This research has the goal to find the relation between the dietary habits of the preschool teachers who take the charge of kids' meal life and the aspects which teachers emphasize on in priority during the guidance in their meal life, and the goal to find the relation between teachers' nutrition knowledge and their ages, academic backgrounds or marital states.
Specific questions according to those goals are as follows.
1. How are preschool teachers' dietary habits?
2. How are preschool teachers' preschool lunch guidance?
3. Is there the difference of the guidance in their meal life depending on preschool teachers' dietary habits?
4. How is preschool teachers' nutrition knowledge?
The subjects in this research were 173 teachers at public preschools in Seoul which are carrying out school meal. The method of the research was the questionnaire for teachers which was devised to find out preschool teachers' dietary habits, guidance in their meal life and nutrition knowledge.
The frequency and the percentage were put out by the individual factors in the collected data, the average and the analysis of variance were put out by teachers' dietary habits and T-test was carried out to find the relation between teachers' dietary habits and guidance in their meal life. The frequency, the percentage, the average and the analysis of variance were put out to find teachers' nutrition knowledge and T-test and F-test were used to find the relevance to individual factors.
The results of this research are as follows.
First, out of teachers' usual dietary habits, 87.9% of preschool teachers answered back 'to wash hands before meals', 89.6% preschool teachers 'to eat in good posture' and 93.1% preschool teachers 'to brush teeth after meals', while on the other, 85.5% preschool teachers answered back "NO" 'to get up often and eat with doing other things during meal'. By the answer back regarding as such questions 'to eat with much conversation', 'to eat up all the given food in spite of a full stomach' and 'to try the dishes which they don't have taste of', each 51.4%, 49.1%, and 49.1% preschool teachers answered back "YES".
Second, in teachers' preschool lunch guidance, the greatest emphasis was put on 'Not to wander around during meal', whereas the least on 'Not to make the eating noise'. In the findings of the meaningful differences between preschool teachers' dietary habits and the preschool lunch guidance, there was the meaningful difference in 'to give thanks before meal'. In the guidance during mealtime, there was the meaningful difference in 'to eat in quiet'. Those meaningful findings, in the relevance between teachers' dietary habits and preschool lunch guidance, also appeared in 'to eat rice, soup and side dishes in balance', 'to wipe the mouth after meal' and 'to tidy up after meal'.
Third, in the grade of preschool teachers' nutrition knowledge, out of 16, the average score marked 8.42, the lowest 4, and the highest 14. In the nutrition knowledge depending on teachers' ages, marital states, teaching careers and academic backgrounds, the married exceeded the unmarried. In addition, the older they were and the more career they had, the higher average they had. No meaningful difference, however, was there between teachers' academic backgrounds and nutrition knowledge. In the percentage of correct answers about preschool teachers' nutrition knowledge, when it comes to the knowledge of children's nutrition and the nutrition knowledge of cooking, preservation and school meal, the percentage of correct answers was higher than that of incorrect answers.
