In order to estimate the influence of free Oxygen absorber Na2S2O4 on the quality of perilla oil, the changes of acid value, peroxide value, and TBA value during storage at 40℃ were tested.
The result were obtained as follows.
(1) The acid values began to show high values in control group from the 7th day and in BHA group from the 14th day, but in Na2S2O4 group, they showed lower values than the others during storage.
(2) In control group and BHA group, the peroxide values began to increase suddenly from beginning and showed the highest value from the 14th day to the 21st day, while the value of Na2S2O4 group showed the lower increasing tendency within 21 days, and then increased a good deal on the 28th day.
(3) The TBA values were lower in BHA group than in control. Particulary the Na2S2O4 group showed the lowest values all of the others.
(4) It revealed that sodium dithionite could prolong the induction period of period oil during storage at 40℃.
In consequence, the effect of sodium dithionite on perilla oil during storage at 40℃ could be recognized.
