The aim of this paper was to study the selectphysicochemical parameters of 58 honey samples of 4different botanical origins (buckwheat, linden, rape andacacia) using multivariate methods in order to classifyhoneys according to the botanical origin. Five standardphysicochemical parameters were determined according tothe international legislation: water content, electrical conductivity,total ash content, free acidity and pH. The resultsobtained were mostly in agreement with internationalregulations. Then, the results obtained were analysed byprincipal components analysis and cluster analysis. Thechemometric analysis of results of determinations of thephysicochemical parameters demonstrated such markers aselectrical conductivity and ash content (i.e. parameterslinked with minerals content) to be the most reliablemarkers in determining the botanical origin of linden andbuckwheat honeys. Unfortunately, they appear insufficientfor reliable identification of acacia and rapeseed honeys.
