        Correlation of Antioxidant Content and Absorbance Changes of DPPH During Lipid Oxidation

        Absorbance of DPPH in isooctane has been developed to determine the degree of lipid oxidation and antioxidant capacities in lipid systems. Lard with or without addition of sesamol, a free radical scavenger, was thermally oxidized and absorbance of DPPH in isooctane,conjugated dienoic acid (CDA) values, p-anisidine value (p-AV), and sesamol content were analyzed. Changes of DPPH absorbance in early stages of oxidation were highly correlated to the decrease of sesamol content. In later stages of lipid oxidation, formation of radical scavenging compounds from oxidized lipids (RSOLs) played major roles in the decrease of DPPH absorbance. CDA and p-AV did not have good correlations with DPPH absorbance in lard systems. This study clearly shows that the content of free radical scavengers and/or RSOLs influenced the changes of DPPH absorbance, which cannot be determined by conventionally methods like CDA and p-AV methods.

        Influence of food-derived bioactives on gut microbiota compositions and their metabolites by focusing on neurotransmitters

        The behavior of gut microbiota is closely involved in sustaining balanced immune and metabolic homeostasis, and the dysbiosis of gut microbiota can lead to severe disease. Foods and dietary patterns are the primary drivers in shaping/designing gut microbiota compositions and their metabolites across the lifetime. This indicates the importance of functional molecules present in the food matrix in the life of gut microbiota and their influence on the host’s biological system. In this contribution, the effects of different dietary choices and bioactive compounds (i.e., phenolics, vitamins, carotenoids) on gut microbiome compositions and their metabolites are comprehensively discussed by focusing on neurotransmitters. This study may provide useful information that fills a gap in understanding the role of the gut microbiota and its alterations as affected by foods and food-derived bioactives.

        식품 중 아스코르빈산 유래 산화방지제의 HPLC 분석법 검증 및 개선

        산화방지제인 아스코르빈산(AA), 에리쏘르빈산(isoAA), 아스코르빌파르미테이트(AP), 아스코르빌스테아레이트(AS)에 대한 ‘식품 중 식품첨가물 분석법’을 검증하고 미비점을 개선하였다. 고속액체크로마토그래피 자외선검출기법을 이용하여 검출한계(LOD), 정량한계(LOQ), 상관계수(R2) 등을 측정하였고 돼지기름(lard), 사이다를 이용한 모델식품에서의 회수율과 재현성을 측정하였다. AA와 isoAA의 검출한계는 각각 0.46, 0.48 μg/mL이었으며, 회수율은 각각 86.35-94.78, 84.76-95.02%를 나타내었고 상관계수는 모두 0.999이상을 보였다. AP와 AS의 현 분석법은 메탄올을 용매로 사용하지만 메탄올 용매에서 AP와 AS는 불안정하였다. 냉장온도에서 에탄올을 용매로 사용 시 다른 용매에 비해 유의적으로 높은 안정성을 나타내어 기존 용매의 불안정성을 개선할 수 있었다. Analytical methods for food antioxidants including ascorbic acid, erythorbic acid, ascorbyl palmitate (AP), and ascorbyl stearate (AS), were validated using high performance liquid chromatography. Validation parameters such as linearity, limit of detection (LOD), limit of quantification (LOQ), and recovery were tested using lard and cider as food model systems. Linearity of ascorbic acid and erythorbic acid were both higher than (R2> 0.99), LOD of these compounds were 0.46 and 0.48 μg/mL, respectively and LOQ were 1.39 and 1.45 μg/mL, respectively. The recovery rates of these compounds were 86.35-94.78% and 84.76-95.02%, respectively. However, the concentration of AP and AS decreased in methanol stock solution. Four other solvents including ethanol, acetonitrile, mixture of methanol and acetonitrile, and mixture of ethanol and acetonitrile were tested to increase the stability of AP and AS under room temperature and refrigerated temperature. Ethanol provided better stability of AP and AS under both room and refrigerated temperature. This study can help to accurately analyze the content of ascorbic acid and its derivatives in processed foods.

