한국음식 레시피 시각화를 위한 인포그래픽 디자인 연구 = A Study on the Infographic Design for Visualization of Korean Food Recipes

국문 초록 (Abstract)

한국의 전통음식은 단순히 생존적 역할을 넘어 우리 고유의 문화(文化)와 기호(記號)를 갖고 우리 민족의 정체성을 형성하는데 중요한 역할을 하였다. 그러나 한국음식의 일부는 조리법이 까다롭고 복잡하며, 조리 시간이 오래 걸리는 등 그 방법과 절차에 어려움을 겪거나 조리법이 상실되어 점차 한국음식 고유의 정통성마저 퇴색해 지며 세계화의 걸림돌이 되고 있기도 하다. 따라서 기존의 획일적인 텍스트와 이미지를 보여주는 순차적 나열식 방식의 조리과정에서 벗어나 전체적 시·공간 구조에서 이해하고 조리하는 융·복합적 구조의 방식을 필요로 한다. 이를 위해 본 연구에서는 ``매핑 시각화(mapping visualization)``를 이용한 한국음식의 레시피를 제안 하며, 구체적으로는 먼저 기존 한국음식 레시피를 지면과 영상(TV) 두 가지 매체를 통해 선형적 단일 구조 차원에서 분석한 후, 비선형적 시·공간 복합구조를 새롭게 제시 하였다. 다만 본 연구에서는 영상 레시피의 시간성과 동적 정량화의 어려움으로 인하여 지면을 활용한 ``시각화`` 방법에 한정하여 연구하였음을 밝혀둔다. 결론적으로 한국음식의 조리법 과정을 ``인포그래픽+레시피``를 통한 ``시각화`` 방안으로 제시 하였으며, 한국음식 레시피를 단순 텍스트와 이미지(또는 영상)로 이루어진 기존의 순차적 시간전개형 구조에서 벗어나 복합적 시·공간전개형 구조의 제시를 통하여 한눈에 보여지는 인포그래픽 레시피 디자인을 제시함으로써 세계인이 (한글을 몰라도)한국음식을 보다 쉽게 이해하고 즐길 수 있도록 하며, 나아가 우리의 식문화에 디자인적 방법이 계획적이고 보존력이 높은 한국음식 조리법의 가치를 높히는데 목적을 두고자 한다.

다국어 초록 (Multilingual Abstract)

Korean traditional foods are important in shaping the identity of our people with our own culture and symbols besides simply helping us survive. However, some K-Foods stand in the way of globalization due to factors such as the time-consuming recipes often known to be so difficult and complex that the legitimacy of its own methods and procedures gradually fade, causing the loss of the recipe. Therefore, traditional sequential step by step standardized text and images in the process of showing the convergence of the method a complex structure requires a holistic understanding of the structure of space-time cooking. In this study, K-Food recipes suggest the use of ``mapping visualization``. Specifically, the first analyzes K-Food recipes in a linear single-dimensional structure through two kinds of mediums, books and TV, and proposed a new complex non-linear time and space structure. However, research studies were limited to ``visualization`` methods based on the book due to the difficulty of quantifying and dynamic time. In conclusion, they proposed a plan of K-Food recipes with a ``visualization`` process through ``infographic+recipe``, suggesting the use complex time and space structure to show the infographic recipe design at a glance of breaking K-Food recipes away from the existing development of sequential time consisting of simple texts and images, so that even those do not know Hangul can enjoy and have a better understanding of Korean Food. Furthermore, the purpose is to increase the value of planned high pretention K-Food recipes by means of design in the Korean food culture.
