        밀싹과 보리싹을 혼합한 커피 추출액의 이화학적 특성 및 생리활성성분

        본 연구에서는 곡류새싹(밀싹, 보리싹)을 커피에 5~15% 비율로 대체하여 혼합한 혼합 커피를 제조하여 이화학적 특성과 생리활성성분을 조사하였다. 곡류새싹의 혼합비율이 증가할수록 혼합 커피의 조단백질 함량은 증가하였으며, 조지방과 조회분 함량은 감소하였다. 커피 추출액의 색도는 곡류 새싹의 혼합비율이 증가함에 따라 명도는 증가하였으며 적색도, 황색도 및 갈색도는 감소하였다. 곡류새싹의 혼합비율이 증가할수록 총 페놀 함량은 미미하게 감소하였으나 유의적인 차이는 없었으며, 플라보노이드 함량은 밀싹 혼합에 의해 증가한 반면 보리싹 첨가에서는 별 차이를 보이지 않았다. 한편 곡류새싹의 비율이 증가함에 따라 클로로필, 베타-카로틴, 비타민 C 함량은 증가하였다. 곡류새싹의 혼합비율이 증가함에 따라 DPPH 라디칼 소거능은 유의적인 차이가 없었으나 SOD 유사활성도는 증가하였다. 밀싹과 보리싹은 커피에 일부 혼합하여 사용 시 커피의 카페인 함량을 줄이고 싹이 지닌 생리활성성분을 보완하여 커피 대체재로 유용하게 쓰일 수 있을 것으로 판단되었다. In this study, mixtures of coffee and cereal grass were prepared by substituting ordinary roasted coffee with cereal grass (wheat and barley grass) at concentrations between 5∼15%. The physicochemical properties and bioactive compounds of the extracts were subsequently evaluated. We observed that increasing concentrations of cereal grass (5∼15%) resulted in increased levels of crude protein content and decreased crude fat and ash contents of the mixture samples. Increase in the lightness of coffee extract was proportional to the increase in cereal grass, whereas the redness, yellowness, and browning index were decreased. With an increase in the ratio of cereal grass, the total phenolic content decreased slightly, while the flavonoid content tended to increase. The chlorophyll, β-carotene, and vitamin C contents increased in the coffee extract containing higher concentrations of cereal grass. No significant difference was obtained in the DPPH radical scavenging activity with increased cereal grass concentrations, but the SOD-like activity was observed to increase. Taken together, our results indicate that partial supplementation of coffee with wheat or barley grass has the potential to increase bioactive compounds and enhance the function of caffeinated coffee drinks.

        기계환기 중인 중환자에서 영양생화학적 지표 측정의 의의

        Background: The nutritional status of critical-ill patients is important for recovering from the disease itself. Therefore, this present study was designed to assess the biochemical and nutritional parameters of Intensive-Care Unit (ICU) patients on mechanical ventilation. Methods: We retrospectively reviewed the medicial records of 126 patients (male/female=72/54) who were on mechanical ventilationin the ICU. The nutritional parameters such as serum total protein, albumin, hemoglobin, hematocrit, calcium, phosphorus, total cholesterol, % lymphocytes, blood urea nitrogen (BUN), and creatinine (Cr) were measured at the beginning of mechanical ventilation. We also measured the outcome variables such as the duration of mechanical ventilation, the ICU length of stay and the hospitalization period. We analyzed the relationship between the nutritional parameters and the outcome variables of ICU patients on mechanical ventilation. Results: The level of hemoglobin was negatively correlated with the outcome variables; the ICU length of stay (p<0.05), the hospitalized period (p<0.01), and the duration of mechanical ventilation (p<0.01). The creatinine level was positively correlated with the outcome variables; the ICU length of stay (p<0.01), the hospitalized period (p<0.01) and the duration of mechanical ventilation (p<0.05). On the multiple regression analysis, the serum total protein, albumin, calcium, inorganic phosphorus, BUN and creatinine were independent factors affecting the duration of mechanical ventilation. Conclusions: These findings indicate that ICU patients with mechanical ventilation have a risk for malnutrition and anemia. So, an adequate nutritional intervention is required for these patients in order to decrease the prevalence of malnutrition and anemia.(Korean J Med 73:151-158, 2007)
