표준보육과정에 기초한 영유아 식품안전교육 프로그램 개발 = Food Safety Education Development based on Standard Educare Curriculum

The purpose of the study was to develop a food safety education for teachers of infants, toddlers, and preschoolers to improve their ability. The program provided teacher and children with information on how to take care of their food safety. This program development was based on a 'Standard Educare Curriculum'. The process included review of literature, setting an instrutional goal, getting advice from various experts, designing instruction, and instructional media. The products of this program were the teacher's guide book. This guide book included food safety education programs for infants, toddlers, and preschoolers. These programs provided a systematic content of food safety education for children and their teachers, and useful data which can be applied to child care centers. For the practical education in child care centers, the diverse subjects of food safety education and related activities should be developed for child care, and furthermore the audio-visual materials matched with the developmental stage of child would be produced.

국문 초록 (Abstract)

본 연구는 표준보육과정에 기초하여 보육시설에서의 식품안전교육 프로그램을 개발하기 위해 실시되었다. '표준보육과정'의'기본생활영역'을 중심으로 교사와 유아에게 건강하고, 위생적이고, 안전한 생활을 위해 가져야 될 지식과 정보를 제공하기 위해 설계되었다. 이 프로그램의 개발을 위해 문헌고찰을 통한 이론적 탐색, 교수목표를 설정하고, 보육관련 전문가의 조언 을 얻고, 활동을 구성하고, 관련 교수매체를 제작하는 과정을 거쳤다. 연구결과 표준보육과정에 기초하여 보육시설에서의 식품안전교육의 내용, 범위와 방법을 구성하고, 주제에 따른 식품안전교육 프로그램을 구성하였다. 그 내용은 다음과 같다. 1) 미생물(박테리아), 2) 식중독, 3) 개인위생, 4) 식품첨가물, 5) 부정ㆍ불량식품 식별요령, 6) 식품 및 식기 취급, 7) 환경호르몬 등을 영역으로 구성하고 이에 따른 구체적 교육내용, 활동목표, 활동명, 활동유형, 그리고 활동자료로 구성하였다.
