Comparison of Internal Quality and Volatile Aromatic Compounds in Several Ligularia spp.

This study was conducted to compare the aromatic compounds and the internal quality such as total phenoliccontents, DPPH activity, and vitamin C contents in two new forma (red type and dalgom) and gom-chwi (Ligulariafischeri). Total phenolic contents were indicated 137.29mg/100g fresh wt. in gom-chwi, 158.40mg/100g freshwt. in red type, and 180.82mg/100g fresh wt. in dalgom, red type and dalgom had higher contents than gom-chwi. DPPH activities were appeared similar result in gom-chwi (74.45%) and red type (75.59%), and dalgom (86.26%)had better than others. In vitamin C contents, gom-chwi and red variety had shown very closed results but dalgomhad best result (1.81mg/100g fresh wt.). Essential oil contents of red type (0.164% of fresh wt.) and dalgom (0.290% offresh wt.) had higher contents than gom-chwi (0.060%). Analysis of major components of essential oil by GC/MSD,identified 43 compounds in gom-chwi, 44 compounds in red type, and 31 compounds in dalgom. N-containing compoundonly detected in dalgom. Comparison of six aromatic compounds for fragrance (a-pinene, β-pinene, β-phellandrene,a-phellandrene, 3-carene, and limonene) was indicated red type had higher contents and dalgom had lowercontents than gom-chwi. Dalgom had higher contents of total phenolic, DPPH activity, vitamin C, and essential oil thanred type and gom-chwi. This result had shown the dalgom had better characters for new cultivar.
저장온도와 기능성 필름의 기체 투과도가 다양한 크기의 퉁퉁마디 신선편이의 저장성에 미치는 영향

These studies were identified the effect of four types of non-perforated breathable (NPB) packing filmand three sizes on storage ability of fresh-cut for ready to eat packaging at 5℃ for 25 days and 10℃ for 15 days storagein Salicornia herbacea. The fresh weight loss was less than 2% in every films at 5℃ condition after 25 daysstorage, and the 10℃ also had same result on 15 days storage except 100,000 cc NPB film. Compare with storageafter 15 days, storage condition at 5℃ had shown better result under the 1% fresh weight loss rate. The 5,000 cc and5℃ condition had been shown the characteristics of MA packaging in carbon dioxide and oxygen concentrations. The ethylene concentration in vacuum film was higher 10 to 100 times than in NPB film treatments during storage. But ethylene concentration was not statistically significant differences among size treatments. Every conditions hadbeen measured the anti-oxidant activity by DPPH method after storage at 5℃ for 25 days and 10℃ for 15 days. S. herbacea at 5℃ had been more than twice of activity compare with that at 10℃. 100,000 cc NPB film had beenhigher contents of anti-oxidant activity at 5℃ and 10℃. As the fresh-cut sizes, 3 cm and 5 cm sizes had changeddepending on film types but 10 cm were not effected by the film types in the DPPH activity. When panel test hadbeen tried to measure the visual quality and off-flavor after storage, 5℃ with a filme of 5,000 cc treatment had establishedhigher value than other treated conditions. As these results, it’s may be suggested that the 5℃ with 5,000 ccnon-perforated breathable film for MA storage in Salicornia herbacea at fresh cut distribution system. Fresh cut size10 cm with 100,000 cc NPB film also had the good quality for 15 dyas storage at 10℃, and this result can be appliedfor short term distribution system in Korea. 최근 신선 유통되는 퉁퉁마디는 식물 체내 수분 함량이 높고 조직이 단단하지 못해 저장성이 낮은 식물로MA 저장을 통해 저장성을 향상시키고, 최근 새롭게 개발된 비천공 breathable(NPB) 필름을 적용하여 각기5℃와 10℃로 저장하여 실제 유통 수준에서의 영향을알아 보았다. 또한 신선 편이 제품으로의 유통 가능성을알아보기 위하여 3cm, 5cm, 그리고 10cm로 각각 절단하여 저장성을 상호 비교하였다. 그 결과 10℃에 비하여5℃ 저장 조건이 NPB 필름을 적용 하였을 경우 저장력이 우수한 결과를 보였는데 저장중 생체중의 감소율은5℃에서 25일 저장 종료일까지 2% 이내의 결과를 보였고 10℃에서는 저장 15일 후에 100,000cc NPB 필름을제외하고 2% 이내의 감소율을 나타내었다. 5℃와 동일기간인 15일을 기준으로 비교하면 5℃가 1% 이내의 감소율을 나타내 상대적으로 우수한 결과를 보였다. 동일기간 동안 측정한 이산화탄소와 산소 농도의 변화에서는5,000cc NPB 필름이 MA 저장시의 특징을 보였다. 저장중 포장내 에틸렌 농도는 진공 필름에서 NPB 필름처리들보다 10~100배까지 높았으나, 크기별 차이에 통계적 유의성은 없었다. 각기 5℃에서 25일간 그리고 10℃ 에서 15일간 저장한 이후 항산화 활성을 측정, 상호 비교한 결과 5℃가 10℃보다 두배 이상의 항산화 활성도를 나타내었고 100,000cc NPB 필름에서 높은 활성도를보였고 크기별로는 10cm 크기가 활성도가 낮아지지 않는 것으로 나타났다. 저장 종료후 관능검사를 통한 외관품질과 이취를 평가한 결과 5℃ 처리와 5,000cc 필름을적용한 구에서 상대적으로 높은 수준으로 나타났다. 본 실험을 통하여 5℃, 저장시 5,000cc NPB 필름을MA 저장에 적용하는 것이 타당하다는 결과를 얻을 수 있었다. 다만 실제 유통 현장에서 사용되는 온도조건이 10℃ 임을 고려하면 10℃ 저장 시 10cm 크기에는 100,000cc NPB 필름이 단기유통이라는 측면에서 적용이 가능할 것으로 판단되었다.

