        Effect of Dietary Processed Sulfur Supplementation on Texture Quality, Color and Mineral Status of Dry-cured Ham

        This study was performed to investigate the chemical composition, mineral status, oxidative stability, and texture attributes of drycured ham from pigs fed processed sulfur (S, 1 g/kg feed), and from those fed a basal diet (CON), during the period from weaning to slaughter (174 d). Total collagen content and soluble collagen of the S group was significantly higher than that of the control group (p<0.05). The pH of the S group was significantly higher than that of the control group, whereas the S group had a lower expressible drip compared to the control group. The S group also showed the lower lightness compared to the control group (p<0.05). In regard to the mineral status, the S group had significantly lower Fe2+ and Ca2+ content than the control group (p<0.05), whereas the proteolysis index of the S group was significantly increased compared to the control group (p<0.05). The feeding of processed sulfur to pigs led to increased oxidative stability, related to lipids and pigments, in the dry-cured ham (p<0.05). Compared to the dry-cured ham from the control group, that from the S group exhibited lower springiness and gumminess; these results suggest that feeding processed sulfur to pigs can improve the quality of the texture and enhance the oxidative stability of dry-cured ham.

        The purpose of explorary study on employment environment and value added taxation for Small and midium-sized Foodservice company. Tax incentives to review ways to expand the scope of workers hired through problem-solving and the development of small and medium companies looking for ways to food service industry is aimed. Food service companies in Korea in 2016, 650,890 companies and 1,895,511 people in food service companies nearly working, the service industry is quite a lot of employment being made , and compared with other industries for many kinds of capital because the barriers to entry relatively low, so a lot of people interested in retirement has founded is also a business. However, In reality, Compete with numerous companies in addition to difficulties in recruitment and frequent turnover of personnel issues, avoiding the problem of workers five insurance, credit card payments or cash receipts due to the exposure to 100% of sales, excess VAT paid, and many management which is facing difficulties, sleep. Case analysis, value-added tax rate, labor cost ratio is higher, and daily employment rate is also very high, and five social insurance evasion was widespread phenomenon. This employment environment and normal operation of social insurance and tax revenue increases, frequent turnover of employees foodservice industry troubleshooting problems and low self-esteem, eating a variety of effects, including the development of the industry seems to be able to reap.

        서비스 종업원과 고객이 지각하는 조직분위기가 통제지각과 정서적 반응에 미치는 영향 : 서비스접점 통제지각을 중심으로

        본 연구는 서비스 종업원과 고객이 서비스접점에서 지각하는 접점통제에 대하여 논의하고, 이들 통제 지각에 영향을 미치는 조직 분위기(organizational climate perceptions)와 이들 통제 가 효과를 미치는 정서적 결과를 검토한다. 우선 서비스접점에서 종업원이 지각하는 접점통 제는 서비스지향적 분위기, 업무효율적 분위기와 같은 분위기 지각으로부터 어떤 영향을 받 으며, 그들의 직무만족과 고객만족과 서비스품질에 대해서는 어떠한 영향을 미치고 있는지 를 파악한다. 그리고 고객의 통제지각과 관련하여, 서비스접점의 물리적 환경이나 서비스 종 업원이 보여주는 상호작용 공정성으로부터 어떤 영향을 받으며 고객만족과 서비스품질 평가 에 어떤 결과를 가져다주는지를 검토한다. 또한 서비스접점에서의 종업원-고객 상호접촉 (employee-customer interface) 특성을 고려하기 위해 고객과 종업원 통제지각 사이의 연관성 을 파악하고 이들 통제 변수가 상대방의 정서적 평가에 대해 어떤 영향을 미치는지를 확인 한다. 서비스 종업원과 고객 자료를 동시에 고려한 실증분석을 통하여 이들 당사자들의 서 비스접점에 대한 통제지각은 서비스접점에서 중요한 역할을 하고 있음을 확인할 수 있었다. 구조방정식 결과에 의하면 조직 분위기 변수는 종업원과 고객의 통제지각에 유의한 영향을 미치는 것으로 나타났다. 그리고 종업원과 고객의 서비스접점 통제지각은 정서적 결과에 중 요한 영향을 미치고 있음을 확인하였다. This paper explores the conceptual characteristics and construct about the perceived control over the service encounter simultaneously. This study examines the climate perceptions factors and the perceived control on emotional effects. In the concrete, the first, the service oriented climate and work efficiency climate are related to the job satisfaction, the customer satisfaction, and the service quality through the mediation of a service provider's self-reported perceived control of the service situation. The second, physical environment and interaction fairness are related to a customer satisfaction and service quality through the mediation of a service customer's self-reported perceived control of the service situation. And the last, interaction fairness was proposed to affect directly a customer satisfaction of the service situation. In the empirical study which used dyad of service provider and customer of the service situation, structural equation modeling presented a well-fit evidence that the perceived control in service encounter and emotional effects are influenced by their proposed antecedents. It was found that the organizational service climate factors have direct affect on the customer and employee's perceived control in the service encounter, and the customer and employee's perceived control impacts on emotional effects.

