Consumption, Taste, and the Construction of Identities:
an Anthropological Study on Wine Consumption in Globalizing Korea.
With globalization currently underway, goods, capital, culture, and peoples' sense of taste have begun to move freely across nations, constituting a political, economic, social and cultural flow on a global scale-a new trend not limited to one region or state. Consumed since the early days of mankind, wine gradually was exported and imported. Now navigating a globalizing world, the once small wine industry has developed into a big, profitable undertaking. These circumstances have formed a wine consumption culture indigenous to wine consuming nations as well as wine producing nations. Wine, both a regional and national product, has spread across the world with the globalization of capital and has even been popularized in such nations as Korea, which previously lacked a wine consumption culture.
The drinking culture of and taste for wine, as well as wine itself, are exported to other countries. That is, importers "buy" the culture and taste imbued with the values of exporters. In the process, localization occurs simultaneously with globaliztion: the wine market and consumption culture indigenous to consumers are being constituted, assuming a fit form for the economic, social, and cultural circumstances of consumers, and is different from the original one of the producers.
As wine consumption is hugely influenced by national economies and individual economic situations in the quantitative and monetary view, wine consumption culture is socially influenced to a great extent. Although wine consumption grew widely after the wine importation, it abruptly shrank following the economic crisis of 1998. Also, as the intense focus on health and well-being that began in the early 2000s commanded social attention, the idea spread into Korean society that healthier food must be picked and culled. As many studies verified that wine is beneficial to health, wine, drawing great attention from the public, was also popularized as a food for well-being.
The concept of well-being has broadened to incorporate not only food but also economic and socio-cultural areas and leisure. Since the mid-2000s, organic and environment-friendly foods have saturated the market; the fever for luxury that reveals itself in consumption enhances and intensifies the quality and values of life. Thus, the strategy of refinement and differentiation has begun to be used in the guise of personal style, a private car, and leisure activities as well as with food, making these symbols of high class worthy of acquirement at a high expense. Wine has assumed a new identity as a luxury item by utilizing the refinement strategy, as seen in the appearance of splendid, specialized wine bars. Additionally, a social atmosphere has been promoted in which drinking wine at a specialized wine bar is seen as luxurious, an exclusive possession of the bourgeois. A man who drinks a wine, a constituent of a high-quality liquor market, at his disposal, is thought to be a man of high economic and social status. Likewise, a lower-status group without such a capability, but with a penchant for wine, has lead to the desire to address collective class conflicts by drinking wine.
For these reasons, since the mid-to late 2000s, various efforts have been made to popularize wine, thought to be a refined yet unfamiliar delicacy and which was referred to as a possession exclusive to high society. With the living standard of Koreans improving both economically and culturally, and with more women advancing in society, a taste for wine has become more evident. With people making more trips to, and taking residence in, foreign counties, their familiarity of wine has grown. The circle of wine consumption has gradually widened so that people thirsty for the culture of upper society can enjoy wine. A 20 to 30-year-old professional man makes up a large part of wine consumption; in response to the demand for wine, discount stores have begun to sell wine. Also, more shops have made wine cheaper and its image lighter. The popularization of wine since the late-2000s is equipped with refinement and specialty, not just wider access to wine.
The wine consumption market is a product of dynamic relations among several champs of economy, society, culture, and other liquor markets. Wine consumption in Korea differs considerably from that of wine-producing countries. Every factor regarding "who, when, where, and how people drink wine" is metamorphosing to encompass Korean society.
When inquiring about the types of wine consumption in Korea, various groups, such as those who prefer and habitually drink wine at a low price, those who show off the drinker's socio-economic status, those who drink wine to be fashionable, those who consider their image and prefer wine at high price, and so on. A member of a group has in common the collective habitus, while he or she carries individual tastes that are different from those of others. Accordingly, a man would study wine to gain more knowledge, and, feeling that wine consumption is a type of dépense improductive, would put his social status before other factors. Those who want to be seen as educated and cultured by others invoke the various codes of wine. Additionally, there is a group that avoids wine altogether.
