The pancreatic secretion of fluid and NPN as well as total N was studied in experimental animals fed with lean beef and corn protein. The various influences upon the pancreatic secretion were observed by duodenal instillation of collected pancreatic juice, normal saline solution and 1.39% NaHCO₃ solution after feeding 100g lean beef in unanesthetized dogs fitted with a Thomas type duodenal fistula, through which cannule was directly inserted into the main pancreatic duct. The jejunal content was also studied on the same dogs through a jejunal fistula. The results obtained are summarized as follows: 1. The beef meal was a better stimulant for pancreatic secretion than corn protein. 2. The pancreatic secretion was inhanced by increasing volume of beef meal up to 200g. 3. The pancreatic protein secretion was almost constant in the first for 3 hours after feeding 100g beef. 4. The different control mechanism seems to play a role upon the pancreatic secretion between electrolytes and protein. 5. The feed back phenomenon on the pancreatic secretion may he due to mainly pancreatic nitrogenous compound.
