing the restaurants intentionally with specific concepts. As to the spatial expression characteristics of the surveyed cases, casual restaurants in Hanoi expressed only basic structure using basic construction materials and techniques with outdoor spaces in the form of Vietnam traditional tube house, and therefore, the overall atmosphere was contemporary. In indoor spaces as well, the general level was low, using uncharacteristic common design and color and cheap finishing materials and furniture. 83% of all cases showed the pattern of VM-VM-VT, being mainly contemporary by partially adopting Vietnamese unique ornamental elements for their outdoor and indoor spaces and using traditional elements supplementarily.

        중학생의 방과후 스포츠활동 참여정도와 공격성 그리고 학교폭력태도간의 관계

        본 연구는 이에 본 연구는 중학생의 방과후 스포츠활동 참여정도와 공격성, 그리고 학교폭력태도를 검증하는데 그 목적이 있다. 서울시 중학교에 재학중인 학생 211명을 표집하여 설문응답을 받은 후 SPSS20.0 & AMOS 18.0. 프로그램을 통하여 분석하였다. 이에 대한 연구결과는 다음과 같다. 첫째, 중학생의 방과후 스포츠활동 참여정도와 공격성 및 학교폭력태도에 정적인 영향을 미쳤다. 둘째, 중학생의 스포츠참여정도는 학교폭력태도에 직접적으로 유의한 영향을 미치지 않았다. 그러나 공격성를 통하여 간접적으로 영향을 미치고 있었다. 셋째, 공격성은 학교폭력태도에 정적인 영향을 미쳤다. 이러한 결과를 바탕으로 중학생의 방과후 스포츠활동 참여정도는 청소년 개인의 공격성에 따라 학교폭력태도가 달라질 수 있음을 확인하였다. 그러므로 중학생에게 공격성을 조절할 수 있는 스포츠활동 참여를 장려함으로써 학교폭력에 민감하게 반응하고 서로 배려하는 학교를 만들 수 있도록 노력해야 할 것이다. The purpose of this study was examination of model among extra-curricular sports participation degree and aggression and school violence attitudes in youth. For the study subjects, a survey was conducted on the up to students in middle school in Seoul, and total 211 questionnaires were used. For the data treatment, the statistical methods used for analyzing the data were the frequency, reliability, correlations, confirmatory factor analysis & structural equation modeling by using with SPSS20.0 & AMOS 18.0. The finding of this study were follows. First, the extra-curricular sports participation degree in youth positively affected the aggression. Second, the extra-curricular sports participation degree in youth didn t affected school violence attitudes. but it affected school violence attitudes indirectly. Third, the aggression positively affected the school violence attitudes.

        광양 재래종 복분자의 항산화 활성

        본 연구는 광양 재래종 복분자의 항산화 활성을 평가하였다. 주요 유리당으로는 글루코오스와 과당이 각각 2.83±0.01%, 3.49±0.17%로 분석되었다. 복분자의 항산화 활성을 나타내는데 기여하는 비타민 C는 0.04 g/100 g, 비타민 E는 0.01 g/100 g으로 분석되었다. 항산화 기능을 대표하는 광양 재래종 복분자내 안토시아닌 함량은 2.41±0.01 g/100 g으로 분석되었다. 열수추출물과 80% 에탄올추출물의 폴리페놀 함량은 열수추출물 5.99±0.15%, 80% 에탄올추출물 6.20±0.41%로 통계적 유의 차이를 나타내지 않았다. 라디칼 소거활성을 평가한 결과 동일한 농도에서 DPPH 라디칼 소거활성은 80% 에탄올추출물이 89.29±0.68%, 열수추출물이 65.04±3.95%로 나타났고 ABTS 라디칼 소거활성은 각각 30.22±2.91%, 47.65±0.45%로 나타났다. 지질과산화 억제 활성은 80% 에탄올추출물이 23.27±0.17%로 열수추출물 3.58±0.21%보다 높게 나타났다. 안토시아닌을 다량 함유한 광양 재래종 복분자는 이를 함유하는 식품의 가공 및 천연 색소로의 이용이 가능할 것이다. 본 연구의 재래종 복분자의 이화학적 특성은 재래종 복분자 식품의 개발에 활용될 수 있고, 항산화 활성이 높은 80% 에탄올추출물은 건강기능식품의 소재로 활용할 수 있을 것으로 판단되었다. In other to promote the utilization of native Gwangyang Rubus coreanus Miq. as an antioxidant material in functional food, its general composition, free sugars, vitamin C, vitamin E, and anthocyanin content were examined. Free sugars were mainly 2.83±0.01% glucose and 3.49±0.17% fructose. Native Gwangyang Rubus coreanus Miq. included higher vitamin C (0.04 g/100 g) and E (0.04 g/100 g) contents than other Rubus coreanus Miq. Anthocyanin was detected to be 2.41 g/100 g. Two extracts from native Gwangyang Rubus coreanus Miq., hot water extract (RCW) and 80% ethanol extract (RCE), were prepared by reflux, filter, and freeze-dry. The phenolic compound levels of RCW and RCE were 5.99% and 6.20%, respectively. In DPPH- and ABTS-radical scavenging activities, and lipid peroxidation formation inhibitory activity, RCE exhibited relatively high activities when compared to RCW (89.29% vs. 65.04%, 47.65% vs. 30.22%, 23.27% vs. 3.6%, respectively). Based upon these results, it is suggested that RCE from native Gwangyang Rubus coreanus Miq. possesses the antioxidant potentials for radical scavenging and anti-lipid peroxidation activities.

