As the competition in the modern service industry is deepening, strengthening the competition of its services is rising as the main subject of management strategy by the method of make the invisible factor of service be visible. The physical environment in the service industry is the space where the service is accomplished by the interaction process between customer and employee, and it acts as the important factor to influence on preferences and satisfaction of customer and employee. Especially employee is working consistently in the physical environment of restaurant, so how the physical environment is designed work of employee can influence the attitude.
But in this point of view, domestic preceding researchers mostly have studied how they can induce customer satisfaction by the physical environment.
Present study tried to establish main factors composing the physical environment of service space in hotel restaurant perceived by employees' physiological response and organizational commitment.
Also, the possible effects of significant factors from physical environment in hotel restaurant service space upon employees' physiological response and organizational commitment were investigated.
The reliability and validity of study model were examined to carry out the study of actual proof with 306 secured samples, and the result of 6 hypothesis testing are as follows.
As the result of study, in physical environment that employee in the service space of hotel restaurant perceive, it was analyzed that the mutual-assistance environment didn't have significant effect on physical response that is physiological response and pains, but the space arrangement and function had significant effect on physical response and pains, and the physiological response that follows these physical environments had significant effect finally on organization commitment.
The service space in the five-star hotel was chosen as the study sample, so it was regarded as the environment condition that the factor of mutual-assistance environment that had the best condition had effect on invisible sense just when the sanitation factor was discomfort, and it was presented that the space arrangement and function operated as the factor that stimulated access-action for work environment, and then its influence had effect more than mutual assistance environment. The arrangement way of machinery, facility and furniture, the suitable space arrangement of these and the physical work environment designed to be easy for these space arrangement had effect on physiological response of employee positively, so it can improve the commitment to the organization. With this testing process, it is necessary that company should keep an eye on the space arrangement and functional factor in making physical environment for the activeness of employee's work and the hastening of efficiency that company demands to employee, and this is suggested as the conclusion.
The main implication and meaning of present study are as follows.
Until now the discussion for unifying the customer action through the variables of physical environment and the emotional recognizant response mostly in customer's place, but the present study proposes the hypothetic model that unify the action for the organization through the variables of physical environment and physiological response in organization's place.
Also, the positive significant effects of spatial layout & functionality in hotel restaurant upon organizational commitment of employee's showed that physiological response of employee as mediating variable when they decided that the space arrangement and function were suitable in the service space of hotel restaurant. The hotel manager should consider these factors to create the optimum environment considering physical characteristics or condition of employee under company circumstances.
