        피부미용 관련 건강기능식품 국내 특허 등록현황

        피부미용은 피부의 신진대사 및 생리활성을 촉진시키고 영양공급을 통해 건강하고 아름다운 피부를 관리하는 행위이며, 피부에 직접적인 처리를 하는 화장품과 식품을 섭취함으로써 주름 개선을 비롯한 피부미용 효과를 얻으려는 건강기능식품이 이러한 목적에 사용되고 있다. 피부미용 관련 건강기능식품은 피부를 구성하고 있는 표피, 진피, 피하조직을 유지하고, 나이에 따른 내인성 노화, 자외선에의해 유발되는 외인성 노화를 개선하는 데 유효한 기능성식품이다. 피부미용 관련 건강기능식품 분야는 크게 발전하고 있는 기능성 화장품에 비해 관심이나 연구가 적은 편이지만, 표피의 개선으로는 한계가 있기 때문에 식품을 통한 섭취로 진피층을 유지함으로써 피부미용을 개선하는 이 분야는 관련 연구와 기술개발이 활성화 되어 관련 특허들이 출원되어 다양한 분야의 실용화가 진행될 것으로 기대된다. 우리나라는 선진국에 비해 늦게 피부미용 관련 건강기능식품 연구가 시작되었으며, 산업적으로 실용화 하기 위한 연구도 함께 진행되어 관련 기술에 대한 특허가 활발하게 출원되고 있다. 본 연구는 최근 관심이 집중되고 있는 피부미용 관련 건강기능식품에 관련된 특허기술에 대해 정리함으로써 관련분야의 연구자들에게 작은 도움이 되고자 2011년까지 대한민국 특허청에 출원 등록된 국내 특허를 한국특허 정보원이 소장한 KIPRIS 데이터베이스를 이용하여 검색의 키워드는 ``피부미용, 건강기능식품``으로 검색하여 정리하였다. 피부미용 관련 건강기능식품이 주로 이용되는 산업분야는 식품, 식료품, 음료, 관련분야에서 활발하게 특허출원이 되고 있는 것으로 나타났다. 검색된 특허는 총 1,120건으로 많은 특허들이 출원되었으나, 최종적으로 등록된 특허는 370편이었으며, 산업분야별 출원 등록건수를 보면 식품 식료품 또는 비알코올성 음료 그 조제 또는 처리분야(A23L)가 135건으로 가장 많았고, 다음으로 식물 의약품 및 화장품관련 기술분야(A61K)가 112건, 미생물 또는 효소에 관련된 분야(C12N)가 63건, 이종원자고리 화합물 분야 (C07D)가 44건, 원예 또는 해조재배 임업 분야(A01G)에서 16건 순이었다. 이중에서 기구, 장치, 화장품류를 제외하고 중요하다고 판단되는 각 분야의 중요한 등록특허들을 선별하여 149편을 게재하였다. Proper skin care promotes good metabolism and the biological activity of skin, helps maintain the skin in a healthy and beautiful state when combined with nutritional nourishment. Health functional foods are being used for the purpose of enhancing efficient skin care. Health functional foods related to skin care maintain the epidermis, dermal fibroblast layer and subcutaneous tissue that form the skin. Efficient functional foods alleviate the signs of endogenous aging that come with getting older and exogenous aging caused by sunlight. Even though the field of skin care related to health functional foods has received less attention and been the subject of less research compared to functional cosmetics which are developing widely, this area of skin care that maintains and improves the layer of dermal fibroblast through the intake of food, is expected to progress with the commercialization of products in many fields when the related technical research development is galvanized and the related patents are applied for. Research into health functional foods related to skin care in Korea started rather late in comparison to other advanced countries where patents for relevant techniques have been applied for since 1990`s together with research conducted on how they might be used for practical purposes. This study used the key words ``skin care, health functional food`` to search for Korean patents that have been applied for at the Korean Intellectual Property Office from 1983 to 2011 using the KIPRIS database, in order to help researchers in the related fields by organizing the patented formulas for health functional foods for skin care which have gained attention recently. According to the number of registrations in each industry field, the total number of patents was 1,120 we screened the major patents among them, the field with the largest number was food foodstuff non-alcoholic beverage and preparation or treatment(A23L) with 135, then natural plant medicine & medical supplies and cosmetics(A61K) with 112, microorganisms or enzymes(C12N) with 63, heterocyclic compounds(C07D) with 44, horticulture or cultivation of sea weeds, forestry(A01G) 16 times, listed from the highest to the lowest number of applications. It has been revealed that food, foodstuff, non-alcoholic beverage and preparation or treatment (A23L) was the industry field where the most patents for health functional foods related to skin care were registered.