        레스토랑 디자인에 나타난 문화적 정체성 표현특성과 영향인자에 대한 연구

        The purpose of this study were to examine the characteristics of elements composing the cultural identity of Chinese architectural and spatial design, and to analyze the expression characteristics and influencing factors of contemporary restaurant design. With these purposes, first, this study reviewed related literature in order to find the characteristics of tangible elements and space expression characteristics forming the cultural identity of China. Second, this study conducted a case study in order to understand the expression characteristics of the design of Chinese restaurants in Shanghai and to find factors influencing the design. In order to sample the subjects of the case study, the researcher selected 18 restaurants that were recommended repeatedly in books on Chinese restaurants and tourism and major internet sites or highly evaluated by visitors, and then choose 15 of them that were found to be fit for the purpose of the survey. According to the result of the survey, the restaurants were largely grouped by type into 10 cases of fine dining, 3 of middle class casual dining, 1 of fast food, and 1 of luxury tea house serving traditional tea and snacks. Of these restaurants. 46.7% (7 cases) were of CM-CM-CM type, namely, using contemporary simple elements in all of external spaces, indoor spaces, and decorations, 20% (3 cases) were of CM-CM-CT types, using contemporary and simple external and indoor spaces, and traditional furniture or articles, 20% (3 cases) were of CT-CM-CT type, using traditional external spaces such as traditional building, contemporary simple finishing of indoor spaces, and traditional articles such as palace lanterns and traditional doors and windows, and 13.3% (2 cases) were of CT-CT-CT type, using traditional elements in their original forms in general. Through this research and survey, cultural identity showing Chinese traditions observed in the expression characteristics of restaurant spatial designs was confirmed, and it was also found that the identity was underlain by ideologies, lifestyles, etc. that had long accumulated through the long history of the country and exerted a great influence.

