Kimchi is a Korean traditional food which consist of fermented vegetable with other ingredients, such as red pepper, garlic, green onion, ginger, fish meat or sauce. Kimchi is the major preservation method of vegetables during winter time, however various types of Kimchi are consumed in all seasons of the year in Korea. This paper reviewed on nutritional value of Kimchi, flavorous taste components in Kimchi and preservation method of Kimchi. Nutritional value of fermented Kimchi is much higher than that of the starting ingredients. Microbial synthesis of B-group vitamins, such as thiamine, riboflavin niacin, B12 has been established in several studies. Ascorbic acid is well preserved due to the acid level of Kimchi during fermentation. The interesting point was that nutritional value of Kimchi is increased during fermentation period and reached its highest value at the peak maturity and decreased thereafter for overfermentation. Many flavorous taste components have been identified including nonvolatile and volatile organic acids, CO2, carbonyls, sulfur-containing compounds and free amino acids. The demand for factory-scale, ready-made Kimchi is increased in Korea. Therefore a various method was developed to control fermentation and to prevent overfermentation and acidification of Kimchi. Bottling, canning, plastic packing, refrigeration, freezing, adding preservative, radiation, and other methods were studied.
A Study of the Extraneous Self-Imaging Phenomenon under a Multimode Interference Configuration

This study analyzes the phase-mismatching values of guided modes in a multimode waveguide with a weak-guiding conguration. In addition, a previously undefined self-imaging phenomenon, refered to herein as the extraneous self-imaging (Ex SI) phenomenon, was found to result from the modal phase-mismatching effect. The evolution principle of the Ex SI phenomenon is theoreticaly veried while the results from the numerical method are compared with graphical and analytical forms of the newly suggested method. Moreover, under a specific condition, the numerical results and the analytical results are compared to analyze the evolution of the Ex SI phenomenon.
구리결핍이 햄스터의 혈액성분 및 췌장기능에 미치는 영향

Copper deficiency was induced in hamsters by feeding synthetic diet deficient in copper. Growth retardation was remarkable in copper-deficient hamsters until 9th week of experiment but the difference in body weight between copper-deficient and copper-sufficient group was gradually disappeared due to the catch-up growth of copper-deficient hamsters. Copper-deficient hamsters exhibited decrease in food intake during first 5 weeks compared to control group but there-after there was no difference in food intake between two groups. Hematologic study showed that serum copper level was significantly decreased in copper-deficient hamsters, however, hematocrit values were not significantly different between two groups. Hemoglobin levels in copper deficient hamsters were decreased during first 5 weeks but the difference became no longer significant by 10 weeks. Pancreatic weight, DNA and protein contents as well as pancreatic enzyme activities were not influenced by copper deficiency in hamsters.
식이섬유질원이 포함된 식이가 흰쥐의 장내 균총조성에 미치는 영향

This study was performed to investigate the influence of dietary fiber from the whole food on the composition of intestinal microflora in rats. The fiber sources of experimental diets were prepared by drying and milling of small water dropwort(WD), mugwort(MW), butterbur(BB) and apple(AP). Each fiber sources was mixed at the 15% level of the diet. The level of dietary fiber in WD, MW, BB diets was simillar but that in AP diet was slightly low. Male rats of Sprague-Dawley strain were blocked into 5 groups: WD, MW, BB, AP, FF(fiber free), The animal was fed ad libitum each of experimental diets for 37 days. Total viable counts and the numbers of Lactobacillus, Bifidobacterium, Bacteroidaceae, Eubacterium, Peptococcaceae, Streptococcus, Clostridium, Staphylococcus, E. coli were determined by nonselective and various selective media. Food intake of AP and FF groups were lower than the other groups, FF group was lower than the other groups in flood efficiency ratio. Total viable counts were the highest in FF group. The number of Bacteroides, Eubacterium were higher in AP group compared with other groups and that of streptococcus was lower in MW, BB, AP groups than others. The number of Lactobacillus was higher in WD, MW, BB groups than the other groups and that of Bifidobacterium was higher in BB, AP groups. A decrease in the intestinal population of Clostridium was shown in MW, BB groups. These findings suggests that the samll water dorpwort, mugwort butterbur are effective in improving intestinal flora of rats.
