We investigated the antioxidant, physicochemical, and sensory characteristics of dried type sodium-reduced bibimbap using dandelion complex powder (DCP). DCP is known to add moisture to the skin and relieve symptoms of atopic dermatitis. The sodium content of the standard sample was 1,110.87 mg per serving. The sodium was significantly reduced by 30%, resulting in 762.62 mg of sodium for the reduced sodium group (p<0.05). The ash contents of the standard sample group with DCP showed the highest value (3.17%) in all samples and was affected by minerals of DCP (p<0.05). The total flavonoid contents and ABTS radical scavenging activity, indicators of antioxidant, anticancer and antibacterial activities, showed significantly high activities with addition of DCP (p<0.05). In the sensory results, bulgogi and savory flavor of the samples with DCP showed significantly higher values, and samples with DCP received the highest scores for after-taste. All samples were confirmed to be microbiologically safe according to the food code applied to food manufacturers. Pathogenic microorganisms tests were either negative or not detected in all samples.
Laccase was applied to improve the drying speed of urushi lacquer to confirm a potential use of laccase as an enzyme additive. As a result of applying laccase of lacquer and white-rot fungi, drying times for both Korean and Chinese specimens were reduced. All of the specimens to which laccase was applied were dried(set to touch) within 60 minutes from the start of the drying, and the drying rate was improved as the content ratio of laccase increased. In addition, although there were differences in hardening drying time between Korean and Chinese lacquers, it was confirmed that hardening drying took place even at room with temperature of 20 ± 2 °C and humidity of 55–60%. As a result of lacquer layer analysis of the dried specimens, the drying speed was improved when the content ratio of laccase to urushiol was 5:1, and there were no differences in chromaticity and adhesion, confirmed that the layers were stable. It was observed that the gloss of both Korean and Chinese lacquers were reduced when laccase was applied. However, according to the analysis of FT-IR and Py-GC/MS, the changes in components were not as sufficient to affect the physical properties. Thus, its applicability as an additive was confirmed.
담합 적발확률을 추정하는 목적은 경쟁법 변화에 따른 영향을 측정하여 최적의 경쟁법으로 개선함에 있다. 본 연구에서는 담합 적발확률에 대한 정의와 담합 적발확률 추정을 위한 베이지안 확률 모형을 개발한다. 개발한 모형을 1979년부터 2010년까지의 미국자료를 통해 실증 분석한다. 분석한 결과는 경쟁법 변화에 민감하게 반응하였음을 나타냈다. 특히, 1978년에 도입된 자진신고자 감면제도의 효과를 정책모의분석을 통해 분석한 결과 매우 큰 것으로 나타났다.