        BWS 기법을 이용한 케어푸드 선택속성에 관한 연구

        Care food is attracting attention as a new market that encompasses all age groups as the awareness of health food spreads. Hence, the study attempted to analyze which attributes are most important to consumers when choosing care food. As well, the study aims to find out what differences exist in the importance of attributes according to demographic characteristics. To carry out the study, seven key attributes were derived based on previous literatures related to care food and aging-friendly home meal replacement. A total of 300 questionnaires were distributed from June 27 to July 16, 2022, but only 261 were used for the analysis. In order to draw priorities of care food attributes, best-worst scaling (BWS) was used. The result of the study shows that flavor as the most important attribute in consumption of care food, and nutrition, digestibility and safety were considered important in order. On the other hand, ingredient, convenience and price showed relatively low importance in consumption of care food. The implications found in the study are expected to be useful in providing primary information for establishing strategies to strengthen the development or improvement of care food products.

      • 어린이집 어린이의 식생활 실태 조사를 통한 영양 개선 방안 연구

        A survey study was carried out to investigate dietary practices of preschool children aged 1 to 6 in order to present concrete nutritional improvement proposals. Two kinds of questionnaires were completed by 250 mothers and 50 menu-planners at 50 day care centers. The contents of questionnaires were composed of eating behaviors and dietary patterns of children at day care centers and at home. nutrition attitude of menu-planners and the mother, practices of nutrition education, and food preference and food intake frequencies of children. Descriptive analysis were applied to the continuous data as well as categorical data. The maximum error ratio of 5% was selected for testing of the hypothesis. The results are summarized as follows: Over 90% of personnel in charge of the menu-planning were nonprofessional workers who had insufficient knowledge in nutrition and foods. 63% of children exhibited some dietary problems. Food prejudices which showed the highest score was vegetable. Rice, soup, and vegetable dishes were eaten les frequently than snack foods and beverages at both day care centers and home. To solve the problem of skipped breakfast, nutritional improvement of breakfast and snacks at the day care centers and nutritional education about regular eating behavior for children or teachers were needed. According to children's RDA of nutrition for each age group, menu planning and improved diets for children at day care centers centered around taste, portion size, and shapes of foods that are appropriate for children are needed. The followings are nutritional improvement proposals for preschool children; For good dietary habits of preschool children, development & implementation of efficient nutritional education programs and the introduction of nutritionally balanced traditional korean foods are recommended at day care center. Dietitians should be in charge of developing a well-balanced menu reflecting children's food preferences.

        관악구 보육교사의 배식서비스 참여 및 식사지도 실태

        This study was conducted to investigate how child-care teachers participate, practice mealtime instruction, and perceive difficulties in food service, focusing on comparison between the teachers caring two different age groups: children younger than three years (Younger Group) and those three years or older (Older Group). Questionnaires were distributed to 151 child-care centers in Kwanak-gu, Seoul, Korea during December, 2011. Only the data from 25 child-care centers, where two respective teachers in charge of Younger Group and Older Group completed the questionnaires, were analyzed. The results showed that there was no difference in terms of child-care teachers` participation in food service practice between the two groups, except for serving method; ‘Pre-plated’ serving was used significantly more often in Younger Group, whereas ‘Line-up’ serving was used in Older Group. Approximately, three quarters of the child-care centers had policies or guidelines on mealtime instruction. During mealtime, child-care teachers tended to use frequently verbal instructions such as “sit up straight when you eat” about eating manner, “don`t be picky with your food” about eating habit, and “wash your hands before eating” about eating procedure in both the groups. There was no statistically significant difference regarding child-care teachers` perceived difficulties in food service between the two groups. These results indicated that child-care teachers` participation and mealtime instruction in food service did not differ between the two age groups, although children`s development of digestion and eating skill differed by age. Therefore, training should be provided to child-care teachers about food service practices and mealtime instruction appropriate to children`s age. (Korean J Community Nutr 18(2): 112~124, 2013)