      • Acridine based exciton blocking material for high efficiency and stable blue phosphorescent organic light-emitting diodes

        An acridine based high triplet energy hole transport material, 1,3-bis(9,9-dimethylacridin-10(9H)-yl)benzene (mAP), was synthesized for increased efficiency and lifetime. The mAP hole transport material was measured to have high triplet energy of 3.04 eV and good hole transport properties by the acridine moiety. The invention of mAP as the hole transport layer in blue phosphorescent organic light-emitting diodes showed a twofold quantum efficiency and kept the lifetime of the reference device.

        리더십이 인사공정성 인식에 미치는 영향에 관한 연구 : 공공기관을 대상으로

        본 연구는 공공기관을 대상으로 리더십 유형이 승진, 포상, 징계 등 인사와 관련된 의사결정의 절차와 결과에 대한 부하직원들의 공정성 인식에 미치는 영향을 분석하였다. 공공기관을 공기업형, 위탁집행형, 기금관리형, 연구형 등 4가지로 분류하고, 공공기관 유형별로 리더십 행위가 인사공정성 인식에 미치는 영향의 차이가 존재하는지를 알아보고 그 특징을 분석하였다. 전체 공공기관을 대상으로 분석한 결과 변혁적·거래적 리더십 유형이 부하직원들의 인사공정성 인식에 유의미한 영향을 미치는 것으로 나타났다. 그렇지만 유형별로 분석해보면 조직의 규모나 업무특성의 차이로 인해 리더십 행위가 인사공정성 인식에 미치는 영향은 상이하다는 결과가 도출되었다.

        Influence of Citric Acid on the Pink Color and Characteristics of Sous Vide Processed Chicken Breasts During Chill Storage

        Chicken breast dipped with citric acid (CA) was treated by sous vide processing and stored in a refrigerated state for 0, 3, 6, 9, and 14 d. A non-dipped control group (CON) and three groups dipped in different concentrations of citric acid concentration were analyzed (0.5%, 0.5CIT; 2.0%, 2CIT and 5.0%, 5CIT; w/v). Cooking yield and moisture content increased due to the citric acid. While the redness of the juice and meat in all groups showed significant increase during storage, the redness of the citric acid groups was reduced compared to the control group (p<0.05). The percentage of myoglobin denaturation (PMD) of the CA groups was also increased according to the level of CA during storage. Total aerobic counts, Enterobacteriaceae counts, volatile basic nitrogen and thiobarbituric acid reactive substances (TBARS) were generally lower in the citric acid-treated samples than in untreated ones, indicating extended shelf life of the cooked chicken breast dipped in citric acid solution. The shear force of the 2CIT and 5CIT groups was significantly lower (p<0.05). The findings indicated positive effects in the physicochemical properties and storage ability of sous vide chicken breast at 2% and 5% citric acid concentrations.

        Dibenzothiophene-dioxide acceptor based thermally activated delayed fluorescent emitters for color tunable organic light-emitting diodes

        2,8-Bis(9,9-dimethylacridin-10(9H)-yl)dibenzo[b,d]thiophene 5,5-dioxide (AcDBTO) was developed as adibenzothiophene-dioxide acceptor based emitter for use as a thermally activated delayedfluorescentemitter for color tunable organic light-emitting diodes. The dibenzothiophene-dioxide acceptor wasmodified with two strongly electron donating dimethylacridine donors, which enabled delayedfluorescence behavior in the AcDBTO emitter. The AcDBTO based device demonstrated quantumefficiency of 14.5% as a green delayedfluorescent device and wide emission wavelength from 502 nm to525 nm with little change of the quantum efficiency
