로즈마리와 클로브 에센셜 오일의 항산화 특성과 토종닭 후라이드 치킨의 품질특성 및 풍미성분에 미치는 영향

본 연구에서 사용된 클로브 에센셜 오일은 로즈마리 에센셜 오일보다 강력한 항산화 효과를 나타내었다. 토종닭 후라이드 치킨 제조 과정 중 로즈마리와 클로브 에센셜 오일의 첨가는 일반성분, pH, TBARS와 관능적 특성에 있어 유의적인 효과를 줄 수 없었다. 0.005CB를 제외한 모든 에센셜 오일 첨가 처리구는 Control보다 낮은 가열감량을 보였고 0.005CB에서는 높은 픽업률을 보였다(P<0.05). 토종닭후라이드 치킨의 지방산 조성을 측정한 결과, 클로브 에센셜 오일의 항산화 효과로 인하여 0.005CB와 0.01CB는Control보다 높은 수준의 arachidonic acid를 나타내었다. 토종닭 후라이드 치킨의 휘발성 유기 화합물을 측정한 결과, 로즈마리 에센셜 오일의 특정 풍미성분들이 토종닭 후라이드 치킨에 마스킹 되었고 클로브 에센셜 오일의 항산화 능력을 통해 몇몇 pyrazine류의 물질들을 감소시켰다. 본 연구 데이터는 향후 로즈마리와 클로브 에센셜 오일을 첨가하여 제조한 토종닭 후라이드 치킨의 저장성 연구에 있어 기초 데이터로 활용될 수 있을 것으로 판단된다. The study aimed to evaluate the antioxidative effects of rosemary (Rosmarinus officinalis L.) and clove (Syzgyium aromaticum L.) essential oils on fried Korean native thigh meat, including their impact on processed characteristics and flavor compounds. Clove essential oil showed higher DPPH scavenging activity, FRAP and total phenol content compared to rosemary essential oil (P<0.05). The treatments with the addition of 0.005% and 0.01% rosemary (0.005RB and 0.01RB) and clove (0.005CB and 0.01CB) essential oils to the batter weight compared to control that did not include essential oils in batter. The addition of rosemary and clove essential oils to fried Korean native chicken thigh meat did not significant affect proximate composition, pH, TBARS, sensory characteristics. Except for 0.005CB, treatments adding essential oils decreased cooking loss (P<0.05) and 0.005CB showed significantly higher pick-up value than control. Addition of clove essential oil in fried Korean native chicken thigh meat resulted in higher levels of arachidonic acid compared to control (P<0.05). Volatile organic compounds (VOCs) analysis showed that addition of rosemary essential oil might mask its own VOCs, while clove essential oil addition reduced some pyrazine compounds. Although addition of rosemary and clove essential oil did not have significant sensory characteristics on fried Korean native chicken thigh meat, instrumental analysis revealed changes in the compounds that influenced flavor. Further studies are required to evaluate the stability of flavor and sensory characteristics of fried Korean native chicken thigh meat with added essential oils during storage.

