Today, western food restaurant in hotel is required to have a strategic plan by consistently improving the quality of the menu and differentiation as an important factor in choosing a restaurant in addition to competitive edge in service in order to have a competitive power against others in the same industry.
For this, Hotel restaurant should make the customers feel the value of the quality of menu and finding a way of maintaining revisit rate through their satisfaction would be considered as the best strategy.
This study, analysing on how the quality of menu affects in customer value and satisfaction and how customer value affects on the customer satisfaction and revisiting for Hotel restaurants, is expected to show the direction on the development of restaurant menu and food and help the restaurants to establish the menu strategy in this ever fast changing food service industry in order to present a strategic plan to cope with in competitive environment.
In order to increase revisiting rate through the customer satisfaction for those who visit western restaurants, it is required to identify the menu quality factors that affects the revisit. Therefore, we conducted the study using SERVPREF that is suitable for the menu quality as there is a need to have a way of measuring the menu quality.
In this study, the survey was conducted the preliminary survey of visitors of the 5 star Hotel western restaurants in Seoul. From September 15, 2007 to October 15, 450 questionnaire were distributed and out of this 370 were collected. 356 questionnaire, excluding insincere ones, were used for analysis. There were more male respondents(210, 61%) than female respondents(139, 39%). Looking at marital status, there were more singles( 190, 53.4%) than married ones(166, 46.6%).
To prove the hypothesis in this study, route analysis method that evaluates the relationship among the assumed variables defined in study model is used and detail analysis required for the subject of study such as frequency analysis, factor analysis, conformatory factor analysis, reliability analysis was conducted. For factor analysis, 6 quality factors, "taste of the food, price of the menu, diversity of the menu, originality of the menu, healthy food, hygienic environment", and "customer value factor, customer satisfaction factor, customer revisit fact" are defined.
Base on these, we want to establish the measures to improve the menu quality in western restaurant recognised by customers and the followings are the results.
Firstly, considering the low menu recognition rate on regular customers and female customers who visits once or twice a week, it is required to create a differentiation strategy in order for them to feel the value of menu by customer segmentation as today's food serving industry trend builds the differentiation strategy for female customers. Hence, to make them to revisit, new menu development specially for women is urgently needed to make them to feel the value of themselves by providing the differentiated menu and to satisfy.
Secondly, it is found that 'Taste of food', the essential of the menu factor, affects most positively when it comes to customer value and satisfaction among other menu quality factors measured based on SERVPREF measurement of Taylor(1992)
This shows the fact that taste of food gets affected most by the restaurant customers. It also show the fact that the restaurant customers are most affected by the food taste among other menu qualities and development in transportation plays a key role in making a world as a day life zone. This could be a strategic way of attracting epicures and increasing the competitiveness. Therefore, restaurant manager should develop menu and use various cooking method and fresh ingredients in order to provide the customer value and satisfaction.
Thirdly, it is found that health food factor affects the customer value and satisfaction among menu quality factors. Thanks to nuclear family and improving in life quality, health food that is good for body and helps good health has come into the spotlight.
Fourth, it is found that hygienic environment affects the customer value among other menu quality factors. Due to national awareness advancement, the importance on restaurant cleanness has increased and since people think that clean food is good, it affects the customer value.
Fifth, Lastly customer value and satisfaction affect positively in deciding the next visit. Since the customers who are satisfied by the menu quality of the restaurant have a satisfied memory on the restaurant menu of the Hotel western restaurant, it is highly possible to choose the same restaurant although the price is high. Therefore, this could lead customer loyalty and this way of securing customer could be the most ideal strategic plan. Hence, the restaurant manager should provide high quality food in order to secure the loyal customers who can visit repetitively.
