According to the change of diet habit, the circularly diseases such as hypertension blood pressure, diabetes and heart disease had frequently occurred especially to adults. Therefore, these disease classified as adult disease which might be occurred from inadequate diet habit. Especially, the over diet of sodium from salt might be originated the sticky blood flow and then the blood circular system will be disordered. For reducing the disordering of blood circular system, this study was performed to develop the spice mixture and plant extract powder for substitution of salt. The results are summarized as follows;
1. For the development of the spice mixtures for substitution of salt, seventeen spice granules were evaluated the sensory characteristics. Among them, the four spice granule mixtures(SGM) with represent taste such as hot, sour, nutty and total taste were developed. The mean acceptability of SGM for hot taste was 5.47, that for sour taste was 4.58, that for nutty taste was 6.00, and that for total taste was 5.47. As a result, the SGM for nutty taste had the most acceptability with statistical significance(α<0.05)
2. For the development of the plant extract powders(PEP) for substitution of salt, the extracts of thirteen plants were evaluated the sensory characteristics. Among them, the five PEP with represented taste such as combination of high acceptability(combination 1), salty(combination 2), combination of salty and sour(combination 3), salty(combination 4), salty and hot(combination 5) were developed. The PEP of combination 2 which was mixed with Saliconia herbacea L.(40%), Laminaria(sea tangle)(20%), Lycium chinensis(20%), Allium filstulosum(green onion)(20%) and the PEP of combination 2 which was mixed with Saliconia herbacea L.(60%), Laminaria(sea tangle)(20%), Lycium chinensis(10%), Allium filstulosum(green onion)(10%) were shown high acceptability.
3. Therefore, these two PEPs were put into rice pastes, and the salty sensory characteristic evaluated. When the 0.9g of both PEPs and 0.6g salt pun into the 100g rice paste, the saltness was not significant among them, however, the acceptability was the highest value in the PEP of combination 1. The sodium contents of the PEP of combination 1 shown the a half of the salt at the similar saltness.