Besides these groups, Korea is now witnessing more people drinking wine for its flavor. Keeping pace with this situation, the Korean wine industry has mad a continuous effort to seek out and import wine that suits Koreans' palates. Established and developed in an indigenous way, wine consumption culture in Korea is expected to undergo a continuous change in the future.
Wine is a product that reveals the process of globalization and localization. This study examines the wine consumption market in a specific region of Korea, observes how Koreans in this area consume imported wine, and analyzes the reasons for consumption and peoples' tastes. Furthermore, by looking at the formation, change, and development of the culture of upper society and the perspective of wine consumption in Korea, this study will make a valuable contribution to the comprehension of the consumption culture of Koreans as a whole.

세계화가 진행되면서 재화, 자본, 문화, 취향 등은 국가 간 경계를 자유롭게 넘나들기 시작했고, 그 결과 특정 지역이나 국가에만 국한되지 않는 세계적인 정치·경제·사회·문화적 흐름이 형성되어 가고 있다. 와인은 인류 역사상 고대부터 마셨던 술로서 생산지역을 위주로 소비되었으며 점차 나라간의 경계를 넘는 소규모의 수출입이 이뤄졌다. 그 후 세계화 시대를 맞이하면서 거대 산업으로 발전하게 되었고 이제는 와인 생산국뿐 아니라 수입에만 의존하는 국가에서도 고유한 와인소비 문화를 형성해 가고 있다. 지역적·국가적 차원의 재화인 와인이 세계화 자본의 흐름을 타고 전세계적으로 퍼져나갔고, 한국과 같이 와인을 마시는 문화가 거의 전무했던 국가들에서도 본격적으로 소비되고 있다.
와인은 재화는 물론이고 음주 문화, 취향까지도 세계 여러 나라를 대상으로 수출된다. 따라서 와인을 수입하는 국가들은 술 자체뿐만 아니라 취향을 함께 받아들이게 된다. 이 과정에서 세계화와 동시에 지역화 과정이 이뤄지게 되고 와인 수입국에서는 생산지역이나 국가에서 형성해 온 본래의 것과는 다르게 경제적·사회적·문화적 여건에 알맞은 형태로 변화하고 발전되면서 고유의 와인소비시장 및 소비문화를 형성해 가고 있다.
와인의 소비는 양이나 금액적 측면에서 국가 경제 및 개인의 경제적 여건에 영향을 많이 받으며 와인 소비문화 역시 사회적 영향을 크게 받는다. 한국에서 1987년 와인의 수입이 자유화된 이후 꾸준히 증가하던 와인 소비량은 1998년의 IMF 경제위기 이후 급격히 줄어들었다. 하지만 2000년대 초반에 웰빙의 바람을 타고 건강에 대한 사회적 관심이 높아지면서 몸에 좋은 음식을 까다롭게 골라 먹어야 한다는 의식이 전반적으로 퍼졌다. 와인 역시 웰빙식품으로서 일반화되었으며, 건강에 좋다는 보고서들이 잇달아 소개되면서 대중의 관심을 끌었고 인기를 얻었다.
이후 웰빙은 섭취하는 음식뿐만 아니라 경제적·사회문화적 수준과 여가생활까지 아우르는 개념으로 의미가 확장되었다. 2000년대 중반부터 유기농·친환경 음식 재료들이 쏟아져 나왔으며 소비를 통해 자신을 보여주고 삶의 질과 가치를 높인다는 명품열풍도 뜨거웠다. 따라서 먹는 음식에서부터 외모, 소유 차량, 여가활동에 이르기까지 고급화와 차별화 전략이 시작되었고, 이는 비싼 가격을 지불하면서도 취할 가치가 있는 고급스러움의 상징이 되었다. 와인도 고급화 전략을 택하기 시작했고 단순한 술이 아닌 사치품으로도 사용 가능한 재화가 되었다. 따라서 고급 와인바와 전문 와인샵이 생겨났다. 그리고 고급 와인바에서 와인을 마시는 것은 부르주아의 전유물인 것처럼 사치스럽게 받아들여지는 사회적 분위기가 형성되었다. 고급 주류 시장의 한 요소인 와인을 자유자재로 마시는 사람은 경제적 지위와 사회적 위치가 있다는 의미였고, 실제로 이 정도의 능력은 없지만 이와 같은 생활을 동경하는 아래 층위의 집단이 와인소비에 대한 욕구를 지니기도 했다.