        자기 배려 주체의 구성 원리, 음식과 양생술-푸코의 자기 배려 윤리를 중심으로-

        Discussions on Food Ethics can be divided into ‘environmental and food’ problems, ‘justice and food’ problems, and ‘human and food’ problems. The previous studies have sought to elucidate the reasons why food is ethical, focusing on the environmental point at issues that have occurred, and have emphasized the need for food ethics regarding social justice and distribution, including fair trade. On the other hand, exploring the intrinsic focuses of ‘human beings and food’ were not researched independently. This paper attempts to clarify the reason why the problem of 'food and human' is inseparable for some reason based on the third discussion of these three research points, It also discusses why food should be subject to ethical discussion based on Foucault 's consideration of the regimen, and why it is a practice of self - management that must be accompanied when the issue of food is the subject of self. Finally, I argue that Foucault's self-care ethics can provide the theoretical grounded of food ethics by the preceding discussions. 음식 윤리에 대한 논의들은 크게 환경과 음식의 문제, 정의와 음식의 문제, 인간과 음식의 문제로 구분할 수 있다. 기존의 연구들은 이러한 사건이 발생하게 된 환경적인 문제들을 중심으로 음식이 윤리적 논의가 되는 이유에 관하여 밝히고자 노력해왔고 공정무역을 비롯한 사회적 정의와 분배의 관점에서 음식 윤리의 필요성을 강조해왔다. 그에 반해 인간과 음식의 본질적 문제에 대해서는 단독적인 주제로 다루지 않았다. 이 글은 이 세 가지 연구의 논점 중에 세 번째 논의를 기반으로 ‘음식과 인간’의 문제가 어떤 이유에서 불가분의 관계에 있는지를 밝히고자 한다. 또 섭생에 관한 푸코의 고찰을 바탕으로 음식이 왜 윤리적 논의의 대상이어야 하는지 또 이때 음식의 문제가 ‘자기’라는 주체를 구성할 때 반드시 동반되어야 할 자기 관리의 실천법인 이유에 관하여 논한다. 마지막으로 나는 앞선 논의들에 근거하여 푸코의 자기 배려 윤리가 음식 윤리의 이론적 토대를 제공할 수 있음을 주장할 것이다.

        안양시 일부 보육시설 영유아의 당류 함유식품 섭취 및 식습관 실태 -보육시설 영유아의 부모 대상 설문조사-

        The purpose of this study was to provide the basic information for developing sugar related nutrition education programs for children in child-care facilities and their parents. The results showed that the total score of parent’s dietary attitudes towards sugar-rich foods was 17.94 and the total score of parent’s nutritional knowledge was 3.67. A positive relationship was observed among items of parent’s dietary attitudes (p<0.01), and some correlations were also observed between the total score of parent’s nutritional knowledge and the total score of parent’s dietary attitudes (p<0.05 or p<0.01). The total average score of children’s eating behaviors for sugar-rich foods was 23.98, and the item with the highest score was ‘I often eat candy, chocolate and jelly’. For children, food that received the highest preference was chocolate, and soft drinks received the lowest preference. The most frequently consumed food item was candy or caramel, and the least frequently consumed food item was soft drinks. There were positive correlation among the total score of children’s eating behaviors, food preferences, and food intake frequency (p<0.01). When parent’s tried to reduce the sugar intake, children’s total score of eating behaviors (p<0.001) and food intake frequency (p<0.001) for sugar-rich food was lower. We conclude that parent’s dietary attitudes may influence children’s eating behaviors, food preferences, and food intake frequency for sugar-rich foods.

        고령친화식품의 정책 및 산업기술 동향

        Korea has entered into an aged-society in 2018. If this trend continues to increase, it is expected that a superaging society will take place by 2026. Therefore, Korea is placed in the situation of becoming the world’s fastest aging nation as it becomes a super-aging society from an aged-society in twenty-six years. In order to provide an effective supply of nutrition for the socially weak, Japan developed a variety of foods with food texture improvements. Germany improved accessibility for meal service development. Senior-friendly food is a softened food or a highly concentrated drink, which is considered a texture-modified food, for the elderly with eating disorders to digest food more easily by making food particles smaller. Varying food processing techniques such as freeze-thawing enzyme impregnation, high-pressure processing, super-heated steam processing, 3D food print, and others used to produce texture-modified foods.