This study was conducted to compare the quality characteristics between Yanngu, Gangwon and the other production in Ligularia stenocephala and Asparagus officinalis. Three Yanggu products, Yanggu A, B, and C, were selected for this research in both crops. Chlorophyll, vitamin C, fragrance, fresh weight, color, and amino acid contents were compared for quality characteristics. Ligularia stenocephala showed higher vitamin C contents than the other product but chlorophyll content did not show any differences. In the fragrance, Yanggu had little less total aromatic constituents than other locations but Yanggu products had better composition of major essential aromatic compounds. Asparagus officinalis showed better fresh weight and stem diameter as well as amino acid contents which had got more higher concentration than other location product. But among the Yanggu products, which had different levels of amino acid, Yanggu C was less than any other location. Color and firmness did not show any difference.
몇 가지 산채 어린잎 채소의 기능성 및 방향성 성분 함량 비교

본 연구는 산채 어린잎으로 개발 가능한 왕고들빼기 선향(Lactuca indica var. laciniata H. ‘Seonyang’), 왕고들빼기 고담(Lactuca indica var. laciniata H. ‘Godam’), 큰다닥냉이(Lepidium sativum L.), 비름(Lactuca indica var. laciniata H.), 곤드레(Cirsium setidens L.), 곤달비(Ligularia stenocephala L.)의 6개 어린잎 산채를 대상으로 기능성 성분 함량과 방향성 성분을 알아보고자 수행되었다. 총페놀 함량, 플라보노이드 함량, 총카로티노이드 함량, 안토시아닌 함량 분석의 결과 곤드레와 곤달비에서 가장 우수한 결과를 나타내었다. 그러나 DPPH scavenging activity에서 유의적인 차이를 나타내지 않았다. 방향성 성분을 분석 비교한 결과 6개 종류의 어린잎 산채 대상 식물에서 총 234개-297개의 피크가 관찰되었다. 일반적으로 방향성 성분은 GC 분석시 빠른 시간에 추출되는 가벼운 분자량을 가지는 성분이 주를 이루는데(α-pinene, β-phelleandrene, β-pinene, limonene, camphene, linalool의 5종), 본 연구의 결과 어린잎 산채 대상 식물에서는 caryophyllene 과 같은 비교적 분자량이 큰 물질이 다량으로 측정되었다. 따라서 이러한 결과는 본 연구에서 선발된 어린잎 산채가 우리나라의 선호하는 식습관 또는 방향성 특징에 부합하는 것으로 판단되었다. 특히 곤드레와 곤달비는 전체의 10%에 이르는 caryophyllene 함량을 나타내어 방향성 성분으로 판단하는 우수한 작물로 판단되었다. This study was conducted to compare the concentration of functional components such as total phenolic, flavonoid, cartenoid, anthocyanin, and DPPH free radical scavenging activity and volatile concentration in several wild vegetables as Lactuca indica var. laciniata H. ‘Seonyang’, Lactuca indica var. laciniata H. ‘Godam’. Lepidium sativum L., Lactuca indica var. laciniata H., Cirsium setidens L., and Ligularia stenocephala L. Results of the total phenolic, flavoniod, carotinoid and anthocyanin concentration were shown as highest in Cirsium setidens L. and Ligularia stenocephala L. But the DPPH scavenging activity was not shown significantly difference among six wild baby vegetables. As the results of compared volatile components in wild baby vegetables, were detected to total 234-297 peaks. Generally, major volatile components were detected small molecular weight such as α-pinene, β-phelleandrene, β -pinene, limonene, camphene, linalool, but these results were shown the major component as caryophyllene. Followed the result, Cirsium setidens L. and Ligularia stenocephala L. were prefered wild baby vegetables for Korean food culture and aromatic characteristic.

This study was conducted to compare the quality characteristics between Yanngu, Gangwon and the other productions in melon and watermelon. Three Yanggu products, Yanggu A, B, and C, were selected for this research in both crops. Soluble solid, % of citric acid, color, firmness and vitamin C contents were compared for quality characteristics. The melon was showed better soluble solid contents and firmness than the other location product. These two factors were important in marketable quality. Yanggu watermelons did not appear the significant differences in color, % of citric acid contents, and vitamin C but it had higher contents in soluble solid and firmness than the other location product. In this research, Yanggu, Gangwon province products showed the best results in soluble solid contents and firmness, these factors indicated the local product had better sales values.
