From high-end restaurants and small restaurants that sell Japanese food, more convenient and diverse ways of operation and types of restaurants are increasing these days. Japanese food, of course, will have various factors such as Japanese culture, architectural style, clothing history, political and economic issues between Korea and Japan, travel, animation, movies, dramas, and literature, which will change consumers' consumption.
Most restaurants that sell Japanese food regard the taste as important, and some high-end restaurants and small restaurants reconfirmed the possibility of Japanese food development by launching a variety of fresh and fresh menus or researching and developing recipes and ingredients.
Our country has been influenced by neighboring countries due to historical events. This was also affecting food, and it is necessary to investigate how these effects change and are recognized in this era, and the influence of Japanese food represents sufficient role and value as food.
In the past, Japanese restaurants often chose Japanese restaurant services, Japanese-style atmosphere composition, and national brand image, but in modern times, they often chose Japanese restaurants considering brand image, product and event composition while emphasizing the menu composition, price, menu design, quality and quantity, and exotic feeling of Japanese food.
This is increasingly diverse in customer needs, and curiosity about new things grows and new types of competitive edge need to be strengthened through differentiated services based on customer satisfaction that are tangible or intangible in operations to meet customer needs.
In this study, we analyze which menus are preferred by young customers visiting the restaurant, and study what attributes influence satisfaction in menu selection and what factors influence resale intent, and we establish a statistical strategy for restaurant menu preference, menu quality, menu design satisfaction, and resale.
The survey distributed 300 copies of the questionnaire to customers who visited Japanese restaurants as of 2020 for 20 days from September 1, 2020 to September 20, 2020, and a total of 287 copies were used for empirical analysis. The statistical processing methods of this study were independent sample t-test, one-way ANOVA, frequency analysis, factor analysis, reliability analysis, correlation analysis, and regression analysis with the SPSS 20.0 statistical package program.
The analysis results of this study are summarized as follows.
First, the menu selection attributes of Japanese restaurants have a significant positive effect on customer satisfaction among the factors of menu selection attributes of Japanese restaurants, such as 'preference', 'menu quality', and 'menu design'.
Second, customer satisfaction has been shown to have a significant positive effect on repurchase intentions.
Third, the menu-selection attributes of Japanese restaurants were found to be influenced by the positive influence of the intention of purchasing again, among the factors of menu-selection attributes of Japanese restaurants, 'preference' and 'menu design'.
The analysis of the results in this study presents the following important timestones.
First, it is academically meaningful in that it provides a theoretical basis for strategicizing the need for menu selection attributes and strengthening competitiveness in restaurant operation by examining the characteristics of menu selection attributes of Japanese restaurants and identifying their impact on customer satisfaction through empirical analysis.
Second, it is meaningful to provide strategic planning data based on the relationship of influence that increases the intention of young consumers to repurchase through empirical analysis of the impact of customer satisfaction on restaurant repurchase intention.
Third, it is of academic value in that it provides a theoretical basis for strengthening strategic competitiveness with competitive restaurants by knowing the importance of menu selection attributes in planning the restaurant operation strategy by examining the factors that influence the re-purchase intention of the Japanese restaurant and analyzing the influence on the re-purchase intention.
Fourth, by researching and analyzing menu preferences in Japanese restaurants, the restaurant provides data on planning and establishing menu strategies for young customers, which provide this data to organize the long-term strategies of menus as young people grow.
The limitations of this study and its future research tasks are presented as follows.
First, while strategic competition has been increasing due to various social reasons, economic conditions and increased competition in restaurants dealing with Japanese food, the study of strategic factors in Japanese food targeting young people has been studied at a lower rate than in other research areas. Therefore, there is a lack of diversity in the analysis of the future consumption trends of young people in restaurants and the increase and continuation of menu-related research on the consumption of Japanese food among young consumers. Therefore, it is believed that research should be carried out actively from more diverse angles through various and in-depth studies of restaurant strategic factors through literature, etc. or journals in future studies.
Second, in this study, questions were used based on prior studies to measure the factors of menu choice composition in Japanese food. But it seems necessary to develop new variables that conform to the changing times in order to meet the rapidly changing situation and the needs of consumers who want more diverse and new things.
Finally, it is expected that continuous research will be necessary to establish a differentiated restaurant management and marketing strategy for the managers of the Japanese restaurant by conducting continuous research on menu selection attributes, customer satisfaction, intention and menu preference of the Japanese restaurant through follow-up research that complements the limitations of this study.
