        자동산화 및 가열산화에 대한 압착 및 혼합 올리브유의 산화안정성

        압착 및 혼합 올리브유의 총토코페롤 및 총페놀 함량을 비교 분석하고, 아울러 빛의 존재 유무에 따른 자동산화 및 가열산화에 대한 산화안정성을 대두유와 비교 검토하였다. 압착 올리브유, 혼합 올리브유 및 대두유의 총토코페롤 함량은 각각 15.7, 11.2 및 80.7 ㎎/100 g이었다. 이들의 총페놀 함량은 각각 10.4, 1.6 및 0.5 ㎎/100g이었다. 암소하에서 자동산화에 의한 산화안정성은 압착 올리브유>혼합 올리브유>대두유 순이었다. 압착 올리브유, 혼합 올리브유 및 대두유의 평균 온도계수는 45~65℃의 온도범위에서 각각 1.73, 1.83 및 1.64이었으며, 활성화에너지는 각각 26.86, 29.49 및 24.07 KJ/㏖이었다. 빛의 존재하에서 자동산화에 대한 산화안정성은 대두유>혼합 올리브유>압착 올리브유의 순이었으며, 이들의 유도기간은 각각 15.3일, 16.4일 및 18.0일이었다. 가열산화에 대한 산화안정성은 혼합 올리브유>압착 올리브유>대두유의 순이었다. Total tocopherol and phenol contents were determined for virgin and pure oilve oil, and their autoxidation and thermal oxidation were compared with those of commercial soybean oil, in the presence or absence of fluorescent light. The total tocopherol contents of virgin, pure olive oil, and soybean oil were 15.7, 11.2, and 80.7 ㎎/100 g, respectively. Their total phenol contents were 10.4, 1.6 and 0.5 ㎎/100 g, respectively. In autoxidation under dark place at 45℃, the oxidative stability of the substrate oils decreased in order of virgin oilve oil, pure olive oil, and soybean oil. The average temperature coefficients of the virgin, pure olive oil and soybean oil in the range of 45~65℃ were 1.73, 1.83 and 1.64, and the activation energies were 26.86, 29.49, and 24.07 KJ/㏖, respectively. In temperature range of 45~65℃, pure olive oil was the most susceptible to temperature change, whereas soybean oil the least. In autoxidation under fluorescent light at 45℃, the oxidative stability of substrate oils decreased in the order of soybean oil, pure olive oil, and virgin olive oil. In thermal oxidation at 180℃, the oxidative stability of substrate oils decreased in order of pure olive oil, virgin olive oil, and soybean oil.

        용매별 정향 추출물의 항산화효과

        본 연구는 정향추출물(물, 메탄올 및 에테르)의 항산화효과를 리놀레인산 기질 및 리놀레인산 에멀젼기질에서 비교, 검토하였다. 물, 메탄올 및 에테르용매에 따른 정향의 총페놀 함량은 23.1, 42.8, 34.9%로 메탄올>에테르>물 추출물 순이었다. Eugenol 함량은 메탄올 추출물의 경우 6.1%이었고 에테르 추출물 8.1%이었으며 물 추출물에서는 검출되지 않았다. 정향 추출물의 DPPH 소거효과는 물 추출물 경우 36.1%, 메탄올 추출물의 경우 30.9%, 에테르 추출물의 경우 29.7%로 나타났다. 리놀레인산 기질에서의 항산화효과는 BHT>에테르 추출물>α-tocopherol>메탄올 추출물>물 추출물의 순이었다. 리놀레인산 에멀젼 시스템에서의 항산화 효과는 BHT>물 추출물>메탄올 추출물>에테르 추출물>α-tocopherol의 순이었다. This study was investigated on antioxidant activities of water, methanol and ether extracts of clove. The extraction yields of water, methanol and ether extracts were 34.7, 21.4 and 17.0%, respectively. Total phenolic contents of water, methanol and ether extracts were 23.1, 55.7 and 34.9%, respectively. Eugenol contents were 6.1 and 8.1% in methanol and ether extracts, but it was not detected in water extract. Electron donating abilities of water, methanol and ether extract were 36.1, 30.9 and 29.7%, respectively. In linoleic aicd system, the ether extract showed more high antioxidant activity than water and methanol extracts. The antioxidant activity of ether extract was almost equal that of α-tocopherol, but weaker than that of BHT. In linoleic acid emulsion system, the water extract showed higher or stronger antioxidant activity than methanol and ether extracts. Antioxidant activities in linoleic acid emulsion substrates were in order of BHT>water extract>methanol extract>ether extract>α-tocopherol.

        석류씨 추출물의 항산화 및 항균활성

        This study was investigated on antioxidative and antimicrobial activities of PSW(pomegranate seed water extract), PSE(pomegranale seed ethanol extract) and PSO(pomegranate seed oil). 'rile extraction yields of PSW, PSE and PSO were 28,9, 13.0 and 4.9%, respectively. Total phenol contents of PSW, PSE and PSO were 47, 78 mg/g(dry basis) and 40 mg/g, respectively. Electron donating abilities of PSW, PSE and PSO at 1,000 ppm were 18.8, 28.5 and 9.7%, respectively. Antioxidative activities in linoleic acid substrates at 500 ppm were in order of 1'SE > a-tocophcrol > PSW > PSO. Antioxidative activities in linoleic acid emulsion substrates at 200 ppm were in order of α-tocopberol > PSE > PSW > PSO, In antimicrobial activity, PSO showed growth inhibition effect against Micrococcus luteus, Salmonella enteritidis and PSW showed growth inhibition effect against Bacillus cereus, Escherichia coll. Whereas antimicrobial activity' of PSE was not observed. The nitrite-scavenging abilities of PSW, PSE and PSO at 2,000 ppm were 27.5, 23.7 and 39.6%, respectively. And the SOD-like activities of PSW, PSE and PSO at 1,000 ppm were 15.9, 34.9 and 0.10%, respectively.