카페형 자동차 전시장에서 고객만족도에 영향을 미치는 ‘제3의 공간’ 특성

As the quality of life has improved today, there is a growing desire among consumers for new space and interest in spending their valuable time in 'the third space' has tended to increase. Cafes have been integrated with sales and exhibition space as the representative third space. For example, it's cafe type automobile exhibition centers. The purpose of this study is to examine the characteristics of 'the third space' in cafe type automobile exhibition centers and suggest a plan for effective spatial characteristics. It checked the necessity of the third space' in automobile exhibition centers by analyzing automobile consumption trends of the 21st century according to industry change and restructures a checklist by grasping cafe type automobile exhibition centers and the concept and characteristics of 'the third space' based on the precedent studies. A questionnaire is made through the checklist drawn and a survey is conducted targeting users of the target areas of cases. The target areas of cases are 4 cafe type automobile exhibition centers opened in Korea since 2014. The analytical results of the target areas of cases that reflected the characteristics of 'the third space' are as follow: First, cafe type automobile exhibition centers must be built to make customers enter the space and at the same time, receive information on automobiles and space naturally. Second, in order to increase satisfaction with the space and brands, there is the necessity to arouse their interest through various experiences including test driving cars directly. Third, revisit intention can be found to be more influenced by spatial design than brand satisfaction. Fourth, partitions or interior for dividing the space need to be improved. In the next studies, specific research on plans about creating design to improve corporate image and brands and induce customers to revisit cafe type automobile exhibition centers by applying the characteristics of 'the third place' to them is required. 본 연구는 카페형 자동차 전시장에서의 ‘제3의 공간’ 특성에 대해 알아보고 고객 만족도를 높이는 효과적인 공간 특성 방안을 제안하는 것에 그 목적이 있다. 산업변화에 따른 21세기 자동차 소비 트렌드 분석을 통해 자동차 전시장에서의 ‘제 3의 공간’의 필요성을 확인하고 선행연구를 바탕으로 카페형 자동차 전시장과 ‘제3의 공간’의 개념 및 특성을 파악하여 체크리스트를 재구성한다. 도출된 체크리스트를 통해 설문지 작성 후, 사례 대상지 이용자를 대상으로 설문조사를 실시한다. 사례 대상지는 2014년 이후 국내에 개관된 카페형 자동차 전시장 4곳이다. ‘제3의 공간’특성을 반영한 사례 대상지의 분석 결과는 다음과 같다. 첫째, 카페형 자동차 전시장에서는 고객들이 공간에 들어옴과 동시에 차량 및 공간에 대한 정보를 자연스럽게 제공받을 수 있도록 해야 한다. 둘째, 공간 및 브랜드에 대한 만족도를 높이기 위해서는 직접 차를 시승하는 등 다양한 체험을 통해 고객의 흥미를 유발할 필요성이 있다. 셋째, 재방문의도는 브랜드 만족도보다는 공간 디자인 측면의 영향을 더 많이 받는다는 것을 알 수 있다. 넷째, 공간 분류를 위한 파티션이나 인테리어 요소의 개선이 요구된다. 향후 후속 연구에서는 ‘제 3의 공간’ 특성을 카페형 자동차 전시장에 적용함으로써 기업 이미지 및 브랜드 향상과 고객들의 재방문을 유도하는 디자인 연출 계획에 대한 구체적인 연구가 필요하겠다고 하겠다.

From genome sequencing to the discovery of potential biomarkers in liver disease

Chronic liver disease progresses through several stages, fatty liver, steatohepatitis, cirrhosis, and eventually, it leads to hepatocellular carcinoma (HCC) over a long period of time. Since a large proportion of patients with HCC are accompanied by cirrhosis, it is considered to be an important factor in the diagnosis of liver cancer. This is because cirrhosis leads to an irreversible harmful effect, but the early stages of chronic liver disease could be reversed to a healthy state. Therefore, the discovery of biomarkers that could identify the early stages of chronic liver disease is important to prevent serious liver damage. Biomarker discovery at liver cancer and cirrhosis has enhanced the development of sequencing technology. Next generation sequencing (NGS) is one of the representative technical innovations in the biological field in the recent decades and it is the most important thing to design for research on what type of sequencing methods are suitable and how to handle the analysis steps for data integration. In this review, we comprehensively summarized NGS techniques for identifying genome, transcriptome, DNA methylome and 3D/4D chromatin structure, and introduced framework of processing data set and integrating multi-omics data for uncovering biomarkers.