        한·일 대학 육상선수로서의 삶 바라보기

        이 연구는 한국과 일본의 대학 육상선수들이 어떠한 삶을 살아가고 있는지를 밝혀내어 육상교육 현장에서의 선수 선발 및 관리, 지도에 관한 체계화를 이루는데 기초자료로 활용하고자 하는데 목적이 있다. Spradley(1979)가 제안한 문화기술적 인터뷰 방식을 바탕으로 자료를 수집하였으며, 자료의 분석 과정은 연구 주제에 적절하게 영역 분석, 분류 분석, 성분 분석을 중심으로 분석하였다. 이를 위하여 한,일 대학육상선수 총 6명의 연구 참여자들로부터 자전적 글쓰기, 인터뷰, 대화, 훈련 일지 등의 형태로 자료를 수집하였다. 수집된 자료는 연구 문제에 부합되는 맥락의 이야기를 묶어 주제어를 찾아 재구성하였다. 운동선수의 삶을 선택하는 과정에서는 자의적/타의적 선택, 부모님의 반대/지지, 학업과 운동의 비중, 친구와 지도자의 영향이 육상선수로서의 삶을 선택하는 과정에 영향을 주는 요인이었다. 대학생활과 운동선수 활동하기, 인간관계형성, 자기관리, 그리고 고민거리가 대학 육상선수로 살아가는 현재에 영향을 주고 있었으며, 대학 육상선수에서 나아가는 미래를 위한 대비하는 요인으로는 목표를 설정하고 진로를 선택하며, 미래를 위하여 자기 노력을 하고 있는 것으로 나타났다. 또한 한국과 일본의 대학 육상선수의 삶을 다시 바라본 결과, 육상에 대한 애정은 공통점으로 나타났으며, 문화적 차이에서 기인하는 병역문제, 부모의 지지여부, 거주지 선택의 자유, 수업 참여의 학교규정, 이성교제의 시각, 운동부진의 원인에서는 양국 간의 차를 확인할 수 있다 The purpose of this study is to in-depth understand the life of athletes in Korean and Japan. In The narrative inquiry was used in the method of this study, and the data from 6 athletes of Korean and Japan were collected by their’s self writing, interview, discussion and training diary. Those collected data re-composed into searching the logical connection of research topic. Based on the collected data I analysed the subject using domain analysis, in addition to Spradley’s(1980) taxonomic methods of ethnographic analysis. An effect factors on selecting the life pattern in athletes were own or another choice, support or non support from parent, relative importance weight in exercise or study and the relationship with friends. In currently, athletes were affected by life activity as college student and athletes, formation of human relationship, self management and agony matters in athletes’s life. And It was presented that the factors on the preparation for future in college athletes were the establishment of goal, selection of way after graduation and own’s constant efforts for the future. As the results from the view point of Korean and Japan athletes life, the common result showed in the love for athletics on both nation’s athletes, and the differences results indicated the matter of military service, freedom of the selection of residence, school regulations on participating the class, opinion on dating and reasons on poor athletic ability.

        푸드 편집숍 컨셉의 셀렉다이닝 특성에 관한 연구

        Select dining of a new restaurant concept that appeared as an alternative to the global food service market, emerged at the time when differentiated competitiveness of restaurants is required for consumers due to the rapid inflow of information through various media and the entry of global food service enterprises into the market. This study theoretically reviewed and summarized the concept of food curation shop and select dining through media and the literature research, and based on it, this study attempted to analyze the characteristics and types of select dining through an actual case study. The results of the study are as follows. All select dinings in the survey were located in the downtown office market and were targeted at young employees in their 20s and 30s. The types of select dinings were divided into a single type, a separate type, and a combination type depending on the characteristics of the store establishment, order and payment system, space configuration, and service operation mode. As the space plan of select dining was based on the customer"s journey including access space, dining space, order and payment space, and cooking space, etc., and was targeted at young employees, the space design was modern and vintage and was produced in a luxurious and sophisticated atmosphere. Service and operation types were selected according to the types of self service and table service. In the future, it should be planned not with the evolved form of food court, but with menu items and designs for the differentiated concept and theme. Also, it should be reborn as a complex food service culture space to attract visitors to a variety of destinations. Also, it is advantageous to attract customers, so it solves vacancies of office buildings and raises the value of buildings, and at the same time, it helps to activate the commercial street of office street where the floating population of the weekend is small, but as shown in the complex commercial shopping mall area, it is necessary to establish a linkage strategy not only for malling inside the building, but also for coexistence with neighboring areas.

