海藻加工品의 Dietary fiber含量과 物理的 特性

The contents and phsical properties of Dietary Fiber in Seaweed products produced in the south west coast of Korea for export were, in this study, Seaweed products such as Dried see mustard, Dried Sea tangle, Cooked Seaweed fusiforme, Dried Laver, Dried Sea lattuce, and Agar-Agar, were chosed as samples. The results were as follows ; 1. The compositions of dietary fiber were 0.05∼41.52% of NDF, 0.01∼26.20% of ADF, 0∼6.94% of Lignin, 0.04∼25.79% of Hemicellulose, and 0.01∼19.26% of Cellulose, respectively. 2. Water-Holding capacities were lying between 6.1∼19.6g water/g ADP and Dried Sea mustard showed the highest value in those. 3. The sample showed that 500∼806㎎/㎖ of driect density, 0.562∼0.833 g/cc of bulk density, 1.40∼2.01 g/㎖ of hydrated density and 102∼160% of hydrated expension and direct density.