        Monitoring of Radical Scavenging Compounds from Oxidized Lipids (RSOL) by 2,4-Dinitrophenylhydrazine (DNPH) Derivatization in Thermally Oxidized Linoleic Acid and Lard Systems

        Oxidized lipids can decrease the absorbance of DPPH in isooctane. Changes of aldehydes, which can react with DPPH radicals, in oxidized linoleic acid and lard were monitored using 2,4-dinitrophenylhydrazine (DNPH)derivatization and HPLC. As thermal oxidation time increased in linoleic acid, peaks of propanal, pentanal, and hexanal increased proportionally. The correlation coefficient (r) of among DPPH absorbance and peak areas of DNPH derivatized lard for 360 min was −0.941. Peaks of t-2-heptenal and pentanal showed relatively high correlation with the changes of DPPH absorbance during lard oxidation. Quantity of oxidized products with radical scavenging ability in lipids can be determined by DNPH derivatization with HPLC analysis.

        견갑골 체부 골절에서 외측 후방 금속판 고정술의 치료 결과

        목적: 전위가 있는 견갑골 체부 골절에서 외측 후방 금속판을 이용한 내고정술 시행 후 방사선적 및 기능적 치료 결과를 보고하고자 한다. 대상 및 방법: 2007년 3월부터 2017년 5월까지 견갑골 골절로 수술을 받은 40명의 환자 중 견갑골 체부 골절에 대해 외측 후방 금속판 고정을 사용한 13예의 환자를 후향적으로 연구하였다. 수술 전과 수술 후 골편 전위, 각 형성 및 관절와-극간각을 측정하였고, 마지막 추시 시 관절운동 범위와 시각통증점수(visual analogue scale, VAS), disabilities of the arm, shoulder, and hand(DASH) 및 Constant 점수를 평가하였다. 결과: 평균 추시 기간은 17.7개월(범위, 6–45개월)이었고, 견갑와-극간각은 수술 전 평균 23.3°±3.96° (범위, 17.8°–28.1°)에서 수술 후 평균 31.1°±4.75° (범위, 22.5°–40.1°)로 측정되었다. 수술 후 신경 및 혈관 손상, 불유합, 골절 전위, 내고정물 파손, 감염은 일어나지 않았다. 마지막 추시 시 관절운동 범위는 전방 거상 평균 150.5°±19.3°, 외전 평균 146.6°±23.4°, 외회전 평균 66.6°±19.1°, 내회전 평균 61.6°±18.9°로 측정되었으며 VAS는 1.7±1.3점, DASH 점수는 6.2±2.4점, Constant 점수는 86±7.9점으로 측정되었다. 결론: 심한 골절의 전위, 각 형성 및 관절와-극간각의 감소가 뚜렷한 견갑골 체부 골절에서 외측 후방 금속판 고정은 적절한 수술 술기를 통해 골절의 정복 및 안정된 고정이 가능하고 방사선 사진상 만족스러운 골유합 및 방사선 지표의 호전과 양호한 기능적 결과를 얻을 수 있다. Purpose: Scapular body fractures have generally been treated with non-surgical methods. This study reports the clinical and radiological outcomes after lateral-posterior internal fixation for treating displaced scapular body fractures. Materials and Methods: From March 2007 to May 2017, out of 40 patients who underwent internal fixation for scapular fractures, 13 cases of lateral plate fixation of a scapular body fracture were reviewed retrospectively. Preoperative and postoperative displacement, angulation and glenopolar angle (GPA) were measured. The range of shoulder motion, visual analogue scale (VAS), and disabilities of the arm, shoulder, and hand (DASH), and Constant score were assessed at the last follow-up. Results: The mean follow-up period was 17.7 months (range, 6–45 months). The mean preoperative GPA was 23.3°±3.96° (range, 17.8°–28.1°) and the postoperative GPA was 31.1°±4.75° (range, 22.5°–40.1°). Injury to the suprascapular nerve, nonunion, fracture redisplacement, metallic failure, or infection did not occur. At the last follow-up, the mean range of motion was 150.5°±19.3° in forward flexion, 146.6°±2.34° in lateral abduction, 66.6°±19.1° in external rotation, and 61.6°±18.9° in internal rotation. The VAS, DASH, and Constant scores were 1.7±1.3, 6.2±2.4, and 86±7.9 points, respectively. Conclusion: A scapular body fracture with severe displacement, angulation and marked decreased GPA can be stabilized by lateralposterior plate fixation using the appropriate surgical technique with good functional and radiological results.