        여성 중심 도시농업의 공동체경제와 지역 돌봄 : 서울시 금천구 사례를 중심으로

        이 연구는 서울 금천구에 있는 여성들의 도시농업 공동체를 사례로 하여 여성 중심 도시농업 공동체의 특성을 살펴보고 그 의미를 공동체경제와 공동체적 돌봄의 관점에서 분석한 것이다. 여성들의 도시농업 공동체가 텃밭강사라는 일자리 사업으로부터 출발하여 지역에서 도시농업 단체를 결성하였고 도시농업과 먹거리라는 여성들의 일을 기반으로 공동체 활동과 지역 돌봄을 실천한다는 점에서, 돌봄 윤리에 기반한 공동체경제와 공동체적 돌봄의 측면에서 분석하였다. 본 연구의 내용은 다음과 같다. 첫째, 금천지역 여성들은 텃밭강사라는 여성 일자리로 시작하여 도시농업 단체를 설립하고 지역에서 도시농업 운동을 전개하여 공동체텃밭을 운영하고 텃밭조성 사업을 벌여 나가며 학교텃밭을 정착시켜 나간다. 이러한 도시텃밭들은 지역 공동체를 조직하고 활성화하는 역할을 한다. 둘째, ‘금천도시농업네트워크’에서 분리해 텃밭조성 사업을 해온 ‘건강한농부사회적협동조합’은 도시농업에서 먹거리 사업으로 확장해 나간다. 여성들은 텃밭에서의 생산, 생산과 소비를 연결하는 직거래 농부시장, 분배의 공유부엌, 반찬카페, 어린이 식당, 음식물쓰레기 퇴비화와 같은 자원 순환까지, 지역먹거리 순환체계를 만들어가는 데도 중요한 역할을 하고 있다. 셋째, 도시농업 공동체는 여성들의 일에 기반을 두고 있으며, 지역의 필요에 기반한 대안적이며 돌봄 윤리에 기반한 공동체경제이고 지역순환 경제이다. 넷째, 여성 도시농업 활동가들은 금천구 주말농장을 위탁 운영하면서 지역의 다양한 주민들을 만나게 되고 현대 도시에서 살아가는 사람들의 고립과 단절, 돌봄의 위기를 깨닫고 도시농업 공동체가 지역 돌봄의 책임을 공유하고 공동체에 의한 돌봄을 실천한다. 이 연구를 통해 기후위기 시대 도시농업의 기능과 역할, 도시농업과 먹거리 공동체경제, 이를 기반으로 한 공동체적 돌봄, 그리고 이것들을 실천해 가는 여성의 역할을 살펴본다. The study is based on the case of women’s urban agricultural community in Keumchon-gu, Seoul to examine the characteristics of the women-centered urban community and to analyze its implications in terms of the community economy and communal care. The Keumchon women’s urban agricultural community started as a job creation project to train small plot farming instructors but in time grew to become an urban agriculture organization which pursue community activities and communal care through women-led activities such as urban farming and food. The study examines their progress and activities from the perspective of community economy based on care ethics and care. The content of study consists of four parts. First, the women in Keumchon started their work as a training center for eco-farming instructors, but they expanded their activities to creating and running community garden, securing spaces where there were not enough plots, and utilizing school gardens. In the process, the activists met and worked with local women, and the increased interaction and cooperation between them led to a creation of network which in turn strengthened the community as whole. Second, Healthy Farmers Social Co-Op(HFSC) became separated from Keumchon Urban Agriculture Network and extended its activities from just urban farming to food project. Women farmers of Keumchon aim to establish a circular local food system that runs a sustainable cycle from producing food at local farm, to running farmer’s market for distribution and common kitchen for consumption, side dish cafe or children’s cafeteria, and finally to decomposing waste to make natural fertilizer. Third, the women’s urban agriculture community is based on the work of women, the purpose of their work is not to gain profits but to meet the needs of their community. Therefore their work and economy is alternative and communal, or rather a regional circulation economy with a focus on ethics of caring for each other and creating sustainable living together. Fourth, as the women activists shifted their focus from training eco-farming instructors to farming some rented weekend farms in Keumchon-gu, they got to meet various members of the community. What became clear was how these residents were in need of help in taking care of their children but were not getting much assistance and thus feeling isolated. The women activists therefore began to be involved in community care. The purpose of the study is to illuminate the functions and roles of urban agriculture, the urban agriculture and food communal economy, communal care based on them, as well as the crucial role women play in pursuing such alternative economy in this era of climate crisis.

      • 케어푸드 제품의 수요예측에 관한 연구

        Due to social changes like more single-person households and an aging population with increasing chronic illnesses, the HMR market is growing rapidly at 14.8% annually. In response, companies are concentrating on 'Care Foods' that combine health and convenience. A survey of 300 people indicates that up to 28.3% of those aged 40-60 might become annual consumers of care foods. Monthly demand in 2019 was estimated between 6.4 million to 30 million, with a projected 3.8% annual growth till 2030. If a care food priced at 2,500 won for blood sugar management was introduced in 2019, sales could reach 16.1 billion won monthly. Given the rising HMR market and societal support, the Care Food industry is expected to continue growing, underscoring the need for standardized regulations and definitions for these products.

        Care Food Alternative Needed in the Aging Society

        The purpose of this study was to identify the factors influencing the use rate of nutritional labeling of food by focusing on care food for the elderly. Using the raw data from the 2019 community health survey, 74,547 people aged 65 or older were studied. The relationship between the demographic characteristics, lifestyle habits, masticatory disorders, systemic diseases, and nutrition labeling use rates of food of the study subjects was studied. As the result of the study, it was found that women than men, the lower the age, the higher the education level, two or more households, non-smokers, flexibility exercise, and no mastication disorder, the higher the nutritional labeling use rate, and it did not significantly affect the systemic diseases. Based on the results of this study, it was found that the need for maintaining full-body and oral health was very large in consideration of the characteristics of the elderly. In order to improve the quality of life of the elderly in the future, it is necessary to establish a research and policy support system to improve the awareness of the elderly that nutrition labeling should be used when choosing food.