로코코 시대의 장식적 특성을 응용한 아트마스크 디자인

The purpose of this study was to categorize the decorative characteristics of the Rococo Age, which displays the most glamorous and elegant decorative beauty, in architecture, interior decorations, paintings, and patterns, and to analyze these characteristics and graft them onto art masks in a modern way. PieceⅠ is a mixed media piece that based its motif on the ceilings and pulpits of the German Vis Pilgrimage Church, which is representative architecture of the Rococo Age. It was glamorously produced using gold and cubic zirconia. Piece Ⅱ is also a mixed media piece that borrowed its motif from the exterior and gazebo of the Sanssouci Palace in Germany, another representative piece of architecture from the Rococo Age, and it was produced to clearly display the image of the Sanssouci Palace, using emerald and ivory. Piece Ⅲ applies the furniture trends of the Rococo Age . Curves in S and C shapes, which can often be found in Chinese furniture, along with dark backgrounds, common in portrait paintings, were applied to give a sense of weight and dignity. Piece Ⅳ is an application of the fabric patterns of the Rococo Age. Continuous patterns of flowers and greenery stems were drawn on the mask to recreate the fabric patterns of the age. Piece Ⅴ used the painting 'Swing' of the Rococo Age as its inspiration. Lace and ribbon decorations were used to emphasize feminine beauty and express the loveliness of the woman that appears in the painting. Piece Ⅵ borrows from the painting 'Madame de Pompadour' of the Rococo Age and the clothing worn by Pompadour. This piece grafted colors and themes through the painting and expressed a fusion of the dresses of Pompadour and lace that is clearly displayed in the architecture, paintings, clothing, interior decorations, and patterns of the Rococo Age, along with the rocaille (asymmetrically shaped decorations that resemble clams), flowers, leaves, stems, and Chinoiserie styles. These motifs clearly display the decorative characteristics of the age and these were grafted them onto art masks, confirming that it is possible to create new designs.

The new records are redescribed and illustrated based on the Koreanspecimens.

동향 : 미국 주요 사업자의 IPS 제공 현황

IPTV 서비스 개시와 함께 미국 유선 통신업자들이 케이블 사업자가 독식하던 MVPD (multichannel video programming distributor)시장에 진입하면서 이미 TPS(Triple Play Service)를 통해 경쟁력을 확보한 케이블 사업자들에 대응해 유선 통신업자들 역시 기존 광대역 네트워크를 기반으로 다양한 결합상품을 출시, 이들 사업자간 경쟁이 심화되고 있다. 이에 최근 통신서비스 시장의 핵심 서비스로 떠오른 TPS와 관련해 미국의 대표적 TPS 제공 사업자들의 신규서비스 현황을 살펴보고자 한다.

동향 : 영국의 망중립성 논의 동향

미국을 중심으로 망중립성에 대한 논의가 급격히 진행되면서 2006년 한해 미 의회에서는 법제화 문제를 놓고 치열한 공방이 벌어졌다. 특히 2006년 12월 29일 FCC의 AT&T와 BellSouth 합병인가 조건에 망중립성 조항이 포함되고, 모든 망사업자가 엄격하게 망중립성 원칙을 지키도록 요구한 법안이 2007년 1월 9일 의원입법으로 상정되면서 최근 FCC는 망중립성 보호관련 정책의 강화조치 필요성 여부에 관한 심리를 시작할 예정이라고 밝혔다. 인터넷 트래픽의 급증, 지연시간에 민감한(time-sensitive) 어플리케이션 사용의 증가, 네트워크 라우터의 기능향상 등 환경이 변화하면서 많은 국가들이 공통적으로 망중립성 문제를 중요한 이슈로 인식하고는 있으나, 실제로 미국 이외 지역에서는 구체적인 논의가 진행되지 않은 상태이며 이 때문에 망중립성 관련 국내연구도 주로 미국사례를 바탕으로 한 것이 대부분이었다. 이런 상황에서 3월 Ofcom(Office of Communications)의장과 산업대표들 및 일부 양원의원이 참석한 가운데 영국의회에서 열린 ``Westminister eForum``은 상대적으로 망중립성 규제에 유보적 입장을 보이는 유럽의 통신시장 환경과 향후 규제방침 등을 다룬 공식적인 첫 논의로 평가된다. 본고에서는 Ofcom과 Ovum의 자료를 바탕으로 영국을 중심으로 한 유럽의 망중립성 논의 동향을 소개하고, 정책적 함의를 찾고자 한다.