따라서 2000년대 중·후반부터는 여러 가지 사회적 요인에 의해 상류층의 전유물이라고 여겨졌던 와인에 대중화 시도가 가해졌다. 또한 이 시기에는 한국인들의 경제적·문화적 생활수준이 향상되었고 여성의 사회 진출이 늘어나면서 와인을 선호하는 현상이 두드러졌다. 해외에서의 여행 또는 거주 경험들이 많아지면서 와인을 친숙하게 여기는 사람들도 많아졌다. 점차 와인소비계층은 넓어졌고 중·상류층의 문화에 목말라하고 맛보고 싶어 했던 계층의 사람들도 포용하게 되었다. 현대는 20-30대의 직장인들도 와인 소비에 큰 부분을 차지하고 있으며 할인마트에서도 와인을 판매하고 있다. 또 가격적 측면이나 분위기에 있어서 부담을 줄이고 경쾌하게 만든 업장들이 늘어났다. 그런데 와인의 대중화 속에는 보편화만 강조하기보다는 고급스러움과 전문성을 확보한 대중화라는 점이 주목할 만하다.
와인소비시장은 경제·사회·문화 및 다른 알코올 소비시장으로 이뤄진 여러 장들 간의 역학 관계의 산물이다. 그리고 한국의 와인소비는 와인 생산국에서의 것과는 그 양상이 많이 다르다. 즐겨 마시는 사람, 때와 장소, 방법 등 모두가 한국사회 고유의 특성에 맞게 변화된 모습으로 발전해 가고 있다.
한국인들의 와인소비유형을 살펴보면 중·저가의 와인을 선호하며 품격은 따지지 않고 습관적으로 음용하는 실리형, 본인의 경제적·사회적 지위를 과시하며 가격에 구애받지 않고 품격을 추구하면서 소비하는 상징형, 유행을 쫓아서 시대의 흐름에 동참하는 의미에서 음용하는 추종형, 품격을 고려하면서 마시되 중·고가의 와인을 선호하고 탐닉하는 성향이 종종 관찰되는 전문형이다. 각 집단의 구성원들은 공통적인 집단적 아비투스를 지니고 있으면서도 서로 다른 개인적 취향들을 지닌다. 따라서 와인을 지식추구의 대상으로 삼고 공부하는 사람도 있고, 비생산적 소비의 일환으로 여기며 본인의 사회적 권위를 내세우기도 한다. 또한 와인이 지니는 여러가지 기호를 통해 남들의 눈을 의식하여 교양 있는 모습으로 비쳐지기를 바라는 사람도 있다. 그리고 각 집단들의 구성원들은 그레마스의 기호사각형으로 설명 가능한 논리적 흐름에 따라 다른 집단으로 이동을 하기도 한다.
한국에서는 점점 와인이 맛있기 때문에 마신다는 소비자들이 늘어나고 있다. 이에 발맞추어 한국인들의 입맛에 맞는 와인을 발굴하고 수입하려는 와인업계의 노력은 계속되고 있다. 한국의 와인소비문화는 나름의 독특한 모습으로 형성되어 발전해 왔고 앞으로도 꾸준히 변화할 것이다.
와인은 세계화와 지역화 과정을 잘 보여주는 재화이다. 본 연구는 한국이라는 특정 지역의 와인소비시장을 통해 세계적·국가적·지역적 차원에서 관찰되는 경제·사회·문화적 요인과 그에 따른 소비시장의 형성·변화를 고찰했다. 그리고 수입와인을 소비하는 한국인을 관찰함으로써 그들이 만들어가는 소비와 취향의 정체성을 분석하고 있다. 또한 한국인의 와인소비문화를 통해 고급문화와 대중문화를 살펴볼 수 있으므로 본 연구는 한국인의 소비문화를 총체적으로 이해하는데 소중한 발판이 될 것이다.