        4차 산업혁명에 의한 환대산업 분야 디지털 기술 적용에 관한 연구

        본 연구는 4차 산업혁명에 의한 디지털 기술의 환대산업 분야별 적용 현황과 이에 따른 고객의 선택과 행동의 변화에 영향을 미치는 디지털 기술 도입의 특성을 분석함으로써, 향후 환대산업 분야에서 고객에게 새로운 경험과 가치를 제공하기 위한 환대산업 분야의 운영 전략 수립의 기초자료로 활용하고자 하였다. 연구를 위한 방법으로는 질적 연구방법의 하나인 사례연구방법을 이용하였고, 문헌을 토대로 조사대상이 되는 환대산업의 범위를 호텔 산업과 항공 산업을 포함하는 관광 분야와 식음 산업과 레스토랑 산업을 포함하는 외식분야로 정하였다. 국내외 포털 및 기사, 웹 싸이트를 통해 4차 산업혁명 기술 적용 관련하여 3차례 이상 반복적으로 소개된 사례를 선정하여 분석하였다. 사례분석 결과 환대산업 분야에서는 4차 산업혁명의 핵심기술인 사물인터넷(IoT), 인공지능(AI), 빅데이터, 클라우드, 증강현실 등 다양한 디지털 기술을 도입하여 운영하고 있었고, 고객들은 서비스의 편리성, 신속성, 안정성, 유희성에 만족하고, 운영자는 신속성, 서비스품질관리 용이성, 업무 효율성, 안전성, 차별성 등의 적용 특성이 나타났다. 이를 토대로 추후 환대산업 분야의 분야별 서비스 특성과 차별화 전략에 맞는 지속가능한 디지털 기술을 적용함과 동시에 고객의 소비행동과 선택에 긍정적 영향을 줄 수 있는 디지털 넛지 전략까지 고려한 맞춤형, 융합형 서비스 전략개발에 참고하여야 할 것이다. This study aims to analyze the application status of digital technology by hospitality industry by the Fourth Industrial Revolution and the characteristics of digital technology introduction that affect customer choice and behavior. One of the qualitative research methods was the case analysis method, and based on the literature, the scope of the hospitality industry was determined as the tourism sector, including the hotel industry and aviation industry, and the food industry and restaurant industry. Cases that have been repeatedly introduced more than three times related to the application of 4th Industrial Revolution technology were selected and analyzed through portals, articles and websites at home and abroad. As a result of the case analysis, various digital technologies such as Internet of Things (IoT), artificial intelligence (AI), big data, cloud, augmented reality, etc. were introduced and operated. Customers were satisfied with convenience, speed, stability, playability, operators were able to manage service quality, work efficiency, safety, and differentiation. Based on this, it will be necessary to apply sustainable digital technology that fits the service characteristics and differentiation strategies of each field of hospitality industry and plan digital nudge strategies that can positively affect customers consumption behaviors and choices and refer to the development of customized and converged services.

        논문 : 하노이 소재 베트남 고급 레스토랑에 나타난 공간표현특성 연구

        본 연구는 베트남의 수도인 하노이에서 운영 중인 고급 레스토랑을 대상으로 그들의 전통적 특성이 현대 상업공간에 어떻게 반영되고, 표현되고 있는지 조사하였다. 이를 위해 2012년 8월, 2013년 8월 2차례에 걸쳐 베트남 수도 하노이를 방문, 현장조사를 실시하였다. 조사대상 레스토랑 모두 인문적 특성으로 무형적 요소와 유형적 요소의 특성을 동시에 반영하고 있었는데, 자연환경적 요소 및 생활문화적 요소가 전체적으로 반영되고 있었다. 공간 표현특성으로는 93%(13사례)가 프랑스 통치시대에 지어진 프랑스 식민양식 빌라를 개조하여 사용하면서 외관과 실내는 프랑스 신고전 양식의 특징을 나타내고 있었고, 실내에 부분적으로 전통가구 및 장식을 사용하여 베트남의 전통을 표현하고 있는 것이 특징적이었다. 베트남 사람들이 프랑스 식민시대 양식의 빌라를 이상적인 주택으로 여기고 있어 수준높고 세련된 고급 음식점의 이미지를 표현하는 방법으로 프랑스 건축양식을 선호하고 있다고 파악된다. The purpose of this study was to investigate that to see how their traditional characteristics were reflected and expressed in modern commercial spaces, For high-end restaurants being operated in Hanoi. For this, We visited Hanoi twice to have on-site research in August 2012 and 2013. All the subject restaurants reflected tangible and intangible elements all together at the same time. In spatial expression, 13 cases (93%) showed French neoclassic style both interior and exterior as using colonial style villa constructed in French governance. They expressed Vietnamese tradition by using traditional furniture and ornaments in the part of interiors. The reason why high-end restaurants serving traditional food use exterior image of French style because that Vietnamese consider the colonial French style villa as the most ideal house and prefer it as the expression of the image of sophisticated and high-quality high-end restaurants.

        The application of photovoltaics into building as integrated building components has been paid more attention worldwide. Photovoltaics or solar electric modules are solid state devices, directly converting solar radiation into electricity; the process does not require fuel and any moving parts, and produce no pollutants. And the prefab building method is very effective because the pre-manufactured building components is simply assembled to making up buildings in the construction fields especially the sandwich panel. So, the purpose of this research is to integrated prefab building materials depending on the cooling type of PV modules. It is concluded that the prediction of BIPV system's performance should be based on the more accurate PV module temperature. From the basis of these results on the correlation of temperature and irradiation were obtained.
